SPINACH, PECAN AND CHEDDAR PESTO



Spinach, Pecan and Cheddar Pesto image

Mix up a new version of pesto with aged Cheddar, spinach and thyme.

Number Of Ingredients 7

1/3 cup lightly toasted pecans
3 cups loosely packed spinach
1 teaspoon chopped garlic
1/2 teaspoon chopped fresh thyme
Kosher salt
1/2 cup coarsely grated aged Cheddar
1/2 cup vegetable oil

Steps:

  • Put the pecans in a food processor and pulse until finely ground. Add the spinach, garlic, thyme and 1/4 teaspoon salt and pulse until finely chopped. Add the Cheddar and pulse to combine. With the motor running, slowly stream in the vegetable oil and process until combined. Transfer to a bowl.

CHEDDAR PECAN STUFFED MUSHROOMS



Cheddar Pecan Stuffed Mushrooms image

In my husband's family, we have a tradition of making a variety of appetizers as our meal for Christmas Eve. My sister-in-law brought these one year and they have been one of our favorites ever since. I don't generally use the large stuffing mushrooms, though you can if you're serving this as a first or second course in a formal dinner. Instead I use regular button mushrooms so 15 or so people can have two or three each.

1 pound fresh button mushrooms
½ cup butter
1 cup finely chopped green onion
3 cloves garlic, minced
1 ½ cups soft bread crumbs
1 cup shredded Cheddar cheese
½ cup finely chopped pecans
½ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Remove and finely chop stems from mushrooms.
  • Melt butter in a large skillet over low heat; brush mushroom caps with melted butter and place onto a baking sheet. Raise heat to medium; cook and stir chopped mushroom stems, green onion, and garlic in the butter remaining in the skillet for 3 minutes. Lightly stir bread crumbs, Cheddar cheese, pecans, salt, and black pepper into the mixture. Generously fill the mushroom caps with stuffing, piling it high.
  • Bake in the preheated oven until stuffing is hot, the cheese has melted, and mushrooms are cooked through, 20 to 30 minutes.

CHEDDAR PECAN ROUNDS

Number Of Ingredients 6

2 stick unsalted butter
16 oz freshly grated sharp cheddar cheese
1 Tbsp of creole seasoning salt
1 c chopped pecans
2 c flour
1 tsp baking powder

Steps:

  • 1. Melt butter and put into large bowl. Add seasoning and pecans and mix well. Add the 16oz of freshly shredded Cheddar Cheese to the butter mixture and mix well; add flour and baking powder together and gradually add to cheese mixture. You might have to use your hands to mix all together. Make 4 balls out of the mixture and roll each ball on wax paper making 4 rolls about the sized of a quarter. wrap in the wax paper and freeze. Defrost each roll as needed and cut into 1/8 inch and put on a cookie sheet with quick release foil lined pans. Bake at 350 for 12 minutes.
  • 2. This recipe makes alot of cheese rounds but the good part is that you can keep them in the freezer and take out as needed. Enjoy!

1 egg white
1 tablespoon water
1 pound pecans
¾ cup white sugar
1 teaspoon ground cinnamon
1 teaspoon salt

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • In a large bowl, beat egg white with water until frothy. Stir in pecans and mix to coat. Combine sugar, cinnamon and salt and stir into pecan mixture. Spread on a baking sheet.
  • Bake in preheated oven 1 hour, stirring every 15 minutes. Store in an airtight container.

HOMEMADE CHEDDAR AND PECAN CRISPS



Homemade Cheddar and Pecan Crisps image

1 pound extra-sharp cheddar, grated
1 cup plus 1 tablespoon butter
1 1/3 cups pecans
Kosher salt
2 cups all-purpose flour
1 1/4 teaspoons cayenne pepper
1/2 teaspoon black pepper

Steps:

  • Preheat the oven to 350°F.
  • Coarsely grate the cheddar cheese, and transfer it to the bowl of an electric mixer fitted with the paddle attachment. Cut the two sticks of butter into sixteen pieces, and scatter the pieces over the cheese. Let the cheese and butter soften. Place the pecans in one layer on a baking sheet, and toast them in the oven until they are a shade darker and fragrant, 7 to 8 minutes. While the nuts are still warm, transfer them to a medium bowl and toss with the remaining tablespoon of butter (the hot nuts will melt the butter) and salt to taste. Cool the nuts completely, then finely chop.
  • Add the chopped pecans, flour, a pinch of salt, cayenne, and black pepper to the bowl of the mixer, and beat the ingredients at medium speed until the mixture pulls together into a dough, about 2 minutes.
  • Divide the dough into eight pieces. On a sheet of waxed paper, roll each piece of the dough into a log 1 inch in diameter, and wrap the logs tightly in waxed paper and foil. Chill the logs for at least 8 hours and up to 1 week. The dough will keep frozen for 2 months.
  • Preheat the oven to 350°F.
  • Working with one log at a time, cut the log crosswise into 1/8-inch-thick slices, and arrange the slices 1/2 inch apart on parchment-lined baking sheets. Bake the crisps in batches until they are golden and just firm to the touch, 10 to 12 minutes. Cool the wafers on the baking sheet. Stored in an airtight container at room temperature, the wafers will keep for up to 4 days.

1 lb butter, softened
4 cups cheddar cheese, shredded
1 cup pecan pieces, toasted
1 teaspoon cayenne pepper
1 teaspoon salt
4 -4 1/2 cups all-purpose flour
10 ounces jalapeno jelly
1 cup sweetened dried cranberries, chopped

Steps:

  • In large bowl, mix butter, cheese, pecans, cayeene and salt. Gradually mix in flour. Result will be a stiff dough like shortbread. Form into logs 1-inch thick by 10 inches long. Wrap in wax paper and refrigrate until firm, at least 3 hours. (Refrigerate up to 5 days, frozen up to 6 months.).
  • Preheat oven to 350°F Remove dough from wax paper and slice into 1-inch pieces. Lightly press each piece in palm of hand; using thumb make a 1/4 inch indentation in center of each. Fill thumbprint with 1 teaspoon jelly and sprinkle with cranberries on top.
  • Place on nonstick cookie sheet, spacing 1 inch apart. Bake 15- 20 minutes or until firm and slightly browned at edges. For best flavor do no overcook. May be served warm at room temperature.
