1 Tbsp olive oil, plus more for drizzling
1 small onion, diced
1 lb (450 grams) peas, fresh or frozen
2 cups vegetable broth or hot water
½ lb (220 grams) short shaped pasta
salt & pepper to taste
½ cup freshly grated parmesan, plus more to serve

Steps:

  • Warm the olive oil in a large pot over medium heat. Add the diced onion and cook until the onion has softened and is turning translucent, about 5 minutes.
  • Add the peas and cook stirring frequently about 1 minute.
  • Then add vegetable broth (or water), raise the heat, bring to a boil and stir in pasta and salt (I use 1 tsp of salt and then I adjust the seasoning at the end). You might need to add or to reduce the amount of water according to the type of pasta.
  • Cover with a lid, reduce the heat and cook your pasta in the starchy water. During the cooking time, you need to stir often until the water is absorbed, otherwise, it will stick to the bottom. The water should barely cover the pasta, but it's fine, add extra water gradually only if needed.
  • Cook until ready but firm to the bite. Turn off the heat and stir in freshly grated parmesan cheese until melted. Taste and adjust the seasoning.
  • Serve immediately with a drizzle of olive oil, black pepper, and extra parmesan cheese if you like. Enjoy!

1/2 lb (220 grams Short shaped pasta (shells, elbows, ditaloni...)
1/2 cup (50 grams) grated parmesan cheese, plus more to serve
2 cups (500 ml) vegetable broth or water, plus more if needed

Steps:

This simple pasta dish is very cheap to make, Just a few ingredients and a good olive oil turn this into a meal to relish. I cook the bones from a chicken carcass to make a stock, chicken stock cubes work well if you don't want to make your own stock. Pasta shells are prefered in this dish as they catch the chick peas and the final result is like having a shell with an oyster inside. Kids seem to go for this version of pasta that I cooked many times while in Italy. Serve topped with Parmesan cheese and drizzled with olive oil.

1 skinless chicken breast, and cut into 1-inch cubes
1 liter chicken stock
14 ounces chickpeas, precooked
2 garlic cloves, chopped
1 teaspoon dried herbs
pasta (your choice)
parmesan cheese
olive oil

Steps:

  • Put the stock in a pot with the chickpeas, garlic, herbs and chicken pieces.
  • Bring liquid to the boil, add pasta.
  • Cook till pasta is done.
  • Serve with grated parmesan cheese and drizzle with good olive oil.

CHICKEN ALA' KING ON PUFF PASTRY SHELL

Truly fit for a King or Queen when served over a puff pastry shell. I devised this recipe years ago when entertaining the girls from the office. Any leftover mildly seasoned chicken can be used for this recipe. I would suggest baking with the skin on for a fuller flavor or use rotisserie chicken. Cook time does not include time for baking puff pastry. Serve with a side fresh fruit, berries or melon slices. Enjoy!

2 -3 scallions, trimmed, sliced with tops
4 ounces mushrooms, cleaned and sliced
1/4 sweet red pepper, small dice, added for color
1/4 cup petite frozen green pea
3 -4 tablespoons butter, divided (2 t for saute, 3T for sauce)
3 tablespoons flour
3 cups milk, any
1 teaspoon chicken bouillon granule
1 -2 whole chicken breast, skin on
salt, to taste
pepper, to taste
4 -6 puff pastry shells

Steps:

  • Preheat oven to the temperature recommended for puff pastry shells.
  • Bake puff pastry shells according to package directions. Bake and cool. This can be done ahead of time. Remove center of puff pastry, save for topping.
  • Reduce oven temperature to 325-350° for baking chicken.
  • Bake chicken breast using recipe Or use recipe Recipe #234465. Cool and remove skin. Cube chicken, set aside.
  • Over a low to medium heat, saute the red bell pepper, sliced scallions and sliced mushrooms in butter for approximately 3-5 minutes. Do not over cook. Remove from heat and set aside.
  • In the mean time, make a white sauce.
  • Melt butter, add chicken bullion seasoning, add flour and whisk to combine. It will thicken at this point. Slowly add the milk, 1/2 C at a time, continuing to whisk until the sauce thickens. You may not use all the milk.
  • Add frozen peas to the sauce. Add the peppers, onions, mushrooms and chicken. Warm through.
  • Spoon sauce mixture over each puff pastry shell, top with the center of the shell you removed.
  • Enjoy!

2 tablespoons extra virgin olive oil
1/2 lb thick sliced bacon or 1/2 lb pancetta
3 shallots
1/8 teaspoon red pepper flakes
1 lb frozen peas, thawed

Steps:

  • Heat oil in large skillet over medium heat.
  • Cut bacon or *Pancetta into small dice and cook in the oil until golden brown and fat has rendered.Remove the bacon to paper towels to drain.
  • Cut the peeled shallots in half and slice very thin.Cook them in the rendered drippings until soft, along with the pepper flakes.
  • Add the thawed peas and heat through. Distributing the shallots well.
  • Add in the bacon or *Pancetta and toss. Serve.
  • * The original recipe called for Pancetta which now runs between $20.00 and 22.00 per lb. So I used a good quality thick sliced smoked bacon with great results! :-).
