- In a small skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain., Spread two toast slices with jam. Layer with turkey, bacon, tomato, onion, lettuce and cheese. Spread remaining toast with mustard; place on top.

PEPPERED TURKEY, HONEY HAM AND GREEN PEPPER SANDWICH
This is a very yummy, very versatile sandwich. I love lettuce leaves on my sandwich, but I don't tend to buy lettuce by the head or bunch because I can't eat it fast enough before it goes bad. Sometimes I'll use the leaves from prepackaged lettuces or salad mixes. But all that aside, I love bell peppers; green, red, yellow, and orange. This sandwich was inspired by my hunger, what I had on hand, and my love of bell peppers. (At Subway, I'll have them add green peppers to my sub along with my other fixings. So I decided, duh, why not at home too?) I hope you enjoy this as much as I did. Feel free, thoiugh to mix and match other lunch meats, veggies and bread. Since this was what I had on hand, this is what I used.

Steps:
- Spread mayo on both sides of bread.
- Lay the peppered turkey breast on one side, and the honey ham on the other.
- Lay thin strips of green pepper on one side (so when you close the sandwich the pepper is between the turkey and ham).
- Slice sandwich in half, if desired. A crunchy and refreshing change from lettuce!

KITTENCAL'S BEEF AND BELL PEPPER SANDWICH
This is a great way to use up leftover steak or roast beef, my family loves these sandwiches, feel free to adjust amounts to taste --- prep time does not include cooked the peppers and onions, if I know I will be serving these sandwiches I most always prepare the bell pepper/onion mixture well in advance, I have left the sauteed mushrooms as optional they do however make a great addition to this sandwich :)

- Heat oil in a large skillet over medium-high heat.
- Add in sliced bell peppers and onions with cayenne pepper; saute stirring until softened.
- Add in garlic and cook stirring for 2-3 minutes.
- Season with black pepper and salt.
- Pile/divide the sliced beef onto the toasted buns then sprinkle the beef with freshly ground black pepper.
- Place the cheese onto the beef then place the bell pepper mixture and sauteed mushrooms (if using) on top of the cheese.
- Cover with the remaining toasted half of the roll.
- Wrap each roll in a paper towel and microwave until just heated through (about 45 seconds).

- Place onion slices in a 13x9-in. baking pan. In a small bowl, whisk the oil, vinegar, oregano and garlic; brush half over the onions. Set remaining dressing aside. , Bake onions, uncovered, at 375° for 10 minutes or until tender. Add red peppers; bake 10 minutes longer or until heated through. Meanwhile, slice bread in half lengthwise, then cut into fourths. Carefully hollow out bottom of loaf, leaving 1/2-in. shells (discard removed bread or save for another use). , Place bread, cut side up, on a baking sheet. Broil 4 in. from the heat for 1 minute or until toasted. Layer with onions, red peppers and cheese on bottom halves of bread. Drizzle with remaining dressing.
