1 ½ cups rolled oats
½ cup all-purpose flour
¾ cup brown sugar
½ cup butter, softened
2 cups peeled and diced apples
2 cups peeled and diced pears
¾ cup brown sugar
1 teaspoon ground cinnamon
½ cup sliced almonds, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix oats, flour, 3/4 cup brown sugar, and butter together in a bowl until crumbly.
  • Mix apples, pears, 3/4 cup brown sugar, and cinnamon together in a separate bowl; spread into the bottom of a 9x9-inch glass pan. Sprinkle oat mixture atop apple-pear mixture; top with almonds.
  • Bake in the preheated oven until the top is golden brown, about 40 minutes.

1/2 cup dried tart cherry
1/3 cup apricot preserves
1 teaspoon grated lemon rind
2 tablespoons fresh lemon juice
2 lbs bosc pears, peeled, cored, quartered, and cut crosswise into 1/2-inch-thick slices (about 4 1/2 cups)
1 lb braeburn apple, peeled, cored, quartered, and cut crosswise into 1/2-inch-thick slices (about 2 1/4 cups)
cooking spray
1 cup all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground mace (optional)
6 tablespoons chilled butter, cut into small pieces
1 cup oats
3/4 cup turbinado sugar

Steps:

  • Preheat oven to 375°.
  • Combine first 6 ingredients in a large bowl, tossing well to coat. Spoon mixture into an 11 x 7-inch baking dish coated with cooking spray.
  • Lightly spoon flour into a dry measuring cup, and level with a knife. Place flour, cinnamon, salt, and mace, if desired, in a food processor; pulse 5 times or until well combined.
  • Add butter, and pulse 20 times or until mixture resembles coarse crumbs. Add the oats and sugar; pulse 5 times or until well combined.
  • Sprinkle oat mixture over pear mixture. Bake at 375° for 1 hour or until topping is golden and filling is bubbly.
  • Cool on a wire rack 10 minutes. Serve warm or at room temperature.

2 cups whole wheat flour
1 ½ cups lowfat margarine
1 cup white sugar
3 apples - peeled, cored, and cut into wedges
3 pears - peeled, cored, and cut into wedges
1 cup blackberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease three 9-inch pie tins.
  • Mix flour, margarine, and sugar together in a bowl using your hands until mixture is crumbly.
  • Layer apples and pears in the bottom of the 3 pie tins; sprinkle blackberries over apples and pears. Evenly distribute flour mixture over the fruit mixture.
  • Bake in the preheated oven until fruit is soft and topping is light brown, about 40 minutes.

3 medium pears, peeled and sliced
2 medium apples, peeled and sliced
1 tablespoon cornstarch
1/3 cup pear nectar
1/2 teaspoon almond extract
1/3 cup packed brown sugar
TOPPING:
1/4 cup all-purpose flour
1/4 cup old-fashioned oats
1/4 cup packed brown sugar
1/8 teaspoon salt
2 tablespoons cold butter
3 tablespoons sliced almonds

Steps:

  • In a large bowl, combine pears and apples. In a small bowl, combine the cornstarch, pear nectar and extract; stir until smooth. Stir in brown sugar until blended. Drizzle over pear mixture and stir gently to coat. Transfer to an 11x7-in. baking dish coated with cooking spray., For topping, in a small bowl, combine the flour, oats, brown sugar and salt. Cut in butter until crumbly; stir in almonds. Sprinkle over fruit mixture. , Bake, uncovered, at 350° for 35-40 minutes or until fruit is tender. Serve warm or at room temperature.

This great dessert is from The New Vegetarian Epicure. I've used it with several combinations of fruit - basically whatever I have on hand - and it's always been good. While the apple and pear combination is excellent, I've also had great results with mixed berries (strawberry, raspberry, blueberry, cherries). An easy dessert with ingredients you probably have on hand.

4 -5 tart apples
4 -5 pears (if using other mixed fruits instead, just be sure to have about 4 lbs total)
3 tablespoons lemon juice
1/2 cup sugar
1/2 cup raisins
1 dash nutmeg
1 dash cinnamon (or any other spice you love!)
2/3 cup flour
3/4 cup brown sugar
1 pinch salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
5 tablespoons butter
2 tablespoons ice water
1 cup rolled oats

Steps:

  • Prepare fruit (peel, pit, whatever it takes). If large, cut into 1/4 thick slices.
  • Toss in a bowl with lemon juice, sugar and raisins and a bit of nutmeg and cinnamon (I usually add allspice because I love it).
  • Combine the flour, sugar, salt and spices.
  • Cut in the butter and mix till mixture resembles coarse cornmeal. There should be no big chunks of butter left. (I usually do this with my hands - don't have a food processor).
  • Sprinkle in the ice water, mix till the crumble mixture holds together and forms little clumps.
  • Add the rolled oats and mix. If the mixture seems sticky, add more oats.
  • Spread fruit evenly in a large glass or ceramic baking dish.
  • Scatter topping evenly over the fruit, leaving some of it in larger chunks and some in fine crumbles.
  • Bake the Crumble at 375 for about 40-45 minutes or until the top is crisp and brown and the juice is bubbling up around the edges.
  • Serve it hot or warm, with ice cream, whipped cream, or all by itself.

Use summer cherries to make this easy oat-topped crumble. Perfect with a scoop of vanilla ice cream, it makes a superb summertime dessert

1kg fresh cherries , pitted
50g golden caster sugar
1 lemon , juiced
½ tsp vanilla extract
150g plain flour
100g cold butter
½ tsp salt
70g soft brown sugar
100g rolled oats
40g flaked almonds
ice cream , to serve

Steps:

  • Tip the cherries into a medium-sized ovenproof dish (around 28cm) and mix with the sugar, lemon and vanilla. Set aside.
  • Heat the oven to 200C/180C fan/gas 4. Tip the flour and butter into a mixing bowl and rub together with your fingertips to create a fine, breadcrumb-like mixture. Stir through the salt, brown sugar, oats and most of the almonds. Tip over the cherry mixture, then top with the remaining almonds.
  • Bake the crumble in the centre of the oven for 30-35 mins or until the topping is golden brown. Serve warm with vanilla ice cream.

  • Preheat oven to 350°F. Butter 13x9x2-inch oval ceramic baking dish. Mix 1 cup sugar, 3 tablespoons flour, 1 teaspoon cinnamon, and nutmeg in large bowl. Add apples, pears, and dried cherries to bowl; sprinkle with lemon juice and toss to coat. Transfer to prepared dish.
  • Using fingertips, mix butter, brown sugar, lemon peel, remaining 1 1/2 cups flour, and remaining 1 teaspoon cinnamon in medium bowl until moist clumps form. Crumble butter mixture over fruit.
  • Bake until fruit bubbles at edges and crumble is crisp and beginning to brown on top, about 1 hour. Cool about 20 minutes.
  • Meanwhile, beat cream in medium bowl until peaks form. Gradually whisk in maple syrup.
  • Spoon crumble into bowls and serve with vanilla ice cream and maple cream.
