Yield Makes 4 to 6 servings

Number Of Ingredients 9

1 lb peeled butternut squash pieces
1 small onion, quartered
1/2 stick (1/4 cup) unsalted butter
1 tablespoon finely chopped fresh sage
1 1/2 cups water
3/4 teaspoon salt
1/2 teaspoon black pepper
2 oz finely grated Parmigiano-Reggiano (1 cup) plus additional for serving
1 lb penne rigate

Steps:

  • Process squash and onion in a food processor until finely chopped, about 1 minute.
  • Heat butter in a 5- to 6-quart heavy pot over moderately high heat until foam subsides, then add sage and cook until fragrant, about 15 seconds. Add chopped squash mixture, water, salt, and pepper and simmer, uncovered, stirring occasionally, until water is evaporated and squash is very tender, 8 to 10 minutes. Stir in Parmigiano-Reggiano and remove squash mixture from heat.
  • While squash mixture simmers, cook penne in a 6- to 8-quart pot of boiling salted water until al dente. Reserve 1 cup pasta cooking water, then drain pasta in a colander. Add 1/2 cup cooking water to squash mixture, then add drained pasta, tossing to combine.
  • Thin sauce with additional cooking water as desired and serve pasta with additional cheese on the side.

PENNE WITH A SAGE CREAM SAUCE

Penne With a Sage Cream Sauce image

I got this recipe from the "Shut up and Mangia" website. The author writes: "This recipe is my absolute favorite. I apologize, but I love cream sauce recipes. I know I'm getting up there and should slow down a bit but I can't seem to help myself especially when it comes to this recipe. Enjoy!" Feel free to add sautéed shrimp, chicken or broccoli to this sauce.Serves 4 people.

PENNE WITH BUTTER, SAGE, AND PARMESAN

Penne With Butter, Sage, and Parmesan image

This simple recipe makes a great accompaniment to grilled chicken. The quality of Parmesan really matters here; avoid the stuff in the green container for this preparation!

Provided by D. Todd Miller

Categories     Penne

Time 35m

Yield 4-6 serving(s)

Number Of Ingredients 7

16 ounces penne pasta
1 tablespoon butter
1 tablespoon extra virgin olive oil (I use inexpensive olive oil from Spain)
30 fresh sage leaves
1 cup parmigiano-reggiano cheese, freshly grated
fresh ground pepper, to taste
salt, to taste

Steps:

  • Bring a large pot of water to a boil, and salt it. Cook the pasta until it is tender but just short of the point at which you want to eat it.
  • Meanwhile, place butter and olive oil in a saucepan large enough to hold the cooked pasta; turn the heat to medium and add the sage. Cook until the butter and oil begin to brown and the sage shrivels.Turn heat down to low.
  • When pasta is almost done, scoop out a cupful of the cooking water and set aside. Drain the pasta, immediately add it to the sage mixture, and raise the heat to medium.
  • Add 1/2 cup of the reserved water, and stir. Cook about 30 seconds or until some of the water is absorbed and the pasta is perfectly done.
  • Stir in the cheese until the sauce becomes creamy. Thin it with a little water if necessary.
  • Season liberally with pepper, and salt to taste.

PENNE WITH SAUSAGE IN CREAMY TOMATO SAUCE

Penne With Sausage in Creamy Tomato Sauce image

This is an easy recipe with tons of flavor, rigatoni pasta can be used in place of penne. If you are using spicy sausages then omit the chili flakes. Try to use only high-quality canned tomato products, it will really make a huge difference in your sauce, no no-name brands for this! With this sauce (and any tomato-based sauce) it needs some time to cook, the longer you cook the sauce uncovered the thicker and richer it will be, you can even start it in the morning turn it off then continue cooking later, cook for even 2 hours!

PENNE WITH CREAMY PUMPKIN SAUCE

Penne with Creamy Pumpkin Sauce image

Canned pumpkin puree isn't only good for pie; here, it becomes a creamy sauce for penne, topped with deliciously crunchy fried rosemary.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Pasta and Grains

Time 30m

Number Of Ingredients 10

12 ounces penne rigate (ridged), or other short pasta
Coarse salt
2 tablespoons olive oil
1 tablespoon fresh rosemary
1 can (15 ounces) pure pumpkin puree
1 garlic clove, minced
1/2 cup half-and-half
1/3 cup grated Parmesan
1 tablespoon white-wine vinegar
1/4 teaspoon red-pepper flakes, plus more for garnish (optional)

Steps:

  • Cook pasta in a large pot of boiling salted water until al dente. Reserve 2 cups pasta water; drain pasta and set aside.
  • In pasta pot, heat oil over medium. Add rosemary and fry, stirring, until starting to brown, 1 to 2 minutes. Using a slotted spoon, transfer rosemaryto a paper towel, leaving oil in pot.
  • Carefully (oil is hot and will spatter) add pumpkin puree, garlic, half-and-half, Parmesan, vinegar, red-pepper flakes, and 1 cup reserved pasta water to pot. Stir sauce until heated through, 2 to 3 minutes.
  • Add pasta to sauce, and toss to coat. If sauce is too thick, add some reserved pasta water. Season generously with salt. Serve pasta sprinkled with fried rosemary and, if desired, more red-pepper flakes.
