Texas Sheet Cake with Applesauce and Chai image

I love Texas sheet cake! Chocolate, white...it doesn't matter. But they all have so much butter. I tried to lighten up an excellent white Texas sheet cake recipe I found on this site by using applesauce in place of some (but not all!) of the butter. To complement the flavor of apples, I also used chai spices for a little added flavor.

nonstick cooking spray
1 cup water
1 chai tea bag
½ cup unsweetened applesauce
½ cup butter
2 cups all-purpose flour
1 ¾ cups white sugar
½ cup light sour cream
2 eggs
1 teaspoon baking soda
1 teaspoon vanilla extract
½ teaspoon salt
½ cup butter
¼ cup milk
4 ½ cups confectioners' sugar
½ teaspoon vanilla extract
¼ teaspoon ground cinnamon

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a 10x15-inch cake pan thoroughly with nonstick cooking spray.
  • Bring water to a boil in a microwave-safe bowl in a microwave oven or in a pot on the stovetop. Remove from heat and add chai tea bag. Let steep for 10 minutes; remove bag.
  • Combine chai tea, applesauce, and butter in a large saucepan. Bring to a boil. Remove from heat and add flour, sugar, sour cream, eggs, baking soda, vanilla extract, and salt and whisk until smooth. Pour batter evenly into the prepared pan.
  • Bake until a toothpick inserted into the center comes out clean, 22 to 25 minutes.
  • Remove cake from the oven.
  • Combine butter and milk in a large saucepan. Bring to a light boil and remove from heat. Add confectioners' sugar, vanilla extract, and cinnamon; whisk icing until smooth.
  • Pour icing over warm cake and smooth across the surface. Let cool thoroughly before cutting into 24 pieces.

Spiced Apple-Pear Sauce image

The natural sweetness of fresh apples and pears makes this homemade sauce a standout over the store-bought version. Lemon juice adds brightness and keeps the fruit from browning, and cinnamon and nutmeg lend warm spice notes.

3 McIntosh apples, peeled, cored and chopped into 1/2-inch pieces
3 ripe Bartlett pears, peeled, cored and chopped into 1/2-inch pieces
1 tablespoon fresh lemon juice
6 cinnamon sticks
1/4 teaspoon ground nutmeg
1 to 2 tablespoons sugar

Steps:

  • Combine the apples, pears, lemon juice, cinnamon sticks, nutmeg, 1 tablespoon sugar and 1/4 cup water in a medium saucepan. Bring to a boil over medium-high heat. Cover, reduce the heat to medium-low and cook until the apples and pears are very soft but still a bit chunky, 15 to 20 minutes. Taste the mixture and add the remaining tablespoon of sugar if desired.
  • Remove the sauce from the heat and stir a few times until the sauce is well combined with small chunks. Cool to room temperature. Remove the cinnamon sticks and serve. (For a smoother sauce, remove from heat, remove the cinnamon sticks and then whisk the mixture until smooth before cooling.)

Pear-Applesauce with Chai Spices image

It's autumn and we have a bounty of locally grown, organic apples and pears on hand. I modified an apple cider recipe for this East Indian inspired combination.

3-4 - apples, scrubbed, peeled, seeded and cored
3-4 - ripe pears, scrubbed,peeled, seeded and cored
1 small ripe banana, peeled
1 - whole cinnamon stick
1 - whole star anise
1/2 tablespoon(s) freshly grated ginger (or use about 1/2 teaspoon ground ginger)
3-4 - cardamon pods
2-3 - whole cloves
3-4 - whole black peppercorns
1/3 cup(s) dark brown sugar
1/4 cup(s) water (you can sub white grape juice, pear juice, apple juice/cider, pineapple juice)
1 tablespoon(s) freshly squeezed lemon or orange juice
1 teaspoon(s) vanilla paste or vanilla extract
FLAVORED YOGURT TOPPING:
2 tablespoon(s) whole milk yogurt, drained
1/4-1/2 teaspoon(s) rosewater, to taste

Steps:

  • Place the peeled fruit in the Crock-pot.
  • Lightly crush the whole spices in a pestle and mortar then place the spices in a tea infuser (or you can use muslin cloth and tie up). Add to the Crock-pot.
  • Now add about 1/3 cup brown sugar, 1/4 cup water (white grape juice, apple juice/cider or pineapple juice), 1 tablespoon lemon juice, 1 teaspoon vanilla paste or extract to the Crock-pot.
  • Cook on HIGH 1 hour then on LOW for about 3-4 hours until very soft.
  • *Remove* the cinnamon stick and whole spices. Use an immersion blender to puree the fruit or transfer to a blender or food processor and puree in batches to desired consistency. To serve: Eat and enjoy warm or cold. I like to add a dollop of plain yogurt with rosewater to my serving.

Steps:

  • In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until tender, stirring occasionally. Mash until sauce is desired consistency. Serve warm or cold.
