This is a recipe given to me by my aunt. The rolls are excellent!

2 ½ cups warm milk
4 teaspoons active dry yeast
½ cup sugar
2 eggs
½ cup butter, softened
2 teaspoons salt
7 cups all-purpose flour, or as needed
½ cup butter, melted

Steps:

  • Pour milk into a large mixing bowl, and sprinkle yeast over the surface. Allow to rest for 5 minutes. Beat in the sugar, eggs, 1/2 cup butter, and salt; blend thoroughly. Gradually stir in the flour to make a soft dough. Cover bowl, and set in a warm place until dough doubles in size, about 1 hour.
  • Punch down the dough, cover the bowl, and allow to rise again. Repeat this step two more times.
  • Break off 2 to 3 inch size pieces of dough, roll lightly into round shape, and place in prepared baking dish, edges touching. Repeat to make 36 dough balls. Cover and let rise until doubled in size.
  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch baking dish.
  • Bake rolls in preheated oven until tops turn golden brown, 10 to 15 minutes. When rolls are finished baking, drizzle melted butter over the top, and serve warm.

4 cups (512g) all-purpose flour, (or more if needed)
2 envelopes (about 2 tablespoons) rapid rise or instant yeast
1/4 cup (50g) granulated sugar
1 large egg, (room temperature)
1 teaspoon salt
1 1/2 cups (367g) whole milk
2 tablespoons salted butter, (melted)
1 teaspoon kosher salt, (optional)

Steps:

  • Combine 3 cups flour, undissolved yeast, sugar, egg, and salt in a large bowl or in the bowl of your stand mixer fitted with dough hook.
  • Heat milk until very warm (110°F to 120°F).
  • Add warm milk to flour mixture. Knead 2 minutes at medium speed, scraping bowl occasionally if needed. Add 1/2 cup flour; knead 2 more minutes.
  • Add remaining 1/2 cup flour. The dough should be pulling away from the sides of the bowl and very soft. (If the dough seems too wet you may need more flour. Add in 1/4 cup increments until the dough has pulled away from the sides of the bowl while kneading.)
  • Cover with a clean towel and let REST 30 MINUTES.
  • Remove towel and punch down dough.
  • Divide dough into equal pieces and shape into balls. Place in greased 9x13 inch pan. Cover with plastic wrap and REST in a warm place - over 70°, preferably 75° - until doubled in size, about 30 minutes. (I had 6 left over and added them to a greased 7-inch pie dish and baked as directed.)
  • Bake in preheated 375°F oven for 12-17 minutes or until golden brown.
  • Brush with melted butter while warm.
  • Sprinkle kosher salt on top if desired.

1 cup warm water (105 F to 115 F)
2 (1/4 ounce) packages active dry yeast (4 1/2 teaspoons)
1/2 cup butter, melted
1/2 cup sugar
3 eggs
1 teaspoon salt
4 -4 1/2 cups all-purpose flour
additional melted butter (optional)

Steps:

  • Combine the warm water and yeast in a large bowl.
  • Let the mixture stand until yeast is foamy, about 5 minutes.
  • Stir in butter, sugar, eggs and salt.
  • Beat in flour, 1 cup at a time, until dough is too stiff to mix with a spoon (some flour may not be needed). At this point, use dough hook or knead on floured surface for 10 minutes until dough is smooth.
  • Place in a greased bowl and cover. Let rise until doubled, or at this point it can be refrigerated for up to 4 days.
  • Grease one 16.5x12-inch or two 12x9-inch baking pans.
  • Turn the chilled dough out onto a lightly floured board.
  • Divide dough into 24 equal-size pieces (about 50 grams each).
  • Roll each piece into a smooth round ball; place balls in even rows in the prepared pan.
  • Cover and let dough balls rise until double in volume, about 1 hour. (Remember if you are using dough that has been refrigerated and is cold this step will take longer).
  • Preheat oven to 375°F Bake until rolls are golden brown, 15-20 minutes.
  • Brush warm rolls with melted butter, if desired.
  • Break rolls apart to serve.

