APPLE SWEET POTATO SCALLOP
This is the perfect side dish on a chilly Autumn evening. The apples give it just the right amount of sweetness, and it smells heavenly cooking. I actually cooked this in a smaller oval casserole dish and used 2 sweet potatoes and 3 apples, so obviously the amounts are very flexible. Just reduce the other ingredients and make sure you use enough OJ so that it covers about 2/3 of the sweet potatoes and apples. Yum! I got this wonderful recipe from my friend Shell Marr.

Steps:
- Spray a 9x13-inch baking dish with non-stick cooking spray.
- Place alternate layers of sweet potatoes and apples in baking dish, ending with apples.
- Pour orange juice and zest over mixture and sprinkle with cinnamon.
- Bake, covered with foil, in preheated 375 degree oven for 40 minutes.
- Remove foil, top with crushed cereal or bread crumbs, and spray with non-stick cooking spray.
- Bake 15 to 20 minutes more until brown.

- Preheat oven to 350°. In a small bowl, combine apple slices, sugar and lemon juice; toss to coat. Set aside. In an 8- or 9-in. cast-iron or other ovenproof skillet, heat butter over medium heat. Add onion; cook and stir until crisp-tender, about 3 minutes. Remove from the heat., Alternately arrange potato and apple slices in a single layer in same skillet. Combine 3/4 cup Parmesan cheese, cream, thyme, salt and pepper; pour over top., Bake, uncovered, 50 minutes. Top with bacon and remaining 2 tablespoons Parmesan cheese. Bake until potatoes are tender and top is lightly browned, 5-10 minutes longer. Let stand 10 minutes before serving. If desired, sprinkle with parsley.

- Boil sweet potatoes until tender. Slice in 1/4 inch pieces.
- Butter a baking dish and put a layer of sweet potatoes in bottom,.
- then a layer of apples.
- Sprinkle with sugar, salt and mace, and dot with butter.
- Repeat until dish is filled, having the top layer of apples.
- Bake at 350-F about 50 minutes.

Steps:
- Wash and cook sweet potatoes in boiling water until just tender.
- Peel and cut into crosswise slices, about 1/4 inch thick.
- Butter a 2 quart ovenproof casserole.
- In a small bowl, mix together brown sugar, mace, salt, (pecans- if using them) and set aside.
- Arrange half the sweet potato slices in the bottom of buttered casserole, then half the apple slices on top of the potatoes.
- Sprinkle half the brown sugar mixture over all.
- Dot with 2 Tablespoons of the butter.
- Repeat layers, ending with apples, sugar and butter.
- Bake in a 350°F oven for about 50 minutes.

- Cook the sweet potatoes in the oven or in the microwave so that they are soft, but still a little firm. Once they are cool enough to handle, peel the cooked sweet potatoes and cut them into 1/8-1/4 inch thick rounds.
- While the sweet potatoes are cooking and cooling, prepare the apples. Remove the cores from the apples and cut them into 1/8 inch thick rings. Sauté the apples in 3 Tbsp of butter until they are light brown and just beginning to soften, but not mushy.
- In the casserole dish arrange alternating layers of sweet potato rounds and apple rings so that there are 4 layer in all; sweet potato, apple, sweet potato and apple.
