Number Of Ingredients 7

2 tablespoons, plus 2 teaspoons, olive oil
2 large shallots, peeled and minced
4 cups stemmed and quartered shiitake mushrooms
2 13 3/4-ounce cans artichoke hearts, well drained and quartered
1 teaspoon salt, plus more to taste
Freshly ground pepper to taste
1 pound penne

Steps:

  • Heat 2 teaspoons of the olive oil in a large, nonstick skillet over medium heat. Add the shallots and cook until softened, about 2 minutes. Add the mushrooms and cook until tender, about 10 minutes. Stir in the artichoke hearts and cook for 2 minutes. Season with the salt and pepper.
  • Meanwhile, bring a large pot of lightly salted water to the boil. Add the penne and cook just until tender. Drain. Place in a large bowl. Toss in the artichoke mixture and the remaining 2 tablespoons of olive oil. Season with additional salt and pepper if needed. Divide among 4 plates and serve immediately.

The Swiss chard in this pasta dish is the perfect economical veggie: You can eat both the leaves and the stems. Chose Italian-style chicken sausage, either sweet or hot. If the sausage is precooked, cut it into bite-sized pieces and saute to brown it.

Coarse salt and black pepper
12 ounces whole-wheat penne
2 tablespoons olive oil
3/4 pound chicken sausage, removed from casing
1 bunch Swiss chard (about 1 pound) cleaned, stems and leaves separated and chopped
1 (9-ounce) box frozen artichoke hearts, thawed
3 cloves garlic, minced
1/3 cup sun-dried tomatoes, sliced
1 tablespoon tomato paste
3/4 cup grated Parmesan (about 2 ounces), plus more for serving
1/3 cup chopped fresh basil leaves
1/4 teaspoon red pepper flakes

Steps:

  • Set a large pot of salted water to boil for pasta. Meanwhile, in a large nonstick skillet, heat 1 tablespoon oil over medium. Add sausage and cook, stirring occasionally and breaking sausage into pieces, until cooked through and lightly browned, 10 to 12 minutes.
  • Add remaining oil, chard stems, artichoke hearts, and garlic; season with salt and pepper. Cook until chard stems soften slightly, 3 to 5 minutes. Add chard leaves and cook, stirring, until wilted, 3 to 5 minutes. Remove from heat.
  • Add pasta to boiling water; cook until 2 minutes short of al dente. Add sun-dried tomatoes and cook 2 minutes. Reserve 1 cup pasta water and drain pasta; return to pot.
  • Pour half of reserved pasta water into a small bowl. Add tomato paste and whisk to combine. Add tomato paste mixture, sausage mixture, Parmesan, basil, and red pepper flakes to pasta in pot. Toss to combine, adding reserved pasta water if necessary. Season with salt and pepper.

The reworking of a recipe I got from someone else that I tweaked beyond all recognition... My serving size is pretty small because I like to enjoy pasta as a course rather than as the huge main focus of a meal. This is also a brilliant sauce to serve over gnocchi, if you feel so inclined, and I often do.

5 ounces frozen artichoke hearts, thawed and quartered
1/8 cup extra virgin olive oil
1 garlic clove, minced
1/4 lb gorgonzola
1/4 cup heavy cream, plus
2 tablespoons heavy cream
1 pinch onion powder, a tiny pinch
1 pinch crushed red pepper flakes, a pinch
fresh ground black pepper, to taste
6 ounces penne pasta
2 tablespoons fresh parsley, minced
toasted pine nuts, for garnish

Steps:

  • Boil water for pasta and cook according to package directions, reserving some of cooking water when draining.
  • While pasta is cooking, heat olive oil in large skillet over medium heat.
  • Add garlic and saute for 1 to 2 minutes.
  • Drain artichoke hearts well, add to skillet and saute 3 to4 minutes.
  • Add cheese and heavy cream. Simmer a few minutes until cheese melts.
  • Season with black pepper, onion powder and red pepper then set aside.
  • Add hot, drained pasta to sauce mixture, thinning if needed with pasta cooking liquid.
  • Toss with minced parsley then transfer to serving vessel.
  • Top with toasted pine nuts then serve at once.

1 large onion, chopped
3 large garlic cloves, chopped
1 28-ounce can diced tomatoes in juice
1/2 cup purchased pesto
12 ounces penne pasta, freshly cooked
1/3 cup grated Parmesan cheese
Additional grated Parmesan cheese

Steps:

  • Heat 3 tablespoons oil reserved from artichokes in heavy large pot over medium-high heat. Add onion and garlic and sauté until onion is tender, about 7 minutes. Add tomatoes with their juices and artichokes. Simmer until sauce thickens slightly, about 8 minutes. Add pesto; simmer 1 minute longer. Mix in pasta and 1/3 cup cheese. Season pasta with salt and pepper.Transfer pasta to large bowl. Serve, passing additional Parmesan separately.

