A very healthy peanut butter cookie full of protein. I have a very picky 3-year-old and was trying different ways to get some extra protein in his diet. He loves these cookies and they're extremely healthy.

Ingredients

2 ½ cups all-purpose flour
½ cup raisins
¼ cup hemp seed hearts
1 teaspoon baking powder
½ teaspoon baking soda
¾ cup brown sugar
¾ cup white sugar
½ cup butter, softened
½ cup applesauce
1 cup natural peanut butter
2 eggs
1 teaspoon vanilla extract

Steps:

Preheat oven to 375 degrees F (190 degrees C).
Mix flour, raisins, hemp seed hearts, baking powder, and baking soda together in a bowl. Beat brown sugar, white sugar, butter, and applesauce together in a bowl using an electric mixer until smooth and creamy; add peanut butter and beat until smooth.
Beat eggs and vanilla extract together in a bowl; stir into peanut butter mixture. Mix flour mixture into peanut butter mixture until a smooth dough forms. Roll dough into small balls and place on a baking sheet; press each with a fork to flatten.
Bake in the preheated oven until golden brown, about 9 minutes.

First, make a flax egg: stir ground flax with 3 tablespoons hot water in a small dish and set aside.
In a medium bowl, cream peanut butter and maple syrup together with a hand mixer for a minute until light and fluffy. Add flax egg and vanilla, and mix until combined.
Add the rye flour, hemp hearts, salt, baking soda and cinnamon and continue mixing until just incorporated, do not over mix. If adding chocolate chips, stir them in by hand now.
