Steps:
- Soak vegetables in water overnight, then drain.
- Mix together vinegar, salt, garlic & ginger in a 2-quart jar.
- Add vegetables, then pour in vinegar.
- Cover and marinate 3 days in refrigerator.

LARA'S PERSIAN PICKLED GARLIC
Steps:
- Combine the water, vinegar, salt, peppercorns, coriander seed and ginger root in a sauce pan. Bring to a boil over high heat and then simmer for 2 minutes. Remove from heat and allow to cool slightly.
- Place the garlic in a one quart glass jar and pour the slightly cooled brine over it. Cool to room temperature and cover tightly. Refrigerate for 3 days for a mildly pickled garlic or for up to 10 days for an intensely flavored one. Serve as a condiment with rich meat or as a selection in an assortment of mezes.

- Trim the green beans, cut them into 1/4" pieces. Bring a pot of water to boil and steam the green beans for 10 minutes. Then let them dry completely.
- Wash cauliflower florets, celery, English cucumber and carrots. Mix together and let dry completely.
- Cut each Roma tomato into 8 pieces and put them in a large pot. Turn the heat on to medium and cook the tomatoes until fully soft.
- Transfer the cooked tomatoes into a food processor or blender and blend completely until no chunks are left. If needed, mix the tomatoes in batches.
