HOLIDAY CAKE BON BONS

- Heat oven to 350°F (325°F for dark or nonstick pan). Make and bake cake as directed on box for 13x9-inch pan. Cool 15 minutes.
- In large bowl, crumble warm cake; stir in frosting until well blended. Refrigerate 1 to 2 hours or until firm enough to shape.
- Drop mixture by teaspoonfuls onto cookie sheet. Shape into balls. (If mixture is too sticky, refrigerate until firm enough to shape.) Freeze 30 minutes.
- Line another cookie sheet with foil. In 1-quart microwavable bowl, microwave 12 oz candy coating uncovered on High 1 minute 30 seconds; stir. Continue microwaving and stirring in 15-second intervals until melted and smooth. Remove one-third of the balls from the freezer. Using 2 forks, dip and roll each ball in coating. Place on foil-covered cookie sheet. Decorate as desired. Refrigerate cake balls about 10 minutes or until coating is set. Melt remaining candy coating in 12-oz batches; dip remaining balls. Serve at room temperature. Store in airtight container.

- In a small saucepan, melt chocolate chips with 3/4 cup condensed milk over low heat, stirring occasionally. Line an 8-in. square dish with waxed paper; butter the paper. , Spread half of melted chocolate mixture into pan; chill for 5-10 minutes (let remaining melted chocolate mixture stand at room temperature). , In another saucepan, melt white baking chips. Stir in remaining condensed milk until smooth. Remove from the heat; add extract and food coloring. Refrigerate until set. Spread over chocolate layer; spread with reserved chocolate mixture. Refrigerate until set. Cut into 1-in. pieces.

PEPPERMINT CHOCOLATE BONBONS
I have not tried this recipe. I'm posting this recipe for a request from the boards. This recipe is from My Great Recipes. Although peppermint chocolate bonbons sound fancy and complicated, they are one of the simplest confections to prepare. The trick is to purchase real chocolate and then melt it over very low heat. It makes a thoughtful gift when packed in a decorative, reusable tin or box.

- Tips: To shape the candies into uniform balls, use a #70 or smaller ice cream or sherbet scoop. For an interesting effect, roll the shaped, chilled candies in cocoa before serving.
- Mix chocolate chips, butter and cream in a heavy saucepan.
- Place over very low heat and stir until chips and butter are melted and mixture is smooth and thick. Remove from heat.
- Beat in the powdered sugar until mixture is smooth again. Stir in the peppermint extract.
- Cover and chill about 1 or 2 hours until mixture is thick enough to shape or drop into small candy cups.
- Divide the mixture into 24 portions.
- Drop into paper bonbon cups or first roll into small balls before placing into cups.

- In a small saucepan over low heat, heat the cream just until it comes to a boil. Then immediately remove cream from heat and add in chopped chocolate. Allow the mixture to sit, untouched, for two minutes, then whisk smooth. Stir in the butter and peppermint extract and vigorously whisk until smooth and shiny.
- Pour the mixture into a medium bowl and cool to room temperature before tightly covering the bowl with plastic wrap and refrigerating for 2 hours, or until firm enough to scoop.
- Fill a medium pot one-third full with water and bring it to a low simmer over medium heat. Place a heatproof bowl that will fit on top of the pan snugly, but will not touch the simmering water, on top of the pan. Reduce the heat to low and add two-thirds of the chopped chocolate into the bowl over the pot. Heat until the chocolate is completely melted, stirring occasionally with a silicone spatula. Once the chocolate is completely melted, remove the pan from the heat - keeping the bowl on top of the pan - and stir in the reserved chocolate.
- Right before dipping, pour the melted chocolate into a liquid measuring cup.
- Before you begin, make sure you have enough room in your refrigerator for both baking sheets; the truffles must chill before being dipped in the chocolate coating.
- Line two large baking sheets with parchment paper and set them aside.
- Measure 2 teaspoons of the truffle filling and quickly roll it between your hands to form a ball. Transfer to the prepared baking sheet, and repeat with all truffles. Refrigerate the rolled truffles for at least 15 minutes before dipping in the chocolate.
- Remove the chilled truffles from the refrigerator and begin dipping them into the chocolate using a small spoon or fork. Transfer the dipped truffles back onto the baking sheets and sprinkle with crushed candy canes.
- Allow truffles to sit at room temperature until set, about 1 hour.
PEPPERMINT BONBONS
Steps:
- In a large pot set over medium heat, add the cream, sugar, sorbitol, inverted sugar, dextrose, peppermint and vanilla seeds, and cook until a candy thermometer inserted in the pot reads 113 degrees F. Cool the mixture to 95 degrees F.
- In a separate pot, heat the butter, dark chocolate and milk chocolate to melt, then cool the chocolate to 86 degrees F. Using an electric hand mixer, blend the chocolate with a little of the cream mixture. Slowly mix in the remaining cream mixture. Cool to 82 degrees F, then pipe into the bonbon molds and refrigerate until set, about 1 hour 30 minutes.

