PECAN CHERRY BARK

I just love to make chocolates at Christmastime. This popular candy combines pecans, chocolate and cherries. It's crunchy, sweet and just plain yummy. —Sue Kauffman, Columbia City, Indiana

Number Of Ingredients 10

1/4 cup butter, cubed
1/2 cup packed brown sugar
Dash ground nutmeg
Dash ground cinnamon
1-3/4 cups chopped pecans
1 pound dark chocolate candy coating, coarsely chopped
3 tablespoons shortening, divided
1 pound milk chocolate candy coating, coarsely chopped
1 pound white candy coating, coarsely chopped
1-3/4 cups dried cherries or cranberries

Steps:

  • In a large skillet, melt butter over medium heat. Stir in brown sugar and spices; bring to a boil. Cook and stir until sugar is completely dissolved, about 3 minutes. Stir in pecans until coated. Spread onto foil to cool. , Line two 15x10x1-in. pans with parchment or waxed paper. In a microwave, melt dark chocolate candy coating and 1 tablespoon shortening, stirring until smooth. Divide between prepared pans, spreading to desired thickness. Refrigerate just until set, but not firm., In microwave, melt milk chocolate candy coating and 1 tablespoon shortening, stirring to blend; spread over dark chocolate layer. Refrigerate until set, but not firm., Repeat with white candy coating and remaining 1 tablespoon shortening; spread over top. Sprinkle with cherries and candied pecans, pressing to adhere. Refrigerate until firm. Break into pieces.

12 sheets graham crackers
1 cup unsalted butter
1 cup brown sugar (, packed)
1/4 teaspoon salt
2 cups pecans (, chopped)
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees and line a baking sheet with foil sprayed with vegetable oil.
  • Line up the graham crackers tightly (break crackers in half to fill in any gaps too).
  • In a large saucepan add the butter, brown sugar and salt on medium heat.
  • Bring to a boil and stir constantly for 3 minutes.
  • Add in the pecans and cook for 30 seconds.
  • Stir in the vanilla extract.
  • Place the mixture over the graham crackers.
  • Bake for 10 minutes.
  • Let cool completely before breaking apart.

So good and it just can't get any easier to make. Make several batches because it disappears so fast!

Number Of Ingredients 6

2 3/4 stick butter
1 1/2 c white sugar
1 3/4 c pecan halves
1 1/2 tsp vanilla
2 pkg (12 sheets) honey graham crackers
1/2 c bourbon or amaretto (optional)

Steps:

  • 1. Preheat your oven to 325 degrees F. Lay your graham crackers tightly across the area of a lightly greased 9 x 13 rimmed baking tray. Trim any crackers to fit the sides of the pan if needed.
  • 2. In a large saucepan, bring the butter, sugar and pecans to a full rolling boil over medium high heat. Once you get to that stage continue to boil, stirring constantly for 3 minutes.
  • 3. Carefully (and evenly) pour boiled mixture over the entire plane of graham crackers, spreading pecans around evenly. Immediately pop graham crackers into the oven and bake for 8 minutes.
  • 4. Allow graham cracker bark to cool completely before breaking into pieces and storing airtight. As you break it some pieces will crumble - that's OK, those are the treats for the cook!
  • 5. Tip: For an extra added kick add 1/3 cup Bourbon or Amaretto to the mixture in the saucepan. I made a pan with 1/2 honey grahams and 1/2 cinnamon grahams. Next batch will be 1/2 honey and 1/2 chocolate graham crackers.

1 cup brown sugar, packed
1 cup pecans, chopped
24 graham cracker squares

Steps:

  • Preheat oven to 350 degrees.
  • Line a cookie sheet with foil and lightly grease.
  • Place graham crackers on the cookie sheet in one layer.
  • Sprinkle pecans evenly over the graham squares.
  • In a small sauce pan melt the unsalted butter.
  • Add brown sugar to the pan and stir until mixture begins to boil.
  • Pour sugar mixture over pecans and graham squares.
  • Bake in oven for 10 minutes.
  • Remove pan from oven and place into freezer for 1 hour.
  • Break bark into pieces while still cold.

1 1/2 sticks (3/4 cup) cold unsalted butter, cubed, plus more for dish
1 1/2 cups unbleached all-purpose flour
2/3 cup light brown sugar
1 teaspoon kosher salt
1 stick (1/2 cup) unsalted butter, softened
1 cup light brown sugar
Pinch salt
1/3 cup light corn syrup
1/4 cup unbleached all-purpose flour
3 cups coarsely chopped pecans

Steps:

  • Preheat oven to 350 degrees F.
  • Line a 13 by 9-inch baking dish with foil allowing an overhang about 2 inches off the sides. Butter the foil.
  • In a food processor, blend together flour, sugar, butter and salt until the mixture resembles coarse sand. Add 2 tablespoons cold water and mix until the dough just holds together. Press dough into bottom of buttered baking dish and bake in oven until golden in color, about 20 to 25 minutes.
  • Meanwhile, make the filling. In a stand mixer fitted with paddle attachment, add the butter, brown sugar and a pinch of salt and mix on medium speed until light and fluffy, about 3 minutes. Add the corn syrup, flour and pecans and mix until just combined. Spread the filling over the baked crust and bake until golden brown, about 30 to 35 minutes. Remove the dish from the oven and allow it to cool completely in the pan.
  • Remove from pan by pulling up the foil sides and putting it on a cutting board. Cut bars in desired size with a sharp knife and arrange them on a serving tray. Can be stored in an airtight container up to 2 days.

3 cups all-purpose flour
½ cup white sugar
½ teaspoon salt
1 cup margarine
4 eggs
1 ½ cups light corn syrup
1 ½ cups white sugar
3 tablespoons margarine, melted
1 ½ teaspoons vanilla extract
2 ½ cups chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 10x15 inch jellyroll pan.
  • In a large bowl, stir together the flour, 1/2 cup sugar, and salt. Cut in 1 cup of margarine until mixture resembles coarse crumbs. Sprinkle the mixture evenly over the prepared pan, and press in firmly.
  • Bake for 20 minutes in the preheated oven.
  • While the crust is baking, prepare the filling. In a large bowl mix together the eggs, corn syrup, 1 1/2 cups sugar, 3 tablespoons margarine, and vanilla until smooth. Stir in the chopped pecans. Spread the filling evenly over the crust as soon as it comes out of the oven.
  • Bake for 25 minutes in the preheated oven, or until set. Allow to cool completely on a wire rack before slicing into bars.
