- Preheat oven to 350°. In a large bowl, combine the first 11 ingredients. Transfer to a greased 13x9-in. baking dish. For topping, combine the potato chips, bacon and Parmesan; sprinkle over casserole. Top with paprika., Bake, uncovered, until edges are bubbly and topping is golden brown, 25-30 minutes.

Pepper Jack Chicken Casserole is easy and delicious, ready in just 45 minutes. Diced chicken, mushrooms, rice, and green beans are coated in a creamy sauce and topped with a mildly spicy slice of melted Pepper Jack cheese. Serve them in individual oven safe baking dishes.

Steps:
- Preheat the oven to 350 degrees F (180 C).
- Spray two 18.6 ounce oven safe baking dishes with non-stick spray. Click for 18.6 ounce oven safe baking dishes.
- Cook the rice according to the package directions.
- Pour the rice into the two dishes, divided evenly.
- Dice the chicken into bite sized pieces.
- Cut the mushrooms into slices.
- In a medium bowl, mix the chicken, mushrooms, onion powder, garlic powder, cumin, salt, pepper, green beans, and sour cream until combined.
- Place the chicken mixture in the bottom of the two baking dishes.
- Cut the butter into small pieces and scatter on top of the chicken mixture.
- Bake 30 minutes or until chicken is cooked through.
- Top with the Pepper Jack cheese slices and continue baking until the cheese is melted, about 3 - 5 minutes.
- Serve on trivets or pot holders. Click for cork trivets. Caution dishes will be very hot.

- Cook shells al dente according to package directions.
- Cook onion and red bell pepper in butter until tender, about 5 minutes. Stir in salt and chili powder.
- In a large bowl combine soup, onion mixture, milk and 2 cups cheddar cheese and parmesan cheese. Mix well. Stir in chicken, pasta and green chiles.
- Spread into a 9x13 casserole dish. Top with remaining cheese.
- Bake 30-35 minutes or until hot and bubbly.
