2 cups (270g) Spanish style chorizo
1 onion
1/2 red bell pepper, diced

1 tsp salt
1 tomato, diced
4 cloves of garlic

1 g saffron powder
2 tsp chicken broth powder (or bouillon cube)

  • After that add the tomato, minced garlic, and cook until the tomato is tender, for about 5 minutes.

  • For the final step add water, saffron, chicken broth powder, and mix well. Adjust the salt point if necessary.

TOMATO, RED WINE & CHORIZO RISOTTO

Tomato, red wine & chorizo risotto image

Provided by Kate McCullough

Categories     Mains     Jamie Magazine     Dinner Party     Italian     Chorizo     Pasta & risotto

Yield 4

Number Of Ingredients 10

olive oil
2 shallots
1 clove of garlic
80 g higher-welfare chorizo
½ a bunch of fresh flat-leaf parsley, (15g)
750ml-1 litre of organic chicken or vegetable stock
1 x 400 g tin of quality plum tomatoes
300 g risotto rice
200 ml red wine
50 g Parmesan cheese, plus extra to serve

Steps:

  • Peel and finely chop the shallots and garlic, finely chop the chorizo, then pick and finely chop the parsley leaves, finely chopping the stalks.
  • Drizzle 2 tablespoons of olive oil into a wide, shallow pan. Add the parsley stalks, shallot, garlic and chorizo to the heated oil and cook over a medium-high heat for about 5 minutes, or until the shallot is softened and the chorizo is beginning to crisp.
  • In another pan, heat the stock with the tinned tomatoes. Add the rice to the shallot mixture and stir to coat the grains. Cook over a high heat for 1 to 2 minutes, or until the grains have cracked and are slightly translucent at the tips, then pour in the red wine.
  • Stir well and cook until almost all the wine has evaporated. Add the hot stock and tomato mixture, ladle by ladle, stirring well with each addition, and only adding more when the previous ladle is almost fully absorbed. You may not need all of the mixture, or you may need to top it up with a little water.
  • The rice should be tender but with a little bite in the middle. When it's cooked, add one last ladle of liquid.
  • Finely grate the Parmesan, then add to the pan with some seasoning. Stir well, take off the heat and cover. Leave for 5 minutes or so before stirring again, tasting and adjusting the seasoning, if necessary.
  • Serve topped with extra grated Parmesan and the chopped parsley leaves.

SPANISH CHORIZO RICE

Spanish Chorizo Rice image

This family-friendly Spanish chorizo rice makes a healthy, filling and affordable meal that everyone will love! Made with charred chorizo sausage, capsicum and Spanish inspired spices, this hearty, flavourful dish all comes together in one pot- in less than 30 minutes!

Provided by Andrea Geddes

Categories     healthy     Main Course     Side Dish

Time 25m

Number Of Ingredients 17

1-2 chorizo sausage (thinly sliced)
2-3 tbsp olive oil
1 brown onion (diced)
2-3 cloves garlic (peeled and finely chopped)
1 tsp paprika
1/2 tsp cumin powder
black pepper
chilli powder (OPTIONAL- to taste)
1 1/2 cups long grain rice
2 capsicum (red and yellow, diced)
1 cup frozen peas
1 cup frozen corn
3-3 1/2 cups chicken stock
3 tbsp tomato paste
juice of half a lime
lime wedges
1/3 cup fresh parsley (chopped)

Steps:

  • In a large, non-stick frying pan or French pan, heat the oil over medium heat. Add the chorizo slices and fry, until the chorizo has become crispy and browned around the edges. Remove the chorizo from the pan and set aside for later.
  • Leaving the oil from the cooked chorizo in the pan over medium heat, add the onion, garlic, paprika, cumin, pepper and chilli powder and stir until fragrant. Add the rice and stir for a few minutes, until the rice becomes clear.
  • Add the vegetables, stock and tomato paste and stir. Bring to a low simmer.
  • Cover the pan with a lid and reduce the heat to low. Cook, covered, for 10-15 minutes, until the rice has almost cooked through. You may need to stir the rice once or twice to prevent sticking. Keep an eye on the amount of stock in the dish, as it will absorb into the rice while cooking. Add a little more, if required.
  • Add the chorizo back into the pan, stir and cover. Turn the heat off and allow to sit, covered, for around 5 minutes.
  • Stir through the lime juice and parsley and serve immediately, with extra lime wedges.

TOMATO RICE WITH CRISPY CHEDDAR

Tomato Rice with Crispy Cheddar image

I could use all sorts of fancy words to explain this dish, but the best description is this: pizza in rice form. The inspiration for the recipe, though, is oddly enough not Italian -- it's a hybrid of a classic South Indian tomato rice with onions and a shockingly fantastic Spanish rice recipe my mom and I photocopied out of my seventh-grade Spanish textbook for a school project. The crispy, bubbly, broiled cheddar topping (use the sharpest white cheddar you can find!) adds a little somethin' somethin', making it a worthy dinner party dish. Mackenzie Kelley, the lovely photographer of my cookbook "Indian-ish," called it "even better than pizza" (!!!!).

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 7

2 tablespoons olive oil
1 small yellow onion, finely chopped
1 small Indian green chile or serrano chile, finely chopped
10 medium Roma tomatoes, diced into 1/2-inch pieces
1 teaspoon kosher salt
3 cups cooked basmati rice
1 cup shredded sharp white cheddar cheese

Steps:

  • Adjust an oven rack to the highest position and preheat the oven to 500 degrees F.
  • In a large pan over medium-high heat, warm the oil. Once the oil begins to shimmer, add the onion and chile, spread them out in an even layer in the pan, and cook until the onion becomes translucent and starts to lightly char, 5 to 7 minutes.
  • Increase the heat to high and add the tomatoes, using the back of a spoon to lightly crush them. Cook, stirring occasionally, until the tomatoes break down into a chunky sauce, 5 to 6 minutes, then add the salt.
  • Put the cooked rice in an 8-inch square (or similar size) baking dish, then fold in the tomato sauce. (You can also do the folding in a separate bowl and then transfer the rice to the baking dish, if you doubt your ability to not spill rice and sauce everywhere.) Evenly distribute the grated cheese over the top.
  • Switch the oven to broil and place the baking dish on the top oven rack. Broil for about 3 minutes, until the top bubbles and turns golden brown. Serve immediately.
