An old-fashioned, easy side dish recipe that's ready in just 10 minutes!

1 (10 ounce) package frozen peas, thawed or about 2 cups canned peas, drained
1 tablespoon butter
1 tablespoon all-purpose flour
¼ teaspoon kosher salt
⅛ teaspoon ground black pepper
½ cup whole milk, half-and-half, or heavy cream

Steps:

  • Cook peas according to package instructions. Drain and transfer to a bowl.
  • Meanwhile, in a saucepan or small skillet, melt butter over low heat. Whisk in flour, salt, and pepper until blended. Cook, whisking constantly, for 1 minute.
  • Gradually add cream, stirring for 1-2 minutes (or until thickened).
  • Stir in the peas; gently toss to coat in the cream sauce.

Old-Fashioned Creamed Peas image

Old-Fashioned Creamed Peas uses frozen peas that is jazzed up with a white sauce made of butter, half and half and flour.

Number Of Ingredients 6

16 oz. frozen green peas
2 Tablespoons butter
2 Tablespoons flour
1 cup half and half
1/2 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • Cook peas according to package instructions. I prefer this method. In a small saucepan, boil a small amount of salted water (approximately 4 cups). Pour the boiling water over the frozen peas just until they are covered. You may not need all the water. Let sit for 3 to 5 minutes or until cooked.
  • In a medium saucepan, melt butter. Add flour and stir until smooth. Let cook for additional 30 seconds to remove raw flour taste.
  • Over medium heat, slowly add in half and half to the butter/flour mixture while constantly whisking. Bring to a boil while constantly whisking, and let boil for approximately three minutes until it thickens.
  • Add salt and pepper to the sauce.
  • Drain the peas, and add to the white sauce; stir. Cover with a lid and cook until the peas are hot and the sauce is creamy, approximately 2 to 3 minutes.
  • Taste, add more salt and pepper if needed.

2 packages (10 ounces each) frozen peas, thawed

Steps:

  • In a large saucepan, melt butter over low heat. Stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Add the cheese; stir until melted. Stir in peas; cook 1-2 minutes longer or until heated through.

4 tablespoons unsalted butter
3 tablespoons all purpose flour
¼ teaspoon garlic powder (optional)
2 cups whole milk (or half and half)
1 teaspoon salt
½ teaspoon white pepper (or black pepper)
4 cups frozen peas
¼ cup heavy cream (optional)

Steps:

  • Melt butter over medium high heat in a medium sized saucepan.
  • Whisk the flour and garlic powder (if using) into the butter until incorporated and smooth.
  • Slowly whisk in the milk and cook, stirring frequently, over medium high heat until the mixture has thickened, about 6 minutes. Season with salt and pepper.
  • Add the peas and cook, stirring frequently, until the peas are heated through, about 4 minutes.
  • Stir in heavy cream and check for seasonings.
  • Garnish with additional pepper, butter, fresh chopped chives or dill. Serve and enjoy!

3 tablespoons butter
3 cloves garlic, finely chopped
3 shallots, finely chopped
1 cup heavy cream
1/4 teaspoon ground nutmeg
16 ounce package frozen peas, thawed
1/3 cup grated Parmesan
1/3 cup shredded white Cheddar
Freshly ground black pepper
2 tablespoons grated Pecorino-Romano
Salt

Steps:

  • Heat butter in a saucepan and saute garlic and shallots in a saucepan until translucent. Reduce heat to low and add cream and nutmeg. Allow to reduce by about 1/3. Remove from heat and stir in peas, Parmesan and Cheddar, and cook until cheese is incorporated. Season with pepper and sprinkle with Romano cheese. Cheese will be salty so add salt only if needed after all cheeses are added.

12 ounces farfalle pasta
1 package (10 ounces) frozen green peas
3/4 cup heavy cream
1/3 cup canned reduced-sodium chicken broth
1/2 cup grated Parmesan cheese
2 tablespoons pine nuts
1 bunch (5 ounces) arugula, tough stems removed, chopped

Steps:

  • For the kids (serves 2): In a large pot of boiling salted water, cook pasta until al dente, according to package instructions; add peas 1 minute before end of cooking. Drain; return pasta and peas to pot.
  • Meanwhile, in a large skillet, combine cream and chicken broth; simmer until thickened slightly, 7 minutes. Stir in Parmesan until melted.
  • Add sauce to pasta and peas; toss to combine. Season with salt. Divide half the pasta among serving bowls; reserve remaining in pot for the adults.
  • For the adults (serves 2): Toast pine nuts in a skillet over medium heat, shaking frequently, until golden, 1 to 2 minutes. Add to reserved pasta along with arugula; season with pepper. Toss to combine, and serve immediately.
