PENNE WITH BROWN BUTTER, ARUGULA, AND PINE NUTS

1/4 cup extra-virgin olive oil
1 large lemon, zested and juiced
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1 pound penne rigate pasta
1/2 stick (1/4 cup) unsalted butter, cut into 1/2-inch pieces, at room temperature
4 cups baby arugula
1 cup cherry or grape tomatoes, halved
1 cup grated Parmesan
1/2 cup toasted pine nuts (see Cook's Note)
2 tablespoons capers, rinsed and drained

Steps:

  • For the dressing: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, salt, and pepper until smooth. Set aside.
  • For the pasta: Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, 8 to 10 minutes. Drain and reserve about 1 cup of the pasta water.
  • In a high-sided skillet, whisk the butter over medium heat until melted. Simmer until foamy. Continue to cook until the butter has a nutty aroma and turns a caramel color, 3 to 5 minutes. Remove the pan from the heat. Add the pasta, dressing, arugula, tomatoes, Parmesan, pine nuts, and capers. Toss until coated, adding the reserved pasta water, 1 tablespoon at a time to loosen the sauce, if needed. Transfer to a large bowl and serve.

6 (5 to 6-ounce) tuna paillards, 1/2-inch thick
2/3 cup raisins
1 cup port
3 cups bread crumbs
1/4 cup Parmesan, grated, plus 1/2 cup, shredded
1/2 cup olive oil
2 tablespoons chopped parsley, optional
1/2 cup clarified butter
1/4 cup extra-virgin olive oil
1 tablespoon unsalted butter
2 cloves garlic, minced
12 medium mushrooms, quartered
1 pound spinach, picked and washed (loosely packed)
1/2 cup pine nuts, toasted
1/4 pound prosciutto, sliced thin and cut into julienne
1 1/4 cups red wine vinegar
1 ounce lemon juice
1 medium red onion, julienned
Salt and pepper
1/2 cup Caper Parsley Relish, recipe follows
2 bunches Italian parsley, leaves picked, coarsely chopped
2 lemons, peeled and sectioned, seeded and diced
1/4 cup capers
1/4 cup extra-virgin olive oil
1 tablespoon red wine vinegar
Salt and pepper

Steps:

  • Cut thin tuna steaks (or have fishmonger do it). Do not buy thick cuts and pound to 1/2-inch thickness like you would veal. Tuna is too delicate.
  • In a saucepan, poach the raisins in the port until plump. Drain and reserve the raisins.
  • Mix the bread crumbs, grated Parmesan, olive oil and, if desired, some chopped parsley together with salt and pepper. Dredge tuna in bread crumb mixture.
  • Mix the olive oil and the clarified butter. Salt and pepper the tuna paillards and dredge in the oil-butter mixture. Dip again into the bread crumbs, thoroughly coating both sides.
  • In a saute pan over medium to high heat, add a little oil and when hot the whole butter. Add the breaded paillards and saute on one side about 3 minutes until brown and crisp. Turn and cook the other side until brown and crisp. (Make sure not to crowd the saute pan. You will probably only be able to cook 2 paillards at a time.) Keep warm.
  • When paillards are cooked, wipe out the pan, add a little oil (or left over butter-oil mixture) to the pan. Add in the garlic and cook 2 minutes. Add the mushroom quarters and saute until browned. Add in the spinach, pine nuts, prosciutto, and let start to wilt. Remove from the heat.
  • In the stainless bowl, add the raisins, onions, shredded Parmesan, and wilted spinach mixture, dress with the vinegar and toss.
  • On six warm dinner plates, divide the spinach mixture and sprinkle on the lemon juice. Top each with a tuna paillard and top each paillard with the Caper Parsley Relish. Serve warm with a lemon crown.
  • Mix all together in a large bowl.

2 tablespoons butter
2 tablespoons olive oil
1/4 cup pine nuts
1 garlic clove, minced
1 pound spinach (washed and trimmed)
Salt and pepper to taste
1/4 cup currants soaked in port wine

Steps:

  • Bring a large pot of water to a boil. Add penne and boil for 10 minutes or according to package directions. Meanwhile, in a heavy 12-inch skillet heat butter and olive oil until foamy. Add pine nuts and saute, stirring continuously until they turn golden. Add garlic and saute for a minute to release the aroma. Add spinach in two batches if you must and toss together just until wilted. Season with salt and pepper. Add a tablespoon or so of water to get spinach steaming. Drain pasta and serve in bowl. Toss with wilted spinach and garnish with port soaked currants.

Steps:

  • Cook penne in boiling salted water in a 5- to 6-quart heavy pot until al dente or according to package directions, then drain in a colander.
  • Combine butter, oil, and pine nuts in cleaned and dried pot and cook over moderately high heat, stirring, until nuts are pale golden, about 3 minutes. Add garlic and cook, stirring, until garlic is golden, about 1 minute. Stir in greens and cook, stirring, until they wilt, about 3 minutes. Add penne, salt, and pepper and toss to coat. Stir in cheese and serve immediately with additional cheese on the side.