1/4 cup warm water (115 degrees)
2 packets (1/4 ounce each) active dry yeast
1 1/2 cups warm whole milk (115 degrees)
1/2 cup (1 stick) unsalted butter, melted, plus more for bowl and pans
1/4 cup sugar
2 1/4 teaspoons salt
3 large eggs
6 to 6 1/2 cups all-purpose flour (spooned and leveled), plus more for work surface

Steps:

  • Place water in a small bowl; sprinkle with yeast, and let stand until foamy, about 5 minutes. In a large bowl, whisk together milk, butter, sugar, salt, and 2 eggs. Whisk in yeast mixture.
  • Using a wooden spoon, stir in 6 cups flour, 1 cup at a time, until you have a soft, shaggy dough (if necessary, add up to 1/2 cup more flour). Turn dough out onto a floured work surface; knead until smooth and elastic, 5 to 10 minutes. Butter the inside of a large bowl; place dough in bowl, turning to coat. ½ cup warm water

2 ¼ teaspoons active dry yeast, 1 packet
4 cups all-purpose flour, plus more for dusting
1 ½ teaspoons kosher salt
2 large eggs, room temperature
neutral oil, for greasing
sea salt, for sprinkling

Steps:

  • In a liquid measuring cup or small bowl, combine the warm milk, warm water, melted butter, and sugar.
  • Sprinkle the yeast evenly over the wet ingredients, stir to combine, and let stand for 5 minutes, until foamy
  • In a large bowl, combine the flour and salt, and stir to combine. Beat 1 egg, then add to the bloomed yeast mixture. Pour the wet ingredients into the flour and use a knife to stir until the mixture just comes together and forms a dough. Turn the dough out onto a lightly floured surface and knead for 5-10 minutes, or until the dough becomes smooth. Add more flour as needed to keep the dough from sticking.   • Lightly grease a large glass bowl with oil. Add the dough, cover with plastic wrap, and let rest for 1 hour, or until doubled in size.
  • Punch down the dough, then turn out onto a floured surface. Knead for a few more minutes, just until the dough is smooth, about 2 minutes.
  • Divide the dough into 16 equal balls, roughly the size of tangerines.
  • Knead the balls, gathering the edges of the dough toward the center to make a taut, round ball with a smooth top.
  • Place the rolls on a parchment paper-lined baking sheet. Cover with plastic wrap and let rise for 30 minutes.
  • Preheat the oven to 375˚F (190˚C).

1.5 cups milk
2 1/4 teaspoon instant yeast
1/4 cup melted butter, cooled to room temp
1/4 cup white sugar
1 large egg
1 teaspoon salt
3-4 cups flour

Steps:

  • In the bowl of a stand mixer or large mixing bowl, mix milk, yeast, butter, sugar, egg, and salt. If you don't have a stand mixer, mix vigorously with a wooden spoon or hand mixer. Add in flour 1/2 cup at a time, mixing well between each addition. Stop adding flour when it is no longer sticky. Use your mixer's dough hook attachment for 10 minutes or knead by hand. Place in a buttered bowl and let rise in a warm spot until doubled. This can take a few hours at room temperature, but it can go faster if you turn the oven to 200, turn it off, and then place the bowl in the oven (make sure it's turned off!) After dough has risen, punch down gently and divide into 12 equal pieces. Form the dough pieces into a roll. Place rolls in a greased 9×13 glass dish. Let rise until doubled (again, using the oven trick can make it go faster). Once rolls have risen, bake at 375F for 18-25 minutes. Brush with butter.

1 tablespoon instant yeast
3 tablespoons sugar

4 cups flour (I use a combo of wheat and white)

Steps:

  • Add salt and flour slowly, checking for consistency. You may need to use as much as 1/2 a cup extra flour- dough should be firm but slightly sticky.
