- Beat eggs, 2 tablespoons parsley, 2 teaspoons water, dried herbs, salt and pepper in small bowl to blend. Melt 1 tablespoon butter in small nonstick skillet over medium-high heat. Add half of egg mixture (about 1/2 cup) to skillet. Cook until eggs are just set in center, tilting pan and lifting edge of omelet with spatula to let uncooked portion flow underneath, about 2 minutes. Top half of omelet with 1/4 cup cheese. Using spatula, fold other half of omelet over cheese; slide out onto plate. Repeat with remaining butter, egg mixture and cheese. Sprinkle omelets with remaining 1 tablespoon parsley.
ROASTED PEAR AND GOAT CHEESE OMELET
Steps:
- Preheat the oven to 375°F.
- Toss together the pear slices, melted butter, and salt in a small shallow baking pan. Roast the pears for 5 minutes. Using tongs or a spatula, turn over the pears so they'll cook evenly. Continue to roast for another 10 to 15 minutes, or until browned. Set aside to cool.
- Using a whisk or a fork, beat the eggs in a small bowl until frothy.
- For each omelet, sauté 8 pear slices in the butter in an 8-inch nonstick skillet over medium heat for 1 minute. Pour the eggs into the pan, tilting the pan gently to evenly distribute the eggs around the pear slices. Let the eggs cook and set for about 5 seconds.
- Using a silicone or rubber spatula, gently pull the cooked egg from the edges toward the center of the pan, while allowing the liquid egg to run underneath and onto the hot pan. When the sides of the omelet begin to rise up the edge of the pan, flip the omelet. It is done when it is nicely set but not overly firm. There should be traces of just-cooked egg in the center of the omelet.
- Sprinkle the goat cheese over half of the omelet. Using the spatula, fold the omelet in half and slide it onto a serving plate. Sprinkle with the parsley and serve.
- ROASTING FRUIT
- Roasting intensifies a fruit's naturally sweet flavor, softens it, and opens up many serving possibilities. You can top roasted fruit with ice cream or whipped cream, roll it into a crêpe, or serve it with cakes and other pastries. Apples, pears, apricots, plums, and nectarines are especially delicious when roasted.
- To roast fruit, preheat the oven to 375°F. Mix the fruit with a little lemon juice in a large bowl. Generously butter a rimmed baking sheet. Place the fruit on the prepared sheet and drizzle with a little melted butter. Roast the fruit for about 20 to 25 minutes, or until soft and golden, turning it with a spatula after 10 minutes. Let the fruit cool on the baking sheet. You can store roasted fruit in the refrigerator for up to 2 days.

Steps:
- Make Filling:
- Put oven rack in middle position and preheat oven to 350°F.
- Toss bread cubes with butter in a shallow baking pan, then bake until golden and crisp, 10 to 15 minutes. Sprinkle with salt.
- Stir together parsley and garlic in a small bowl. Coarsely grate cheese (1 cup).
- Make omelets:
- Beat together 3 eggs, 1 teaspoon water, scant 1/4 teaspoon salt, and 1/8 teaspoon pepper in a bowl with a fork until combined.
- Heat omelet pan over moderately high heat until hot, then add 1 tablespoon butter and heat, swirling pan, until foam subsides and begins to brown near edge of pan. Pour beaten eggs into skillet, then cook, shaking pan back and forth quickly with one hand while stirring eggs in a circular pattern with a heatproof rubber spatula with the other hand, until eggs begin to set. Quickly spread set eggs evenly in skillet and sprinkle with 1/4 cup cheese and 1 tablespoon parsley-garlic mixture, then cook until omelet is just set, about 30 seconds to 1 minute. Add one fourth of croutons (about 1/3 cup) across center of omelet. Holding handle of pan near you, lift edge of omelet closest to handle using a rubber spatula and fold one third of omelet over croutons. Grabbing handle from underneath, tilt pan over plate until unfolded part of omelet slides onto plate, then immediately invert skillet, as if trying to cover plate, to make omelet fold over itself onto plate. Make 3 more omelets in same manner.
SIZZLING HAM AND GRUYèRE OMELET
Steps:
- Using a whisk or a fork, beat the eggs in a small bowl until frothy.
- Heat the butter in an 8-inch nonstick skillet over medium heat. Add the ham and sauté for 1 minute, or until crisp.
- Pour the eggs into the pan, tilting the pan gently to evenly distribute the eggs over the ham. Let the eggs cook and set for about 5 seconds.
- Using a silicone or rubber spatula, gently pull the cooked egg from the edges toward the center of the pan, while allowing the liquid egg to run underneath and onto the hot pan. After about 20 seconds, or when the eggs look cooked but are still moist, sprinkle the omelet with the Gruyère cheese.
- Using the spatula, fold the omelet in half. Cook the omelet for another 30 seconds, or until the cheese is melted. Tip the pan over a serving plate so that the omelet slides onto the plate bottom side up.
PEAR GRUYERE PIE
I love cheese and fruit, so this pie is a natural pairing for me. Sweet and spicy wine-poached pears and a flaky, buttery cheese crust make for a winning dessert you'll want to make again and again. If you're serving this for Thanksgiving, bake leaf-shaped pie pastry on top for a festive look. -Alexandra Penfold, Brooklyn, New York

Steps:
- Place flour, cheese, sugar and salt in a food processor; pulse until blended. Add butter; pulse until butter is the size of peas. While pulsing, add just enough ice water to form moist crumbs. Divide dough in half. Shape each into a disk; wrap and refrigerate 1 hour or overnight., In a large saucepan, combine water, wine, sugar, cinnamon stick, vanilla and spices; bring to a boil. Add pears to poaching liquid. Cook, uncovered, 10-15 minutes or until tender., Using a slotted spoon, remove pears and cool slightly. Refrigerate until cooled; discard cinnamon stick. Meanwhile, return poaching liquid to a boil. Cook 12-15 minutes or until liquid is reduced to 3/4 cup. In a small bowl, mix cornstarch and water until smooth; stir into reduced liquid. Return to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened. Pour into a 1-cup measuring cup. Cool slightly; refrigerate until chilled., Preheat oven to 400°. On a well-floured surface, roll 1 dough portion to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Add pear filling; pour syrup over pears. Roll remaining dough to a 1/8-in.-thick circle. Cut decorative cutouts from remaining crust and arrange over filling; re-roll scraps as needed. Brush crust with egg. Place pie on a baking sheet., Bake 30-40 minutes or until crust is golden brown and filling is bubbly. Cover edge with foil during the last 15 minutes to prevent overbrowning if necessary. Cool on a wire rack. If desired, serve with ice cream.
