Peanut Squares image

These cake squares are light, fluffy and topped with a chopped peanut frosted coating that makes them irresistible.

Number Of Ingredients 13

4 eggs
2 cups granulated sugar
2 cups Gold Medal™ all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup whole milk
1/4 cup butter, melted
1 teaspoon vanilla
3 cups powdered sugar
1/2 cup butter, softened
3 tablespoons milk
1 teaspoon vanilla
6 cups lightly salted peanuts, chopped

Steps:

  • Heat oven to 350°F. Spray 13x9-inch pan with cooking spray; line with cooking parchment paper, leaving a few inches of overhang on each side.
  • In large bowl, beat eggs with electric mixer on medium-high speed 1 minute. Slowly beat in granulated sugar, then beat 4 minutes longer. Eggs should be pale in color and fall in thick ribbons back into bowl.
  • In another bowl, mix flour, baking powder and salt. Add to egg mixture all at once; beat on low speed just until incorporated. In small bowl, beat together 1 cup milk, the melted butter and 1 teaspoon vanilla. Add to mixture in 2 additions. Pour batter in pan.
  • Bake 35 to 40 minutes or until cake is golden and center springs back when lightly pressed. Cool in pan 15 minutes, then use overhanging parchment to carefully lift cake out of pan, and transfer to rack to cool completely, about 1 hour.
  • Meanwhile, beat powdered sugar, softened butter, 3 tablespoons milk and 1 teaspoon vanilla to make smooth frosting. Spread chopped peanuts on small pan or plate.
  • Use serrated knife to cut cake into 24 squares (6 rows by 4 rows). Frost top and sides of each square with frosting, then roll in chopped peanuts, using hands if necessary to press peanuts into frosting.
  • Refrigerate 30 minutes to firm up. Serve cold, or remove from refrigerator 20 minutes before serving.

4 cups quick-cooking oats
1 cup packed brown sugar
2/3 cup butter, melted
1/2 cup plus 2/3 cup peanut butter, divided
1/2 cup light corn syrup
1 teaspoon vanilla extract
1 package (11 ounces) butterscotch chips
1 cup semisweet chocolate chips
1 cup chopped salted peanuts

Steps:

  • In a large bowl, combine the oats, brown sugar, butter, 1/2 cup peanut butter, corn syrup and vanilla. Press into a greased 13x9-in. baking pan. Bake at 375° for 12-14 minutes or until mixture is bubbly around the edges., In a microwave-safe bowl, melt butterscotch and chocolate chips; stir until smooth. Stir in peanuts and remaining peanut butter; spread over the oat mixture. Cool for 10 minutes; chill until set.

Peanut squares are a fabulous recipe made of a slightly chewy, airy cake frosted with vanilla frosting and rolled in chopped peanuts to coat.

2 eggs
1 cup of sugar
1/2 cup milk
3 tablespoons butter (melted)
1 1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla
2 cans vanilla frosting
Garnish: peanuts (chopped salted)

Steps:

  • Gather the ingredients.
  • Preheat the oven to 350 F. Spray a 9-inch x 13-inch pan with nonstick baking spray containing flour.
  • In a large mixer bowl , beat the eggs slightly. Gradually add the sugar, beating until the mixture is fluffy.
  • Add the milk and melted butter and beat well.
  • Stir in the flour, baking powder, baking soda, and salt. Blend in the vanilla. Spread the batter in the prepared pan.
  • Bake the cake in preheated oven for 20 minutes or until the cake springs back when lightly touched in the center.
  • Cut the cake into 2 1/4 inch squares and frost on all sides with the frosting, then roll in the chopped peanuts to coat. You can also roll the little frosted cakes into other types of chopped nuts. Try using chopped cashews or pecans. Toast the nuts first for more flavor and more crunch.
  • Serve and enjoy!

1/4 cup sugar
1/2 cup creamy peanut butter
6 cups oven toasted corn or rice cereal
1/2 cup salted peanuts, if desired

Steps:

  • Butter 9- or 8-inch square pan.
  • In 3-quart saucepan, heat corn syrup and sugar just to boiling over medium heat, stirring constantly. Remove from heat.
  • Stir in peanut butter. Gently stir in cereal and peanuts until evenly coated. Press firmly in pan. Let stand 1 hour. For squares, cut into 6 rows by 6 rows. Store loosely covered.

2 cups confectioners' sugar
3/4 cup creamy peanut butter
2/3 cup graham cracker crumbs
TOPPING:
2/3 cup semisweet chocolate chips
4-1/2 teaspoons creamy peanut butter
1/2 teaspoon butter

Steps:

  • Line a 9-in. square pan with foil; grease foil with 1 teaspoon butter. In a microwave, melt remaining butter. Stir in confectioners' sugar, peanut butter and cracker crumbs. Spread into prepared pan., In microwave, melt topping ingredients; stir until smooth. Spread over top. Refrigerate until set., Using foil, lift out of pan. Cut into 1-in. squares. Store airtight in the refrigerator.

  • In a microwave-safe bowl, melt butter and peanut butter; stir until smooth. Combine sugar and flour; gradually add to butter mixture and mix well. 1 cup butter, divided
3-3/4 cups confectioners' sugar
3 teaspoons vanilla extract, divided

Steps:

  • In a saucepan over medium heat, cook and stir peanut butter and 3/4 cup butter and until smooth. Remove from the heat; stir in sugar and 2 teaspoons vanilla (mixture will be very thick). , Press into a greased 13-in. x 9-in. pan. In a saucepan over low heat, combine chips and remaining butter; cook and stir until chips are melted and mixture is smooth. Remove from the heat; stir in the remaining vanilla. Spread over peanut butter layer. Chill until firm.
