Categories     main-dish

Yield 4 servings

Number Of Ingredients 28

12 Cornmeal Crepes, recipe follows
2 cups diced cooked lobster or shrimp (about 2 pound lobsters or 1 pound shrimp)
2 cups Manchego cheese grated
1/2 cup toasted pine nuts
1 bunch cilantro, chopped
2 cups Poblano Chile Cream, recipe follows
1 lime, quartered
2 Serrano chiles, stemmed and seeded and chopped
1/2 bunch cilantro, chopped
4 eggs
1/2 cup water
1 cup milk
2 teaspoons coarse salt
1/2 teaspoon baking powder
1 cup cornmeal
1 cup flour
1 tablespoon sugar
2 tablespoons vegetable oil
2 tomatillos, husks removed and quartered
1 bunch cilantro, stems included
3 Poblano chiles, roasted, peeled, and seeded
3 ounces sour cream
1/2 cup chicken stock
2 tablespoons vegetable oil
Juice of 1 lime
1 garlic clove
1 teaspoon coarse salt
Freshly ground black pepper

Steps:

  • Make the Cornmeal Crepes and the Poblano Chile Cream.
  • Preheat the oven to 350 degrees.
  • In an ovenproof baking dish large enough to hold 4 crepes, side by side without touching, place the first 4 crepes. Top each crepe with 1/4 cup of the cooked lobster. Top the lobster with 1/4 cup of the grated cheese. Sprinkle the cheese with 1 teaspoon of the pine nuts and 1 teaspoon of the cilantro. Repeat layering 4 crepes, 1/4 cup lobster, 1/4 cup cheese, 1 teaspoon pine nuts, and 1 teaspoon cilantro and finally top with the last 4 crepes. You should have 4 stacks.
  • Pour the Poblano Chile Cream over all the stacks.
  • Bake for about 15 minutes. Transfer each stack to a plate, and serve immediately, garnished with lime.
  • In a blender, place the chiles and cilantro. Add the eggs, water, milk, salt, baking powder, cornmeal, flour, sugar, and oil. Blend until very smooth. Let the batter rest at room temperature 30 minutes to 1 hour.
  • Heat an 8 to 9-inch, well-seasoned crepe pan or small skillet over a medium heat. Coat with a little vegetable oil. When the pan is hot, pour in about 2 to 3 ounces of the crepe batter. Tilt the pan, rotating so the batter is evenly distributed. Cook until the crepe appears dry, then turn and cook on the other side. Repeat until all the batter is used. Store the crepes between sheets of wax paper until ready to use.
  • In a blender, place the tomatillos and cilantro. Blend until chopped. Add the chiles, sour cream, chicken stock, oil, lime juice, garlic, and salt. Blend until smooth.
  • Store refrigerated until ready to use.

Yield 8 servings

Number Of Ingredients 17

5 cups all-purpose flour
2 teaspoons salt
1 teaspoon baking powder
2 cups shortening
1 egg
1 teaspoon vinegar
Cold water to make 1 cup liquid
Filling
1 1/2 cups sugar, divided
4 tablespoons cornstarch
2 cans (14.5 ounces each) pitted tart red cherries, packed in water, drained and 3/4 cup liquid reserved
1 tablespoon butter
1/2 teaspoon almond extract
1/4 teaspoon red food coloring
2 tablespoons milk
2 tablespoons sugar
1/4 cup sliced almonds

Steps:

  • Crust:
  • In large bowl, stir together flour, salt and baking powder. Cut in shortening. Break egg into a liquid measuring cup. Add vinegar and enough water to make 1 cup. Beat with fork to mix. Add liquid to dry ingredients, stirring lightly with fork until moistened. Divide into 5 equal parts. Shape into flat 6-inch disks and wrap in plastic. Refrigerate 2 disks; freeze the rest. After 30 minutes, roll 1 refrigerated disk into a 10-inch round. Fit into 9-inch pie plate. Leave dough over edge of plate (do not trim off excess).

Trim strips even with bottom crust. Moisten strips with water, fold under with bottom crust and pinch rim to make fluted edge. Brush strips with sugar almond topping.
  • Bake until crust is golden brown, about 30 to 45 minutes.

