Olive Oil Cookies With Red Wine and Rosemary image

You don't need to use your best olive oil for these cookies, but extra virgin olive oil will make them more interesting than "pure" or "light" olive oil. From Mark Bittman's "Quick and Easy Recipes" from the New York Times.

2 1/2 cups flour
1/2 teaspoon baking powder
1 pinch salt
1/8 teaspoon black pepper, freshly ground
1 teaspoon minced fresh rosemary or 1/2 teaspoon dried rosemary
3/4 cup sugar
2 eggs
1/2 cup olive oil
3/4 cup dry red wine (or a little more)

Steps:

  • Preheat the oven to 375 degrees.
  • Combine the dry ingredients.
  • Beat the eggs with the olive oil and wine.
  • Use a rubber spatula to stir the liquid mix into the dry one, just until well combined; if the mixture is stiff, add a little more wine.
  • Drop by rounded teaspoons onto a lightly-oiled cookie sheet and bake for 12-15 minutes, or until lightly browned.
  • Cool for a couple minutes, then transfer the cookies to a rack to cool further.
  • Store in covered tin for up to three days.

3/4 cup sugar

1/2 cup olive oil
3/4 cup dry red wine, or a little more

Steps:

  • Preheat the oven to 375°F. Combine the dry ingredients. Beat the eggs with the olive oil and wine. Use a rubber spatula to stir the liquid mix into the dry one, just until well combined; if the mixture is stiff, add a little more wine.

SAVOURY RED WINE COOKIES

A flavorful "cookie" to enjoy with that special glass of Wine. Recipe came from the magazine distributed at the liquor store. Great for making up a batch and giving to holiday hosts with a bottle of red. (recipe calls for 2 kinds of paprika, I only used regular paprika, old white cheddar cheese, hard margarine in place of butter, and an all-purpose gluten free flour blend) Dough and baked cookies both freeze well

1 cup flour (I used a Gluten Free flour blend with no change to the recipe)
1 cup grated cheese (appenzeller, machego, old cheddar, aged gouda, jarlsberg, gruyere, beaufort, emmenhal etc)
1/4 cup unsalted butter
1 teaspoon fresh rosemary (I used 1/4 to 1/2 tsp dry thyme) or 1 teaspoon thyme, minced (I used 1/4 to 1/2 tsp dry thyme)
1/4 teaspoon smoked paprika
1/2 teaspoon sweet paprika
1 dash cayenne
salt
3 sun-dried tomatoes packed in oil, minced

Steps:

  • use hands, mixer or food processor to combine all ingredients except the tomatoes.
  • Mix to blend and form into a supple dough.
  • Remove the dough to counter and knead in tomatoes.
  • Shape into a log and wrap tightly in foil or plastic wrap and chill at least 30 minutes.
  • Preheat oven to 400°F
  • Use a sharp, thin knife to slice the dough into 1/4' rounds.
  • Arrange on greased cookie sheet and bake 10-15 minutes or until golden.
  • Cool and store in an airtight container.

1 teaspoon salt
1 teaspoon baking soda
1/4 cup olive oil
1 teaspoon vanilla extract
3/4 cup granulated sugar
3/4 cup brown sugar
2 eggs
1 -2 tablespoon milk
1 cup chocolate chips

Steps:

  • 1. Preheat the oven to 375 degrees F. Combine the flour, baking soda, and salt in a medium bowl and set aside.
  • 2. Combine sugars, vanilla, and olive oil. Beat in the eggs one a time. Gradually beat in the flour mixture, then add in a tablespoon of milk to make the dough a bit firmer, maybe another tablespoon if you need it/if you feel the dough is too sticky/dry (I used about 1 tablespoon + 1 teaspoon).
  • 3. Roll the dough into balls with your hands and place on a greased and/or lined baking sheet and bake for 10-12 minutes, until lightly golden and set. Mine took about 10 and a half minutes. These overbake quickly, so it's better to take them out a bit early if you're unsure. Allow to cool for a bit on the baking sheet, then move to another surface to finish cooling.

3/4 cup sugar
1/2 cup olive oil
1 large egg, roome temperature
1/4 cup honey
1/4 teaspoon lemon extract
1 cup all-purpose flour
1 cup whole wheat flour
2 tablespoons minced fresh rosemary
2 teaspoons grated lemon zest
1-1/2 teaspoons baking soda
1/4 teaspoon plus 2 teaspoons sea salt, divided

Steps:

  • In a large bowl, beat sugar and oil until blended. Beat in the egg, then honey and lemon extract. Combine the flours, rosemary, lemon peel, baking soda and 1/4 teaspoon salt. Gradually add to sugar mixture; mix just until combined., Drop by tablespoonfuls 2 in. apart onto parchment-lined baking sheets. Sprinkle tops with remaining sea salt. Bake at 350° for 9-12 minutes or until lightly browned. Remove to wire racks. Store in an airtight container.

  • In a medium bowl, combine the remaining 7 tablespoons (87 g) sugar, flour, baking powder, and salt. Drizzle the oil over the flour and mix with a fork until the dough is very clumpy. Add the wine and continue mixing with the fork. The dough will seem overly wet, but keep working until the flour has absorbed the liquid. Knead the dough on a clean work surface for about 2 minutes until smooth. Cover the bowl with plastic wrap and refrigerate for 30 minutes.
  • Take 1 tablespoon of the dough and roll it between the palms of your hands to form a ball. Place theball of dough on your work surface and roll with your fingers until it is about 5 inches long. Form a circle by pressing together the 2 ends. Brush the cookie with olive oil and dip the top of the cookie into the reserved sugar to dust lightly. Place the cookies on the baking sheet, spacing them 11?2 inches apart.Continue in the same manner until you have formed all of the cookies.
