GERMAN SPICE COOKIES

These chewy spice cookies are great with coffee and taste even better the next day. The recipe has been a family favorite for more than 40 years.

3 large eggs
2 cups packed brown sugar
1 teaspoon ground cloves
1 teaspoon ground cinnamon
1/2 teaspoon pepper
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup raisins
1 cup chopped walnuts

Steps:

  • In a large bowl, beat eggs. Add the brown sugar, cloves, cinnamon and pepper. Combine the flour, baking soda and salt; gradually add to the egg mixture. Stir in raisins and walnuts. , Drop by tablespoonfuls 2 in. apart onto lightly greased baking sheets. Bake at 400° for 8-10 minutes or until surface cracks. Remove to wire racks to cool.

This is from Williams Sonoma and it has been a family favorite for years. It is a great twist on Gingerbread cookies.

2 1/4 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon crushed anise seed
1/2 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1/2 cup unsalted butter, at room temperature
3/4 cup firmly packed light brown sugar
1/4 cup light molasses (unsulfured)
1 egg
2 cups confectioners' sugar, for dusting (icing)

Steps:

  • In a medium bowl, sift together the flour, salt, pepper, aniseeds, cinnamon, baking soda, allspice, nutmeg and cloves.
  • In a large bowl, using an electic mixer set on medium speed, beat together the butter, brown sugar and molasses until light and fluffy, about 4 minutes.
  • Beat in the egg.
  • Reduce the mixer speed to low and beat in the flour mixture.
  • Cover and refrigerate for several hours.
  • Position a rack in the middle of an oven and preheat to 350 degrees F.
  • Butter 2 baking sheets, scoop up pieces of dough and roll between your palms into balls 1 1/2 inches in diameter.
  • Place the balls on the cookie sheets spacing them about 2 inches apart.
  • Bake until the cookies are golden brown on the bottom and firm to the touch, about 14 minutes.
  • Transfer the baking sheets to racks and let the cookies cool slightly on the sheets.
  • Place the confectioners' sugar in a sturdy paper bag, drop a few cookies into the bag, close the top securely, and shake gently to coat the warm cookies with the sugar.
  • Transfer to racks and let cool completely.
  • Repeat with the remaining cookies.
  • Store in an air-tight container at room temperature for up to 1 week.

TRADITIONAL PEPPARKAKOR (SWEDISH SPICE COOKIES)

Traditional Swedish spice cookie; traditionally served on St. Lucia Day (Dec. 13). These are my sisters favorite cookie.:) (Note: you need to mix up the dough a day in advance, cover and let rest overnight). Cardamom & finely chopped candied ginger would make nice additions to these Pepparkakor. The molasses is an essential ingredient in this recipe, you get crispy yet chewy cookies with a lovely rich subtle depth of flavor. Don't skip!

3 1/2 cups flour
2 teaspoons ginger
2 teaspoons cinnamon
2 teaspoons cloves
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1 cup butter (do NOT use margarine) or 1 cup shortening (do NOT use margarine)
1 egg
1/2 cup molasses (I use "Grandma's Original" unsulphured molasses)

Steps:

  • Sift together dry ingredients; set aside.
  • Cream sugar and butter.
  • Add egg and molasses.
  • Blend in dry ingredients thoroughly. Let dough stand overnight for easy rolling.
  • On a well-floured board, roll out dough to 1/8 inch thickness.
  • Cut into shapes (we usually make gingerbread people) and bake at 350 degrees for 10 minutes.
  • NOTE: Prep time does not include time to let dough rest overnight.

1/2 cup butter, softened
1 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon red chili powder
1/2 teaspoon finely ground black pepper
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1/4 teaspoon cayenne
1 egg
1 tablespoon milk
2 cups all-purpose flour
medium-grind black pepper
10 ounces bittersweet chocolate
1 tablespoon shortening

Steps:

  • With an electric mixer on medium beat butter.
  • Add sugar, baking powder, ground chili, the 1/2 tsp finely ground pepper, ginger, clove, cinnamon, and cayenne.
  • Beat until combined.
  • Add egg and milk. Mix well.
  • Beat in as much flour as possible, stir in remaining flour. If necessary knead dough to blend.
  • Shape dough into a ball and divide in half. Shape each into a 6 1/2-inch long roll. Wrap in plastic and chill 4 to 24 hours.
  • Preheat oven to 375°F.
  • Cut rolls into 1/4-inch slices.
  • Place 1-inch apart on an ungreased cookie sheet.
  • Sprinkle with medium ground pepper.
  • Bake 8 to 10 minutes until edges are golden.
  • Melt chocolate and shortening in a small sauce pan on low. Dip slightly cooled cookies half way into chocolate, let set on waxed paper.

