Bread and Tomato Salad image

While "bread salad" may sound unusual, you'll find that this blend from Joan Gwynn of Watsonville, California is unusually good. A simple dressing jazzes up a medley of bread cubes, tomatoes, basil and red onion.

Number Of Ingredients 9

8 cups cubed Italian or French bread
3 cups chopped tomatoes
1 cup minced fresh basil
1/2 cup thinly sliced red onion
1/2 cup olive oil
2 tablespoons cider or red wine vinegar
1/2 teaspoon salt
1/2 teaspoon pepper
1 garlic clove, minced

Steps:

  • In a large bowl, combine the bread, tomatoes, basil and onion. In a small bowl, whisk together the remaining ingredients; drizzle over bread mixture. Cover and let stand for 30 minutes before serving.

- 1/2 loaf (about 8 oz) 2 day old italian bread, crusts removed, sliced and cut into 1 inch squares
- 3/4 lb. italian plum tomatoes, cut into 1/2 inch slices
- 1 small cucumber, peeled and thinly sliced
- 6 thin slices red onion, separated into rings
- 1/4 cup chopped fresh basil
- dressing:
- 1/4 cup olive oil
- 1/3 cup red wine vinegar
- 1/4 cup tomato juice
- 1/4 cup minced green onions
- salt and pepper to taste

Steps:

  • In large bowl, toss together salad ingredients. In glass jar with tight fitting lid, shake together dressing ingredients. About 1/2 hour before serving, pour dressing ingredients. About 1/2 hour before serving, pour dressing to taste over salad and toss until nicely mixed. Cover bowl and refrigerate until serving time. Serves 6 An Italian bread salad is more than a salad sprinkle with croutons. The bread is deeply flavored with olive oil and vinegar. The Italian bread should be stale but not so dry as to be brittle. You want a firm "spring" to it. Source: Renny Darling

  • Slice or tear the bread into large cubes (about 1-inch). Place them on a baking sheet and leave them out to harden overnight (if the bread is not old).
  • You could bake the bread in a 300 F oven until the crust is a little hardened but the inside is still soft. Made sure to move the bread around during the baking a couple of times.
  • Place the bread chunks into a small bowl. Add some lukewarm water on top of the bread chunks to let it soak in and soften the bread a little while you prep the vegetables and dressing. (It could take about 1/2 cup water).

  • Cut bread into relatively even, 1/2 inch pieces and place in bowl. Mix oil or butter with Italian seasoning and toss with bread cubes, distribute well. Toss on baking sheet and place in oven for 10-15 minutes until outside is crunchy and getting golden. A nice crunchy outside will prevent bread from getting too soggy. Remove from oven and let cool.
  • Prepare vinaigrette by mixing all ingredients in a small measuring cup. Pour over tomatoes, mixing in with the tomato liquid.
