1/2 cup olive oil
1/2 cup sliced almonds
1/3 cup cotija cheese
1/4 cup chopped red onion
3 tablespoons lime juice ((about 1 1/2 limes))
1 clove garlic
1 teaspoon coarse kosher salt
1/4 teaspoon ground black pepper

Steps:

  • Add all ingredients to a food processor or blender and pulse until mostly smooth.

I prefer the taste of pecans over the pine nuts usually called for in pesto recipes. I developed this recipe over a summer of trial and error and prefer it to all other pesto recipes!

3 cups fresh basil leaves
1 ½ cups pecans
4 cloves garlic
½ cup shredded Parmesan cheese
¾ cup olive oil
½ teaspoon kosher salt
1 pinch ground black pepper to taste

Steps:

  • Blend the basil, pecans, garlic, Parmesan cheese, olive oil, salt, and pepper together in a food processor until the mixture becomes a slightly chunky paste.

This is a delicious version of the classic with a little more zip! You can substitute the vinegar with lime juice, lemon juice or Italian salad dressing.

1 (16 ounce) package farfalle pasta
1 bunch fresh cilantro
5 cloves garlic, minced
1 tablespoon white wine vinegar
¼ cup grated Parmesan cheese
½ teaspoon cayenne pepper
½ cup walnuts or pecans
salt to taste
½ cup olive oil

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta, and return water to a boil. Cook pasta for 8 to 10 minutes, or until al dente; drain well.
  • In an electric food processor or blender, blend cilantro, garlic, vinegar, Parmesan cheese, cayenne pepper, nuts, and salt. Add 1/4 cup of the olive oil, and blend the pesto. Add more olive oil until the pesto reaches your desired consistency.
  • Pour pesto in a small saucepan and warm over low heat, stirring constantly, until pesto begins to simmer. Pour over cooked pasta and toss.

There's a ton of recipes out there similar to this one, and I've tried many of them. This is my own adaptation using a combination of cilantro and parsley. Toasting the pine nuts is crucial for enhanced flavor. Make a day ahead to let the flavors intensify. This is an amazing condiment to grilled fish, seafood and chicken. It's also great as a sauce mixed in pasta.

1 1/2 cups fresh cilantro or 10 fresh cilantro stems
1 1/2 cups fresh parsley or 10 parsley sprigs
4 garlic cloves
1/2 cup pine nuts, toasted
1/2 cup parmesan cheese, grated
1 tablespoon lemon juice
1 teaspoon salt (or to taste)
1/2 teaspoon red pepper flakes (optional)
1/4-1/3 cup extra virgin olive oil
1 -2 tablespoon water (optional)

Steps:

  • Place first 8 ingredients in a food processor.
  • With processor running, slowly add olive oil.
  • Add water if mixture is not smooth. Should have peanut butter-type consistency.
  • Serve at room temperature.

1/2 cup almonds
3 large garlic cloves
1/4 cup grated parmesan cheese
1/4 cup olive oil
1/2 teaspoon salt

Steps:

  • Combine the cilantro, garlic and almonds in a blender or food processor and puree until smooth. Add the parmesan, oil and salt and puree to a smooth paste. Stir into hot pasta and serve.

  • MAKE THE PESTO: Prepare an ice bath by filling a large bowl with ice water; set aside. Bring a medium pot of water to a boil. Add the cilantro and cook just until bright green, 1 minute. Transfer to the ice bath to stop the cooking and drain. Squeeze out as much excess moisture as possible with your hands or in a clean kitchen towel. Coarsely chop the cilantro and put it in a food processor. Add the nuts, cheese, lemon zest, and garlic. Pulse until a coarse purée forms (it should be fairly chunky). Drizzle in the olive oil and pulse until it’s the desired consistency. Set aside.
  • Heat the broiler. Put the cauliflower florets on a baking sheet and toss with the olive oil. Season with the salt, a few grinds of black pepper, and the thyme, if using. Broil until the cauliflower is just tender and the edges are well browned, about 10 minutes, tossing once halfway through cooking.
  • Remove the cauliflower from the oven and toss with about 1/2 cup of the cilantro-pecan pesto. (Reserve any extra pesto for another use; store, covered, in the refrigerator for up to 2 days.) Transfer the cau¬liflower to a serving plate. Sprinkle with the cotija and then the lime juice, and serve immediately.
