CREAMY GARLIC MASHED POTATOES



Creamy Garlic Mashed Potatoes image

Six garlic cloves and Parmesan cheese add savory depth to Alton Brown's Creamy Garlic Mashed Potatoes, from Good Eats on Food Network.

3 1/2 pounds russet potatoes
2 tablespoons kosher salt
16 fluid ounces (2 cups) half-and-half
6 cloves garlic, crushed
6 ounces grated Parmesan

Steps:

  • Peel and dice potatoes, making sure all are relatively the same size. Place in a large saucepan, add the salt, and cover with water. Bring to a boil over medium-high heat and then reduce heat to maintain a rolling boil. Cook until potatoes fall apart when poked with a fork.
  • Heat the half-and-half and the garlic in a medium saucepan over medium heat until simmering. Remove from heat and set aside.
  • Remove the potatoes from the heat and drain off the water. Mash and add the garlic-cream mixture and Parmesan; stir to combine. Let stand for 5 minutes so that mixture thickens and then serve.

These garlic mashed potatoes are rich and very tasty! For a creamier texture, use heavy cream in place of the milk. These are also terrific topped with green onions.

8 potatoes, peeled and quartered
½ cup milk
¼ cup butter
2 cloves garlic, minced
salt to taste
1 pinch ground white pepper
2 tablespoons sesame seeds

Steps:

  • Bring a large pot of water to boil; add potatoes, and boil until soft, about 20 to 25 minutes. Drain, and place in a large bowl.
  • Combine potatoes with milk, butter, garlic, salt, and pepper. Mix with an electric mixer or potato masher to your desired consistency. Sprinkle with sesame seeds.

This classic potato dish is always on everyone's favorites list for a Thanksgiving side.

8 medium russet potatoes (about 4 pounds)
1 head peeled garlic cloves (about 15)
Coarse salt
1 1/2 cups milk
1/2 cup butter (1 stick), cut into small pieces

Steps:

  • Peel potatoes and quarter lengthwise; cut crosswise 1/2 inch thick. In a 5-quart saucepan, combine potatoes and garlic cloves; cover with water (about 8 cups) by 1 inch. Add 1 tablespoon salt.
  • Bring to a boil; reduce heat, and simmer until potatoes are easily pierced with the tip of a paring knife, 25 to 30 minutes.
  • Drain; return garlic and potatoes to pan. Stir over medium-high heat until dry, 1 to 2 minutes. Remove from heat.
  • In a small saucepan, bring milk to a boil; pour over potatoes. Add butter and 1 teaspoon of salt. Mash until smooth and creamy.

This is a variation of the mash served at the Garlic Rose Restaurant in San Francisco. My parents went and brought back a cookbook, so I tried this recipe out, altered it slightly and it was gorgeous. Very rich, so watch out!

4 large potatoes, peeled and diced
2 turnips, peeled and diced
1 cup peeled garlic clove
1/3 cup heavy cream
1/8-1/4 fluid ounce milk (splash)
2 ounces butter
salt
white pepper

Steps:

  • Put the potatoes, turnip and garlic and put into a big pot. Add water, salt it and bring to the boil.
  • When the potatoes and turnip are soft (test by seeing whether or not you can stick a knife through it easily), drain the water off and put the pot on a flat surface.
  • Get your masher and mash like mad, making sure to mash the garlic into the potatoes and turnip. Begin with your splash of milk, just to help smooth it all out, then add the cream a bit at a time and chuck in the butter, making your mash as smooth as you can get it. When you're done you should have an orangey-coloured mash which is relatively smooth, but still with roughage.
  • Season with salt and pepper, serve and eat piping hot.

¼ cup butter
½ cup whole milk
salt and ground black pepper to taste

Steps:

  • Place the potatoes into a large pot, and cover with salted water. Bring to a boil, reduce heat to medium-low, cover, and simmer until tender, 20 to 25 minutes. Drain, and return the potatoes to the pot. Turn heat to high, and allow the potatoes to dry for about 30 seconds. Turn off the heat.
  • Mash the potatoes with a potato masher twice around the pot, then add the butter and milk. Continue to mash until smooth and fluffy. Whisk in the salt and black pepper until evenly distributed, about 15 seconds.

4 tbsp half-fat crème fraîche

  • Boil the potatoes and garlic in salted water until tender. Drain, return to the pan and steam-dry for a few mins. Mash well, then stir through the crème fraîche, herbs and some seasoning, adding a little milk, if you like, for a softer consistency.
