CHOCOLATE OIL CAKE

Steps:

• Preheat oven to 350 degrees F (175 degrees C).
• In a large bowl, mix sugar, flour, baking soda, salt and cocoa.
• Add water, vegetable oil, vinegar, and vanilla. Beat by hand until smooth.
• Pour into a 9x13 inch pan. Bake at 350 degrees F (175 degrees C) for 40 minutes, or until toothpick inserted into center of cake comes out clean.

EGGLESS CHOCOLATE CAKE

Steps:

• Coat a 10-in. fluted tube pan with cooking spray and dust with 1 tablespoon cocoa; set aside. In a large bowl, combine the flour, sugar, baking soda, salt, cinnamon and remaining cocoa. In another bowl, combine the coffee, oil, vinegar and vanilla. Stir into dry ingredients just until combined. Pour into prepared pan., Bake at 350° for 40-50 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. In a microwave or heavy saucepan, melt chocolate chips and shortening; stir until smooth. Drizzle over cake.

PEGGY'S CHOCOLATE OIL CAKE

Steps:

• Mix 1 cocoa with water then throw it all in one big mixing bowl and mix about 3 minutes. It makes a big cake, either 3 8" layers or 1 10 x 12 pan. If you try to bake it in a 9 x 12 it will run over. You can take a half cup dough out before you bake it if you can't find a 10 x 12. I bake it in my broiler pan. Bake at 350 for almost an hour. Start checking with a toothpick after about 50 minutes. Happy Baking
