TEXAS SHEET CAKE WITH APPLESAUCE AND CHAI
I love Texas sheet cake! Chocolate, white...it doesn't matter. But they all have so much butter. I tried to lighten up an excellent white Texas sheet cake recipe I found on this site by using applesauce in place of some (but not all!) of the butter. To complement the flavor of apples, I also used chai spices for a little added flavor.

- Preheat the oven to 375 degrees F (190 degrees C). Spray a 10x15-inch cake pan thoroughly with nonstick cooking spray.
- Bring water to a boil in a microwave-safe bowl in a microwave oven or in a pot on the stovetop. Remove from heat and add chai tea bag. Let steep for 10 minutes; remove bag.
- Combine chai tea, applesauce, and butter in a large saucepan. Bring to a boil. Remove from heat and add flour, sugar, sour cream, eggs, baking soda, vanilla extract, and salt and whisk until smooth. Pour batter evenly into the prepared pan.
- Bake until a toothpick inserted into the center comes out clean, 22 to 25 minutes.
- Remove cake from the oven.
- Combine butter and milk in a large saucepan. Bring to a light boil and remove from heat. Add confectioners' sugar, vanilla extract, and cinnamon; whisk icing until smooth.
- Pour icing over warm cake and smooth across the surface. Let cool thoroughly before cutting into 24 pieces.

SPICED APPLE-PEAR SAUCE
The natural sweetness of fresh apples and pears makes this homemade sauce a standout over the store-bought version. Lemon juice adds brightness and keeps the fruit from browning, and cinnamon and nutmeg lend warm spice notes.

- Combine the apples, pears, lemon juice, cinnamon sticks, nutmeg, 1 tablespoon sugar and 1/4 cup water in a medium saucepan. Bring to a boil over medium-high heat. Cover, reduce the heat to medium-low and cook until the apples and pears are very soft but still a bit chunky, 15 to 20 minutes. Taste the mixture and add the remaining tablespoon of sugar if desired.
- Remove the sauce from the heat and stir a few times until the sauce is well combined with small chunks. Cool to room temperature. Remove the cinnamon sticks and serve. (For a smoother sauce, remove from heat, remove the cinnamon sticks and then whisk the mixture until smooth before cooling.)
PEAR-APPLESAUCE WITH CHAI SPICES
It's autumn and we have a bounty of locally grown, organic apples and pears on hand. I modified an apple cider recipe for this East Indian inspired combination.

- Place the peeled fruit in the Crock-pot.
- Lightly crush the whole spices in a pestle and mortar then place the spices in a tea infuser (or you can use muslin cloth and tie up). Add to the Crock-pot.
- Now add about 1/3 cup brown sugar, 1/4 cup water (white grape juice, apple juice/cider or pineapple juice), 1 tablespoon lemon juice, 1 teaspoon vanilla paste or extract to the Crock-pot.
- Cook on HIGH 1 hour then on LOW for about 3-4 hours until very soft.
- *Remove* the cinnamon stick and whole spices. Use an immersion blender to puree the fruit or transfer to a blender or food processor and puree in batches to desired consistency. To serve: Eat and enjoy warm or cold. I like to add a dollop of plain yogurt with rosewater to my serving.