German for "pepper nut," pfeffernusse cookies are named for the pinch of pepper added to the dough before baking. It joins a quartet of warm spices -- cinnamon, nutmeg, allspice, and cloves.

2 1/4 cups unbleached all-purpose flour
1/4 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves
1/4 teaspoon freshly ground nutmeg
1/4 teaspoon freshly ground pepper
1/2 cup (1 stick) unsalted butter, room temperature
3/4 cup firmly packed light-brown sugar
1/4 cup unsulfured molasses
1 large egg
1/2 teaspoon pure vanilla extract
3 1/2 cups confectioners' sugar
1/3 cup whole milk, plus more if needed
1/4 teaspoon kirsch or other cherry-flavored liqueur, optional
Coarsely ground pink peppercorns
1/2 teaspoon luster dust, preferably metallic
1/4 teaspoon kirsch

Steps:

  • Cookies: Preheat oven to 350 degrees. Line three baking sheets with parchment paper.
  • In a medium bowl, combine flour, baking soda, and spices. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat together butter, brown sugar, and molasses on medium speed until fluffy, about 3 minutes. Beat in egg and vanilla. With mixer on low speed, add flour mixture; beat until just combined. Pinch off a heaping teaspoon of dough, roll into a ball, and place on a prepared baking sheet. Repeat process with remaining dough, spacing balls 1 1/2 inches apart. (Dough can be frozen at this point, covered tightly with plastic wrap, up to 1 month.)
  • Bake, rotating sheets halfway through, until cookies are golden and firm to the touch with slight cracking, about 15 minutes. Transfer sheets to a wire rack to cool completely.
  • Glaze: Fit a rimmed baking sheet with a wire rack. In a medium bowl, whisk together confectioners' sugar, milk, and kirsch, if desired. Using a fork, dip each cookie in glaze to coat. Tap to remove excess glaze and place on wire rack to dry. Repeat with remaining cookies.
  • To decorate: While the glaze is still wet, top cookies with a small pinch of peppercorns, if desired. Alternatively, let glaze dry completely before mixing together luster dust and kirsch with a small paintbrush. Lightly brush tops of cookies with luster dust mixture, if desired. Let dry before serving. Cookies can be stored in an airtight container at room temperature up to 2 weeks.

BLACK PEPPER BUTTER COOKIES

These are my absolute favorite cookies. A friend in college had received a huge tin of homemade cookies from her mother and a version of these cookies were inside, along with many other types of cookies. I had never heard of black pepper cookies before and loved the unique flavor-sweet & buttery, with a slight kick from the pepper. I searched for years to find the recipe and finally found it in a Watkins spices cookbook several years ago. I make these every year for the holidays and everyone always wants to know the secret of my "vanilla flecked" butter cookies. Update: Eggs sizes seem to be shrinking, so depending upon the size of the eggs in your area, you may need to use an XL egg rather than a large. Regarding the pepper: fresh ground will produce huge grains of pepper and make things far too peppery and savory tasting. Please use finely ground pre-ground black pepper in this recipe, carefully measured using a measuring spoon and leveled off.

1/2 cup cornstarch
2 teaspoons baking powder
1/2 teaspoon ground cardamom

1/2 teaspoon ground allspice
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 cup butter
1/2 cup light brown sugar, firmly packed
1/2 teaspoon vanilla
1 teaspoon grated lemon rind
1/4 cup whipping cream
2/3 cup almonds or 2/3 cup walnuts, finely ground
2 tablespoons powdered sugar (optional)

Steps:

  • Sift together flour, cornstarch, baking powder, spices, salt & pepper.
  • In a separate bowl, cream butter & brown sugar, add vanilla & lemon peel.
  • On low speed, add 1/2 flour mixture, then the cream, then the other 1/2 flour mixture.
  • Stir in nuts.
  • Roll into 3/4" balls, put on ungreased cookie sheet 1" apart.
  • Bake 15-20 minutes at 350F, until the bottoms of cookies are golden brown.
  • Let the cookies cool about 1 minute before transferring them off the baking sheet to cool.
  • After cool, dust with powdered sugar if desired.
