PEPPER JACK POTATO PUFFS

Leftover mashed potatoes??? No problem! Here's a scrumptious recipe to make with them.

3 c leftover mashed potatoes
2 eggs
1/3 c sour cream
2 Tbsp grated parmesan
2 c grated pepper jack cheese

Steps:

  • 1. hand butter a 12 hole muffin pan. I keep a pack of vinyl gloves in my kitchen just for this purpose so I can get the butter into all the crannies.
  • 2. Crack 2 eggs into a mixing bowl and beat. (I used a hand mixer)
  • 3. add the parmesan cheese and sour cream and continue beating.
  • 4. Add the pepper jack cheese and mashed potatoes and mix well with a wooden spoon,
  • 5. Spoon the potato mixture into the 12 buttered muffin holes as equally as possible.
  • 6. Bake 45-60 minutes at 350 degrees until the puffs begin to pull away from the sides. Cooking time will vary based on how much liquid is in the leftover mashed potatoes used.
  • 7. Serve with a generous dollop of sour cream on each puff.

6 medium potatoes, peeled and cut into 1/4-inch slices
1 medium onion, sliced
1/3 cup butter, melted
1/2 teaspoon salt
1/4 teaspoon chili powder
1/8 teaspoon cayenne pepper
1/8 teaspoon pepper
2-1/2 cups shredded pepper Jack or Monterey Jack cheese, divided
Salsa, optional

Steps:

  • In a large bowl, combine potatoes and onion. Combine the butter and seasonings; drizzle over the potato mixture; toss to coat. Place half in a greased 13x9-in. baking dish. Sprinkle with half of the cheese; top with remaining potato mixture., Cover and bake at 400° for 45-50 minutes or until potatoes are tender. Uncover; sprinkle with remaining cheese. Bake 5 minutes longer or until cheese is melted. Serve with salsa if desired.

This is a nice difference from baked potatoes and makes a very good tasty side dish. Taken from the drawer of my mother in laws recipe box.

6 medium potatoes, peeled and sliced into 1/4-inch pieces
1 medium onion, sliced
1/3 cup butter, melted
1/2 teaspoon salt
1/4 teaspoon chili powder
1/8 teaspoon cayenne pepper
1/8 teaspoon pepper
2 1/2 cups monterey jack pepper cheese, shredded*

Steps:

  • Combine potatoes and onions.
  • Mix together butter and spices, drizzle over potatoes and onions.
  • Toss to coat.
  • In a 2 quart oval with flat bottom (or something similar) dish spread half the potatoe mixture top with half the cheese repeat one more time.
  • Bake 40-45 mins in 400 degree oven uncovered.
  • *I did not have any pepper jack cheese but did have some peppers and jack cheese so i chopped up the peppers grated the jack cheese and subbed this for pepper jack cheese.

These bite-size potato puffs are so irresistible, everyone will be reaching for more at your next gathering. Inspired by classic potato gnocchi, the little dough balls are made from fork-tender russet potatoes and a touch of flour and egg, to just hold everything together. After a trip to the air fryer, the potato puffs emerge with a golden-brown exterior and soft, tender interior. Serve them as an appetizer with a creamy tomato vodka sauce for dipping.

1 1/2 pounds russet potatoes
Kosher salt
3/4 cup all-purpose flour, plus more for dusting
1 large egg, lightly beaten
Olive oil cooking spray
1 tablespoon extra-virgin olive oil
1/2 small onion, finely diced (about 1/3 cup)
1 clove garlic, minced
1/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
1/2 cup vodka
One 15-ounce can tomato sauce
1/3 cup heavy cream
1/4 cup freshly grated Parmesan (about 1.5 ounces)
4 basil leaves, torn

Steps:

  • For the potato puffs: Put the potatoes in a large pot and add enough cold water to cover by about 2 inches; bring to a boil over medium-high heat. Cook at a steady boil, adding more water to cover the potatoes if necessary, until the potatoes can be pierced easily with the tip of a knife, 40 to 50 minutes. Drain and set aside until cool enough to handle.
  • Meanwhile, make the vodka sauce: Heat the olive oil in a medium saucepan over medium heat. Add the onion and cook, stirring occasionally, until slightly softened, about 3 minutes. Add the garlic, red pepper flakes and a generous pinch each of salt and black pepper and continue to cook, stirring, until fragrant, about 30 seconds. Remove the saucepan from the heat and stir in the vodka and tomato sauce. Return the saucepan to medium heat and simmer, stirring often, until all the alcohol cooks off, about 7 minutes. Add the cream and cook, stirring often, until the sauce thickens slightly, about 3 minutes. Stir in the Parmesan and basil. Remove from the heat and cover to keep warm.
  • Peel the potatoes and cut the flesh into large pieces. Pass the potato flesh through a ricer (or the large holes of a box grater) into a mound on a clean work surface and sprinkle with 1 teaspoon salt. Let the potatoes cool completely.
  • Sprinkle the flour over the mound of potatoes. Drizzle the egg over the flour and begin to combine with a fork until everything starts to clump together. Use your hands to gently knead and fully combine the ingredients, about 2 minutes; do not overwork the dough. Gather the dough into a ball.
  • Line a baking sheet with parchment. Cut the dough into 4 wedges. Working with one wedge at a time, roll the dough into a log 3/4 inch in diameter on a lightly floured surface. Use a bench scraper or knife to cut the log into 1-inch pieces. Roll each piece into a ball between your palms. Place on the prepared baking sheet. Repeat with the remaining dough.
  • Transfer half of the potato dough balls to the basket of a 6-quart air fryer, spacing them apart, and spray generously with olive oil cooking spray. Cook at 350 degrees F, shaking the basket halfway through, until golden brown, about 12 minutes. Repeat with the remaining potato dough balls. Serve with the warm vodka sauce on the side, for dipping.

I really like the sausage cheese balls my Pop makes for our New Year's celebration. But sometimes, sausage gives me heartburn and well, cheddar is pretty common. I wanted to try something different. So, I decided to omit the meat (making our vegan friends happy) and change the cheese (making me happy). I cut and pasted a few recipes together, tried some different amounts of ingredients, and well, VIOLA! They're pretty good and I wouldn't hesitate to fill a basket of these and plop 'em on my appy table.

  • Form the mixture into small balls about the size of a marble.
