Delicious Pear Gorgonzola Bites with Walnuts and Rosemary are savoury mini muffins that make perfect appetizers. Your guests will gobble these up.

2 cups all-purpose flour
1 cup Gorgonzola cheese (crumbled)
1 tbsp baking powder
1/4 cup toasted walnuts (chopped)
1 tbsp fresh rosemary (chopped)
1 tsp freshly ground black pepper
1/2 tsp salt
1 1/4 cup 2% milk (or non-dairy milk, such as rice or almond milk)
1/4 cup butter (melted)
1 large egg (beaten)
juice of half a lemon
3 medium pears (peeled cored and chopped)

Steps:

  • Preheat oven to 350° Unless using non-stick, lightly coat a mini muffin tin with cooking spray
  • In a large bowl, combine flour, cheese, baking powder, walnuts, rosemary, pepper, & salt
  • In another bowl combine milk, butter, egg, lemon juice, and pears
  • Add the milk/egg mixture to the dry ingredients, combining quickly with a few swift strokes so as not to overmix.
  • Use a tablespoon or a melon baller to fill muffin cups with batter
  • Bake in center of oven 15-20 minutes until golden
  • Cool slightly on a rack and serve warm, or allow to cool completely and store in an airtight container in the fridge until serving

9 ounces penne pasta
2 tablespoons butter
½ cup grated Parmesan cheese
3 tablespoons crumbled Gorgonzola cheese
½ cup heavy whipping cream
1 large pear, peeled and cubed
½ cup chopped toasted walnuts
ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a rolling boil. Cook the penne in the boiling water, stirring occasionally, until tender yet firm to the bite, about 11 minutes; drain.
  • Return the drained pasta to the pot; stir the butter, Parmesan cheese, and Gorgonzola cheese into the pasta and place over medium heat; cook until the cheese is completely melted. Pour the cream into the pasta mixture; stir. Remove from heat and fold the pear into the pasta mixture. Top with walnuts. Season with pepper to serve.

3 tablespoons butter
2 ripe pears - peeled, cored, and cubed
3 sprigs fresh thyme
7 ounces Gorgonzola cheese, crumbled
1 pound fresh pasta dough

Steps:

  • Melt butter in a large skillet over medium heat. Add pears and thyme; cook, stirring often, until pears have softened, about 10 minutes. Crumble Gorgonzola cheese over pears; cook and stir until melted, 2 to 3 minutes. Remove skillet from heat and cool filling completely.
  • Cut pasta dough into 3 equal pieces. Flatten the first piece of dough on a floured work surface; roll with a rolling pin 5 or 6 times. Turn the dough 45 degrees and roll again, 5 to 6 times. Keep rolling and turning in the same direction until dough has a consistent thickness of about 1/16-inch. Repeat with remaining 2 pieces of pasta dough.
  • Gently transfer 1 pasta sheet to a floured surface and cut in half to form 2 evenly sized rectangles. Drop about 1 teaspoon filling onto 1 rectangle, spacing the filling about 1-inch apart. Brush the spaces around the filling with water.
  • Lay the second rectangle on top of the first. Gently squeeze out the air around the filling and press firmly with your hands to seal the edges and all dough around the filling.
  • Cut square ravioli shapes using a ravioli cutter. Transfer the ravioli to a floured plate or board. Repeat with the remaining dough and filling. Let the ravioli stand for about 30 minutes.
  • Bring a saucepan of lightly salted water to the boil; gently add ravioli, working in batches. Cook until ravioli float to the top, about 3 minutes. Remove using a slotted spoon and transfer to a warm bowl.

1/3 cup balsamic vinegar
1 tablespoon orange marmalade
1/2 cup panko bread crumbs
1 tube (18 ounces) polenta, cut into 16 slices
2 tablespoons olive oil
1/2 cup crumbled Gorgonzola cheese
3 tablespoons dried currants, optional

Steps:

  • In a small saucepan, combine vinegar and marmalade. Bring to a boil; cook 5-7 minutes or until liquid is reduced to 2 tablespoons., Meanwhile, place bread crumbs in a shallow bowl. Press both sides of polenta slices in bread crumbs. In a large skillet, heat oil over medium-high heat. Add polenta in batches; cook 2-4 minutes on each side or until golden brown., Arrange polenta on a serving platter; spoon cheese over top. Sprinkle with currants if desired; drizzle with vinegar mixture. Serve warm or at room temperature.

4 large pears, about 2 pounds
4 tablespoon lemon juice
6 ounces Gorgonzola or other creamy blue cheese
12 cups mixed greens, washed, dried and torn into bite-size pieces
1 to 1 1/2 cups any vinaigrette

Steps:

  • Peel and core the pears; cut them into thin slices, and toss with the lemon juice. Cover, and refrigerate until needed.
  • Crumble the Gorgonzola into small bits; cover and refrigerate until needed.
  • To serve, toss the pear, cheese and greens together with as much dressing as desired. Serve immediately.

1 (16 ounce) package refrigerated pizza crust dough (I prefer doing rectangle pizza's with this so I can cut squares, however round would work too)
4 ounces sliced provolone cheese
2 Pears, thinly sliced
2 ounces chopped walnuts
2 1/2 ounces Gorgonzola cheese, crumbled
2 tablespoons chopped fresh chives

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Place pizza crust dough on a medium baking sheet. Layer with Provolone cheese. Top cheese with Pear slices. Sprinkle with walnuts and Gorgonzola cheese. Bake in the preheated oven 8 to 10 minutes, or until cheese is melted and crust is lightly browned. Remove from heat. Top with chives and slice to serve.