This is a gourmet pasta dish that taste like it came from a fancy restaurant. It's loaded with lots of flavor and easy to make. If your chicken broth isn't low sodium, you might want to omit the olives, otherwise the dish will taste salty with the feta cheese, olives and chicken broth. I used fresh penne noodles that can be bought at the supermarket. It helps cut down on cooking time. I had never eaten artichokes before and was pleasantly surprised. The entire family loved this dish. I found the recipe in the Fine Cooking magazine.

10 ounces dried penne (about 3 cups)
coarse salt
8 slices bacon
1 small onion, thinly sliced
1 (9 ounce) package frozen quartered artichoke hearts, thawed,drained,and cut in half (I use a tin of artichoke 10 oz and drained it.)
1 cup low sodium chicken broth
1/2 cup pitted kalamata olive, chopped
1 roasted red pepper, chopped
4 ounces crumbled feta cheese (3/4 cup)
fresh ground black pepper
3 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Bring a large pot of water to a full boil and add the pasta and 1 tbs.
  • coarse salt.
  • Cook until just tender, about 10 minutes.
  • Drain and reserve While pasta is cooking, cook bacon until browned and crisp about 5 min.
  • and drain bacon on paper towel to help reduce the grease.
  • When cool, crumble into small pieces Add the sliced onion to the bacon drippings in the pan and cook over med heat stirring often until wilted, about 3 min.
  • Add the artichokes and cook, stirring occasionally, until the vegetables are tender and lightly browned on the edges, about another 4 min.
  • Pour in the broth.
  • Increase the heat to high and bring to a boil, scraping up all the browned bits in the pan.
  • Boil for 30 seconds to reduce the liquid slightly.
  • Reduce the heat to med.
  • and add the drained pasta, olives, and red pepper.
  • Toss until well blended and warmed.
  • Remove the pan from the heat.
  • Add the feta and salt and pepper to taste and stir a couple of times.
  • Cover and set aside, stirring occasionally, until the cheese melts a bit but not completely and the pasta is coated in creamy, clingy sauce, about 2 min.
  • Taste and adjust the seasonings.
  • Serve immediately with crumble bacon and chopped parsley.

1 (10 ounce) package frozen artichokes
1 1/4 cups water
2 teaspoons lemon juice
5 cloves garlic, minced
2 teaspoons olive oil, divided
2 ounces sun-dried tomatoes (drained or reconstituted)
2 small dried hot red peppers, , or red pepper flakes (, or red pepper flakes)
2 teaspoons chopped fresh parsley
1/4 teaspoon salt
1/4 teaspoon pepper
3/4 cup fresh breadcrumb
1 teaspoon chopped garlic
12 ounces penne pasta, cooked and drained
grated romano cheese

Steps:

  • Cook artichokes with water and lemon juice until tender.
  • Cool artichokes, cut into quarters, reserve liquid.
  • In large skillet, cook 4 T.
  • (reserving 1 T.) minced garlic in 1 1/2 T.
  • oil over medium high heat until golden.
  • Reduce heat to low.
  • Add artichokes and tomatoes, simmer one minute.
  • Add artichoke liquid, red peppers, parsley, salt and pepper.
  • Simmer 5 minutes.
  • Cook and stir bread crumbs and reserved 1 T.
  • garlic in remaining 1/2 T.
  • oil.
  • Pour artichoke sauce over penne in large bowl, toss gently to coat.
  • Sprinkle with bread crumb mixture and romano cheese.

8 ounces fresh spinach, washed
1 lb penne, cooked al dente
1 onion, thinly sliced
2 cloves garlic, minced
3/4 teaspoon oregano
salt and pepper
3/8 cup dry white wine
3 tablespoons lemon juice
3/4 cup low-fat ricotta cheese
1 tablespoon lemon, zest of, grated

Steps:

  • Slice about 2/3 of artichokes into small wedges; chop remainder into paste. Set aside. While pasta is cooking, saute onion and garlic in water until soft. Add oregano, salt and fresh-ground pepper.
  • Reduce heat to low and stir in wine, lemon juice, spinach leaves (if desired) and reserved artichokes.
  • Simmer, stirring, until spinach is wilted and all is heated through (1-3 minutes). Stir in ricotta.
  • Drain pasta and add to sauce; remove from heat and add lemon zest just before serving.