I recently visited a fancy restaurant that served Parmesan encrusted pine nuts in their Caesar salad. This is my near-perfect attempt to replicate these delicious salad toppers. The salad consisted of romaine lettuce, shredded Parmesan cheese, dressing, mixed croutons, and these pine nuts. They are sweet, savory, nutty, and delicious.

12 ounces pine nuts
¼ cup white sugar
2 tablespoons water
⅔ cup grated Parmesan cheese

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Prepare a baking sheet with cooking spray.
  • Spread pine nuts on the prepared baking sheet.
  • Bake in the preheated oven until most of the pine nuts are light golden brown and fragrant, about 20 minutes. Remove pine nuts and keep oven at 300 degrees F (150 degrees C).
  • Cook and stir sugar and water in a saucepan over medium heat until mixture turns light brown and syrupy, 5 to 10 minutes. Remove syrup from heat; fold in pine nuts to coat. Add Parmesan cheese; stir to coat.
  • Line baking sheet with waxed paper; spread coated pine nuts onto sheet, separating any bunches.
  • Bake in the preheated oven until cheese is melted, about 10 minutes.

Steps:

  • Preheat oven to 350 degrees. Spread pine nuts on a rimmed baking sheet; toast in oven, tossing occasionally, until golden, 6 to 8 minutes; set aside.
  • Meanwhile, bring a large pot of salted water to a boil. Add pasta, and cook according to manufacturer's directions. Add spinach during last 2 minutes of cooking. Drain; return pasta and spinach to pot. Add oil; season generously with salt and pepper. Toss well.

"A fabulous Italian recipe I invented for "Ready Set Cook". The Pine Nuts are a great addition. This is perfect for a weekend dinner when you feel like cooking a good part of the day."

1 lb penne pasta, barilla brand
1 1/3 lbs pork sausage
3 garlic cloves, chopped
2 tablespoons olive oil
4 ounces pine nuts, toasted (directions below)
1 (29 ounce) can tomato sauce
2 red bell peppers, roasted and chopped
6 plum tomatoes, diced
1/4 dry red wine
1/8 cup sun-dried tomato, chopped (about 9 pieces)
1 cup light cream
salt and pepper, to taste
1/4 cup fresh basil, chopped (ONLY USE FRESH!!!)

Steps:

  • In a large deep fry/saute pan, add 1/4 cup water and sausage.
  • Cook till just cooked through.
  • Water will start to evaporate.
  • When cooked through, remove from pan one at a time and cut into bite sized pieces.
  • Return sausage to pan to brown them.
  • When sausage AND pan are brown, move sausage to paper towels and set aside.
  • Add 1/4 cup more water to pan and stir up all the brown.
  • Simmer sauce on low from now on.
  • While doing that, in a small saute pan, heat oil and saute garlic for about 3 minutes, add to browned water.
  • Add also sausage, wine, tomato sauce, chopped tomatoes, salt and pepper.
  • While this is simmering roast the peppers: Pre heat oven to BROIL.
  • Cut each pepper in half longways, scoop out middle, place on olive oil coated cookie sheet face down and brush skins with olive oil.
  • Broil for 10 minutes or until skin is black.
  • Remove, cool, peel skin, chop them up.
  • Add peppers to sauce.
  • Start boiling water for Penne.
  • Chop up sun dried tomatoes and add to sauce.
  • Now start chopping basil.
  • I find it easiest to use kitchen shears.
  • Set basil aside.
  • Toast pine nuts: In a small DRY fry pan, add pine nuts, toast on medium heat till browned.
  • Remove from pan, put in small bowl for serving.
  • Add Penne to water, hopefully it is boiling now.
  • 5 minutes after adding Penne to water, add basil and cream to sauce, stirring constantly.
  • Heat only for 5 more minutes.
  • Penne and sauce will be done at the same time.
  • Spoon sauce& sausage over Penne and sprinkle pine nuts on top.
  • Serve with garlic bread and salad.

In a surprising twist, Tuscan kale is served raw-and makes for a substantial and satisfying winter salad. Be sure to choose bunches of Tuscan kale with small leaves, which are more tender. I adapted the recipe from one I found in this month's "Bon Appétit" (February 2009). It's by acclaimed chef Dan Barber, of New York's famous Blue Hill restaurants. Allow the currants to marinated for at least a few hours. After that, this dish takes minutes to throw together.

7 tablespoons white balsamic vinegar, divided
1 tablespoon unseasoned rice vinegar
1 tablespoon honey

2 bunches tuscan kale, center ribs and stems removed, leaves thinly sliced crosswise (about 1 pound)
2 tablespoons pine nuts, lightly toasted
parmesan cheese, shavings

Steps:

  • Place currants in small bowl; add 5 tablespoons white balsamic vinegar. Let soak overnight. Drain currants.
  • Whisk remaining 2 tablespoons white balsamic vinegar, rice vinegar, honey, oil, and salt in large bowl. Add kale, currants, and pine nuts; toss to coat.
  • Let marinate 20 minutes at room temperature, tossing occasionally. Season to taste with salt and pepper. Sprinkle cheese shavings over salad and serve.
