Peking Pork Chops - The tenderness and juiciness of the pork coupled with the sweet, tart and smoky taste of the sauce makes this a perfect dish to serve with steamed rice.

1 lb. (0.4 kg) pork tenderloin or pork spare ribs, cut into 1/2-inch thick slices
oil for deep frying
1 teaspoon toasted sesame seeds, optional
1 egg
1 tablespoon cornstarch
1/2 teaspoon Shaoxing wine
1/2 teaspoon salt
1 1/2 tablespoons tomato ketchup
1/2 tablespoon plum sauce
1/2 tablespoon chili sauce
1/4 teaspoon sweet bean sauce or hoisin sauce
1 tablespoon Worcestershire Sauce
1 1/2 tablespoons black vinegar
1 1/2 tablespoons sugar
1 pinch Chinese five-spice powder, optional
2 tablespoons water

Steps:

  • Pound pork slices with mallet, or with the back of a kitchen knife until tender. Set aside. In a bowl, mix the Marinade ingredients, add in pork slices, mix well, and marinade for 30 minutes.
  • In a separate bowl, mix the Sauce ingredients. You may add more or less sugar, or other sauce ingredients to your own liking. Set sauce mixture aside.
  • Heat up a wok with enough oil, deep-fry pork slices for 5 minutes, or until color changes to golden brown and slightly crispy. Dish up, drain with paper towels and set aside.
  • Bring sauce to a quick boil, add deep-fried pork, and stir until all the meat is well coated with sauce. Dish up and sprinkle the pork chops with some toasted sesame seeds. Serve over a bowl of hot steamed rice.

Since I handed off so much food, she froze these chops and reheated them for dinner the other day. I love it that these pork chops not only tasted good, they withstood being slow-cooked, frozen, and reheated. And I'm thrilled that I was able to contribute to a freezer-stash, yay!

6 pork chops
1/4 cup brown sugar
1 teaspoon ginger
1 teaspoon five-spice powder
1/2 cup soy sauce
1/4 cup ketchup
4 garlic cloves, chopped

Steps:

  • Put chops into the stoneware. In a small bowl, combine sugar, spices, soy sauce, ketchup, and garlic. Pour evenly over the top of chops. No need to add any other liquid. If you had an onion in the house, it might be a nice addition, but not necessary for flavor.
  • Cover and cook on low for 6-8 hours, or on high for about 4. If your chops are frozen they will take longer to cook. The longer you cook the meat, the more tender it will, but it might fall off the bone.

1/2 red bell pepper, cut in 1/4-inch strips
1/2 green bell pepper, cut in 1/4-inch strips
1/2 onion, cut in 1/4-inch wedges
4 pork chops, 1-inch thick
1 teaspoon grated fresh ginger
1/4 cup soy sauce
2 tablespoons hoisin sauce
1/4 cup brown sugar
1/4 cup ketchup
1 garlic clove, minced fine
salt, to taste
fresh ground black pepper, to taste
1 (8 ounce) can pineapple chunks, drained (packed in juice)

Steps:

  • Place red pepper, green pepper and onion in bottom of a crock pot. Place pork chops on top.
  • Mix together ginger, soy sauce, hoisin sauce, brown sugar, ketchup, garlic, salt and pepper. Pour over pork chops.
  • Cook on low 4-6 hours.
  • Add pineapple chunks and cook 1 hour longer. Serve over cooked white rice.

6 boneless pork loin steaks, 1 inch thick cut
1/4 cup brown sugar
1 teaspoon ground ginger or 2 teaspoons freshly grated ginger
1/2 cup soy sauce or 1/2 cup teriyaki sauce
1/4 cup ketchup
1 clove garlic, crushed
salt and pepper, to taste

Steps:

  • Trim excess fat from pork chops and place in slow cooker.
  • Mix brown sugar, ginger, soy sauce, ketchup, garlic, salt and pepper in small bowl and pour over meat.
  • Cover, turn to low and cook 4 to 6 hours, or until tender.
  • Do not overcook.
  • Season with salt and pepper, if needed.
  • Serve with steamed Jasmine or Basmati rice and/or Chinese.
  • This also works well with chicken.

  • In a large mixing bowl, whisk together the marinade ingredients. Add the pounded pork pieces and toss to completely coat. Cover and marinade for 30 minutes.
  • In the mean time, prepare the sauce by whisking together all of the sauce ingredients in a bowl. Set aside.
  • Using a large skillet, add a little bit of the vegetable oil and fry the pork pieces in small batches in a single layer. Over medium heat, fry each piece for 3 minutes per side. Transfer cooked pork to a paper towel lined plate until all of the pork has been fried. (You can add a little bit of oil after each batch - you may or may not use up the entire 1/4 cup.)

  • Marinate the pork chops in a mixture of shaoxing wine, soy sauce, and five spice powder (if using). Set aside for at least an hour or overnight. Make the sauce by combining ketchup, Worcestershire sauce, vinegar, hoisin, maple syrup, sesame oil, and 1/2 cup water. Set aside.
  • When you're ready to cook, fill a medium deep pot about halfway with oil. Heat the oil to 375 degrees. In a separate bowl, combine 3 tablespoons ice water, 2 tablespoons flour, 1/2 teaspoon baking soda, and 1 tablespoon cornstarch. Pour over the marinated pork chops and mix until coated.
  • Carefully drop a few pork chops at a time into the heated oil and fry in batches for about 3 minutes each batch. Drain on paper towels. Refry the pork chops again for another 1 to 2 minutes just before making the sauce if you like your pork chops crispy. Double frying keeps the pork chops crispy longer after adding them to the sauce.
  • Add a tablespoon of oil to your wok (you can take some from the frying oil), placed over medium heat. Swirl the oil around so it coats the wok. Pour in your sauce mixture and bring it to a simmer.
