2-2/3 cups sweetened shredded coconut, chopped
2/3 cup confectioners' sugar
1/2 cup sweetened condensed milk
1/4 cup finely chopped almonds, toasted
2 tablespoons butter, softened
1/2 teaspoon vanilla extract
2 cups semisweet chocolate chips
1 tablespoon shortening
Colored jimmies or coarse sugar, optional

Steps:

  • In a small bowl, combine the coconut, confectioners' sugar, milk, almonds, butter and vanilla. Cover and refrigerate for at least 2 hours. , Roll into 1-in. balls; place on waxed paper-lined pans. Refrigerate for at least 1 hour. , In a microwave, melt chocolate chips and shortening; stir until smooth. Dip balls in chocolate; allow excess to drip off. Return to waxed paper-lined pans. Sprinkle with jimmies or coarse sugar if desired. Refrigerate until firm.

¼ cup butter
1 pound confectioners' sugar
1 cup sweetened condensed milk
2 cups flaked coconut
9 (1 ounce) squares semisweet chocolate
2 tablespoons shortening

Steps:

  • In a medium bowl, mix together butter, confectioners' sugar, and sweetened condensed milk. Mix in the coconut. Roll dough into 1 inch balls, and refrigerate until set, about 1 hour.
  • Melt chocolate and shortening over a double boiler, stirring occasionally until smooth. Remove from heat when melted, and stir to make sure the shortening is fully incorporated. Use toothpicks to hold the balls while dipping in the chocolate. Set on wax paper to dry.

My family and friends never fail to include these chocolates on their Christmas wish list. Luckily, this recipe makes a big batch- so my supply meets the candy demand.

1/2 cup butter, softened
2 pounds confectioners' sugar
1 can (14 ounces) sweetened condensed milk
4 cups chopped pecans
3-1/2 cups sweetened shredded coconut (about 10 ounces)
1 teaspoon vanilla extract
2 cups semisweet chocolate chips
1 tablespoon shortening

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add the milk, pecans, coconut and vanilla; mix well. Shape into 1-in. balls. Refrigerate for 30-45 minutes or until firm. , In a heavy saucepan or microwave, melt the chips and shortening; stir until smooth. Dip balls and place on waxed paper to set. Store in an airtight container.

2 cups peanut butter
¾ cup butter
4 ½ cups confectioners' sugar
3 cups crispy rice cereal
6 (1 ounce) squares semisweet chocolate, chopped

Steps:

  • In a medium saucepan, melt together the peanut butter and butter, stirring occasionally until warm and smooth. In a large bowl, stir together the confectioners' sugar and rice cereal; pour the peanut butter mixture over the cereal mixture and use your hands to blend well. Roll tablespoonfuls of the mixture into balls and chill.
  • In the microwave or in a metal bowl over a pan of simmering water, melt chocolate chips, stirring frequently until smooth. Dip the peanut butter balls into the chocolate using a toothpick. Place onto waxed paper to set.

1 c butter, melted (2 sticks)
1 c graham cracker crumbs
1 c chopped pecans, or nuts of your choice
1 c shredded coconut
2 3/4 c powdered sugar
1 tsp pure vanilla extract
1 pkg 12 oz. chocolate chips
1/4 block paraffin wax
1 1/2 c chunky peanut butter

Steps:

  • 1. In a medium bowl combine melted butter, graham cracker crumbs, peanut butter, chopped pecans, shredded coconut, powdered sugar and vanilla. If you prefer a more peanutty flavor, you can increase the peanut butter to 2 cups. Mix well.
  • 2. Roll into small balls about 1 inch in diameter. Chill in refrigerator till hardened.
  • 3. In a double boiler,melt chocolate chips and parrafin. Stick tooth pick in each ball, and dip in melted chocolate. Place on wax paper to cool. Makes about 5 dozen.
  • 4. NOTE: I made several flavors on the day I made these, I made dark Chocolate, Milk Chocolate, and white chocolate. Then I combined what was left of the dark chocolate with the white chocolate, and drizzeled it over the white chocolate. They were all a big hit. Some I even did a double dip after the first coat hardened, they got bigger, and everyone loved them. I hope you enjoy as well.
  • 5. Also note that Parrafin is usually found in the baking section of most large supermarkets, and is used often in candy making, it firms up the chocolate where it hardens better, and product takes on a much glossier finish. I love using this product in candy making. Make a variety of milk and dark Chocolate use your imagination.

1 cup margarine, softened
2 pounds confectioners' sugar, sifted
1 (14 ounce) can sweetened condensed milk
3 cups coconut
1 cup finely chopped walnuts
1 teaspoon vanilla extract
1 (12 ounce) package semisweet chocolate chips
2 tablespoons shortening

Steps:

  • In large bowl, combine margarine, confectioners' sugar, condensed milk, coconut, chopped walnuts and vanilla. Stir well. Cover and chill in the refrigerator for 2 hours, or until mixture has thickened enough to roll into balls. Roll the mixture into 1-inch balls and place close together, but not touching, on cookie sheets. Freeze until hard.
  • While bonbons are freezing, line a cookie sheet or flat surface with waxed paper. Combine chocolate chips and shortening in the top of a double boiler, over, not in, simmering water. Stir until melted. Using a toothpick or a fork, dip each bonbon in the melted chocolate. Place on waxed paper to dry. When chocolate has hardened, store bonbons in plastic bag in the freezer.

This is my daughter's recipe. She loves Reese's peanut butter cups -- so this is right up her alley. Since I haven't made these, I'm not sure of the quantity -- so it's sort of a guess on my part.

2 (3 ounce) packages of softened cream cheese (reduced fat cream cheese works great)
1 tablespoon milk
4 cups confectioners' sugar
1/3 cup cocoa powder
1 teaspoon vanilla extract
1 cup finely chopped peanuts (optional)
1 (10 ounce) package of reese's peanut butter chips
1/4 cup shortening

Steps:

  • In large mixing bowl, beat cream cheese and milk until fluffy. Add sugar, cocoa and vanilla; blend well. Stir in nuts if desired.
  • Form into bite-size balls and chill, covered for a few hours.
  • For topping, melt topping ingredients in a bowl in microwave on high for 1-2 minutes. Stir until mixture is smooth.
  • Dip balls into topping and set on wax paper. After coating has set, place bonbons in an airtight container in refrigerator until ready to enjoy.