- Combine first 3 ingredients in a large saucepan; cook over low heat until chocolate melts and mixture is smooth, stirring occasionally. Remove from heat, and stir in 1/2 cup crushed peppermint and 6 tablespoons sugar. Let cool 30 minutes.
- Add eggs to melted chocolate, 1 at a time, stirring well. Stir in extracts.

- Heat oven to 350°F. Grease bottom of rectangular pan, 13x9x2 inches, with shortening or cooking spray. In 1-quart saucepan, melt 4 ounces chocolate and 1 cup butter over low heat, stirring frequently, until smooth; remove from heat. Cool 5 minutes.
- Meanwhile, in medium bowl, beat all Peppermint Cream Cheese Filling ingredients except chocolate chips with spoon until smooth. Stir in chocolate chips; set aside.
- In large bowl, beat chocolate-butter mixture, 2 cups granulated sugar, the vanilla and eggs with electric mixer on medium speed 1 minute, scraping bowl occasionally. Beat in flour and salt on low speed 30 seconds, scraping bowl occasionally. Beat on medium speed 1 minute.
- Spread half of batter (about 2 1/2 cups) in pan. Spread filling over batter. Carefully spread remaining batter over filling. Gently swirl through batters with knife for marbled design.
- Bake 45 to 50 minutes or until toothpick inserted in center comes out almost clean. Cool completely, about 1 hour.
- Meanwhile, in 1-quart saucepan, heat 2 tablespoons butter, the corn syrup and water to boiling; remove from heat. Add 2 ounces chocolate, stirring until melted. Stir in powdered sugar until spreadable. Spread brownies with frosting. Cut into 8 rows by 6 rows. Store covered in refrigerator.

- Using colored cocoa butter, decorate the inside of each mold cavity with a colorful design of your choice. Allow colors to set. Fill cavities with tempered dark chocolate and turn upside down to pour out chocolate. Tap mold firmly with a bench scraper to remove excess chocolate from cavities. Turn right side up and scrape off chocolate from the top of mold using the bench scraper. Invert again and when chocolate begins to set (becomes matte in appearance) turn the mold back over and allow chocolate to set fully before filling.
- Melt the white chocolate over a double boiler or in a microwave for 20-30 second intervals, mixing often, until completely melted.
- In a small saucepan, bring cream and glucose to a boil. Pour 1/3 of the cream mixture over melted chocolate. Using a spatula, mix from the center out to obtain a smooth and glossy texture. Gradually add remaining cream, mixing to keep the ganache smooth and emulsified. Stir in soft butter and peppermint extract or use an immersion blender to thoroughly combine until smooth. Allow ganache to cool to 97ºF (36ºC) before filling molds.
- Melt the dark chocolate over a double boiler or in a microwave for 20-30 second intervals, mixing often, until completely melted.