BERRY ALMOND MORNING BUNS RECIPE BY TASTY

Berry Almond Morning Buns Recipe by Tasty image

Breakfast doesn't get any better than this! These berry almond morning buns are filled with a homemade mixed berry compote and creamy almond paste. We top them off with cream cheese icing, more fresh berries, and sliced almonds. Pro-tip: Toast the almonds before making the almond paste for a deeper nutty flavor.

Time 3h5m

Yield 9 buns

Number Of Ingredients 26

2 cups fresh berries, such as blueberries and raspberries
1 teaspoon water
2 tablespoons granulated sugar
1 teaspoon vanilla extract
1 cup almond, sliced
1 tablespoon all purpose flour
⅓ cup brown sugar
¼ teaspoon kosher salt
1 stick unsalted butter, cubed
1 large egg
1 teaspoon vanilla extract
1 cup warm milk
2 ½ teaspoons instant yeast
2 large eggs, room temperature
⅓ cup salted butter, barely melted and slightly cooled
1 teaspoon kosher salt
½ cup brown sugar
4 cups all purpose flour, plus more as needed
nonstick cooking spray, for greasing
½ cup heavy cream
6 oz cream cheese, softened
3 tablespoons unsalted butter, softened
1 ½ cups powdered sugar
1 teaspoon vanilla extract
½ cup almond, sliced
½ cup fresh berries

Steps:

  • Make the berry compote: Add the berries and water to a small saucepan over medium heat. Once bubbling, reduce the heat to medium-low and use a wooden spoon to muddle and mash the fruit. Continue cooking for 10-12 minutes, occasionally stirring and mashing the berries, until most of the liquid has evaporated. Remove the pot from the heat and stir in the sugar and vanilla. Transfer the compote to a heat-proof container and let cool completely, then refrigerate for at least 1 hour.
  • Make the almond paste: Preheat the oven to 400°F (200°C).
  • Spread the sliced almonds in an even layer on a rimmed baking sheet. Toast for about 5 minutes, or until the almonds just begin to turn golden brown.
  • In a food processor, combine the toasted almonds, flour, brown sugar, and salt. Pulse until the almonds break down to medium crumbs. Add the butter and process until a smooth paste forms. Add the egg and vanilla and continue to process until the egg is fully incorporated. Transfer the almond paste to a small bowl and refrigerate for at least 30 minutes, or up to 1 week.
  • Make the dough: Add the warm milk to the bowl of a stand mixer fitted with the paddle attachment and sprinkle the yeast on top. Let sit for about 3 minutes, until the mixture is frothy.
  • Add the eggs, melted butter, salt, and brown sugar and mix on medium-low speed to combine. Add the flour and mix on low speed until combined. Turn off the mixer and let the dough rest for 5 minutes.
  • After resting, scrape the dough off the paddle attachment and attach the dough hook to the mixer. Mix on medium speed for 3 minutes, adding up to ½ cup more flour if needed to form a smooth and elastic dough. The dough should not be sticky, but may still stick to the sides of the bowl slightly.
  • Grease a large bowl with nonstick spray. Transfer the dough to the bowl and cover with a clean kitchen towel. Let rise at room temperature for about 1 hour, or until doubled in size.
  • Turn out the dough onto a generously floured surface and flour a rolling pin. Roll the dough out to a roughly 18 × 14-inch rectangle. Spread the almond paste over the dough, all the way to the edges. Top with the berry compote, spreading evenly. Starting from a long end, roll the dough up tightly. Transfer the roll to the refrigerator for 30 minutes (this will make cutting easier).
  • Use a serrated knife to cut the dough roll into even 9 pieces, then transfer to an 8-inch square baking dish. Cover the pan with a kitchen towel and let the rolls rise for about 30 minutes, or until expanded slightly.
  • Preheat the oven to 375°F (190°C).
  • Add the heavy cream to a microwave-safe bowl and microwave for about 30 seconds, until warm, but not scalding.
  • Once the rolls have risen, pour the heavy cream over the top of the rolls, allowing it to soak into and around the rolls.
  • Bake the rolls for 20-22 minutes, until light golden brown and the center rolls are cooked through. Remove from the oven and let cool slightly.
  • While the rolls are baking, make the frosting: Add the butter and cream cheese to a medium bowl. Cream with an electric hand mixer on medium speed until light and airy. Add the powdered sugar and mix on low speed to combine. Add the vanilla and mix on medium-high speed for 1-2 minutes, until the frosting is fluffy.
  • Spread the frosting over the rolls, then top with sliced almonds and more berries.
  • Enjoy!
