These Mini Pizza Meatloaves are a fun twist on traditional meatloaf! They're made pizza style, and each one comes in at under 150 calories each thanks to ground turkey!

Provided by Ashlyn Edwards | Belle of the Kitchen

Categories     Main

Time 45m

Number Of Ingredients 17

16 oz. ground turkey, (93% lean)
1/2 cup finely chopped onion
1/4 cup Italian bread crumbs
1 egg
1/4 cup grated parmesan cheese
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
salt and pepper to taste
8 oz. tomato sauce
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/2 teaspoon garlic powder
pepper to taste
1/4 cup grated parmesan cheese
1/4 cup shredded mozzarella cheese
mini pepperonis

Steps:

  • Preheat oven to 375 degrees. Spray the cups of a regular sized muffin pan with cooking spray and set aside.
  • Combine all of the meatloaf ingredients in a medium sized bowl and mix well with your hands. Divide the mixture evenly among the muffin cups.
  • Combine all of the sauce ingredients in a small bowl and stir to combine. Evenly spread over the top of each meatloaf, about 1 tablespoon each.
  • Bake in the preheated oven for 25-30 minutes until meat is fully cooked. Remove from the oven and evenly top each meatloaf with the parmesan and mozzarella, then sprinkle with mini pepperonis, about 4 per meatloaf. Switch the oven to broil and return the pan to the oven for 2-4 more minutes until cheese is melted and bubbly (keep an eye on them so they don't burn!). Enjoy!

INDIVIDUAL MEAT LOAVES

Individual Meat Loaves image

Provided by Ina Garten

Categories     main-dish

Time 1h15m

Yield 6 servings

Number Of Ingredients 12

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 350 degrees F. Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meatloaf will be dense.
  • Divide the mixture into 6 (10 to 11-ounce) portions and shape each portion into a small loaf on a sheet pan. Spread about a tablespoon of ketchup on the top of each portion. Bake for 40 to 45 minutes, until the internal temperature is 155 to 160 degrees F and the meat loaves are cooked through. Serve hot.

1 roma (plum) tomatoes, thinly sliced
1/4 cup fresh basil leaves, sliced
1 yellow bell pepper, seeded and sliced

  • Sprinkle the parmesan cheese evenly over all four personal pizzas then drizzle olive oil over them all.
  • Place the baking sheet on the grill, close the lid, and bake for about 10 to 15 minutes, or until the dough is nicely browned and the toppings are melted. Serve right away.

LITTLE MOZZARELLA-STUFFED MEATLOAVES

Little Mozzarella-Stuffed Meatloaves image

Game plan: Heat the tomato sauce while the meatloaves cook

Provided by Food Network Kitchen

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 17

1 1/2 pounds meatloaf mix (ground beef, pork, and veal)
1 medium onion, grated
1/2 cup panko (Japanese bread crumbs) or regular dried bread crumbs
1 large egg, beaten
1/4 cup chopped fresh flat-leaf parsley
2 tablespoons Worcestershire sauce
1 tablespoon whole-grain mustard
2 teaspoons kosher salt
1/2 teaspoon Italian seasoning
1/2 teaspoon garlic powder
Freshly ground black pepper
4 thin slices pancetta (about 1- ounce), optional
4 small squares smoked mozzarella (about 2 ounces total)
1/4 cup tomato paste
2 tablespoons balsamic vinegar
1 tablespoon extra-virgin olive oil
2 cups marinara sauce, jarred or homemade, hot

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper or foil.
  • Break the meatloaf mixture into a large bowl and use your hands to lightly work in the onion, bread crumbs, egg, parsley, Worcestershire sauce, mustard, salt, Italian seasoning, garlic powder, and pepper until evenly mixed. Take care not to overwork the mixture.
  • Space the pancetta slices, if using, a few inches apart on the prepared pan and put the cutter on top of 1 piece. Divide the meatloaf mixture into 4 equal portions. Press a piece of cheese into the center and then press the meat around it to enclose it completely. Put a portion in the cutter and press gently so that it covers the pancetta evenly, and makes a neat, flat disk. Repeat with the remaining meatloaf mix to make 4 little loaves. Remove the cutter.
  • Whisk the glaze ingredients in a small bowl, and then spread about 1 tablespoon of the mixture over the top and sides of each meatloaf. Bake for 10 minutes, then reduce the heat to 325 degrees F. and bake until cooked through, about 15 minutes more. To serve, ladle some hot marinara sauce into the centers of 4 plates, and set the meatloaves on top.
