COUNTRY HAM WITH REDEYE GRAVY

6 ounces country ham, sliced 1/4-inch thick
1 tablespoon unsalted butter, plus more for ham if necessary
1/2 cup strong black coffee
1/2 cup low-sodium chicken broth or water
1/2 teaspoon sugar

Steps:

  • Heat a large skillet (preferably cast-iron) over medium-high. Cook ham, adding 1/2 Tbsp. butter if ham is lean to help the browning process, until browned and fat has rendered, 2-3 minutes per side. Transfer ham to a platter.
  • Pour coffee into the same skillet and cook over medium-high heat, scraping skillet with a wooden spoon to deglaze and loosen any browned bits. Add broth and sugar; simmer, stirring occasionally, until thickened and reduced to about 1/4 cup, 3-4 minutes. Add 1 Tbsp. butter and whisk until emulsified, about 1 minute more. Pour gravy into a small bowl or serving vessel and serve drizzled over or alongside ham.

GRITS, COUNTRY HAM AND RED-EYE GRAVY

3 cups water
1 cup milk
1 cup course, stone-ground grits
Salt and freshly ground black pepper
Salt and freshly ground black pepper

Vinegar
4 to 6 eggs, 1 per serving
1 slice salted and smoked Virginia ham, per serving
6 ounces cold day old coffee
Splash pork stock
Chopped chives

Steps:

  • For the grits, bring the water and milk to a boil in a pan, whisk in the grits, and then reduce the heat and cook for an hour. Season with salt and pepper and set aside.
  • For the poached eggs, bring a pan of water to a gentle simmer and add salt and vinegar. Using a spoon, swirl the water in a circle and crack the eggs into the center of the water. Simmer for about 2 minutes. Set aside.
  • For the gravy, to a pre-heated skillet, add a slice of ham and warm it through. Then remove the ham to a plate. Into the same skillet add the coffee and pork stock and reduce.
  • To a bowl or plate add a serving of grits, the ham, a poached egg and sprinkle with chives. Drizzle the red-eye gravy over the grits and serve.

COUNTRY HAM WITH STONE-GROUND GRITS AND REDEYE GRAVY

1 cup stone-ground grits
Coarse kosher salt and freshly ground black pepper
Four 2-ounce slices country ham
1/4 cup brewed strong coffee
Pats of butter, for serving

Steps:

  • In a large heavy-bottomed saucepan, bring 4 cups of water to a boil over medium-high heat. Stir in the grits and return to a boil. Season with 1 teaspoon kosher salt. Decrease the heat to low and simmer until creamy and thick, stirring often, 45 to 60 minutes.
  • Heat a large cast-iron skillet over medium-high heat. Add the country ham and cook until crisped and golden brown on each side, about 5 minutes. Remove the ham and keep warm. Add the coffee and 1 cup water to the skillet, scraping up any brown bits with a wooden spoon. Simmer until the "gravy" has reduced to about 1/2 cup, 3 to 5 minutes.
  • Spoon the hot grits into warmed bowls. Top each with a pat of butter and black pepper to taste. Top with the ham and ladle over the gravy. Serve immediately.

SCALLOPS WITH COUNTRY HAM AND RED-EYE GRAVY

1 pound mixed greens, like mustard, kale and spinach
8 ounces sea scallops
3 tablespoons olive oil
Four 4-ounce slices country ham (recommended: Smithfield) cut into 1/2-inch strips
1/2 cup water

Steps:

  • Heat a large skillet over medium-high heat. Add the greens and cook until wilted. Divide evenly among the ramekins. Keep warm.
  • In the same skillet, saute the scallops in 2 tablespoons of the oil over medium-high heat until brown, about 3 to 5 minutes on each side. Remove from the skillet and place on top of the greens. Add the remaining tablespoon of oil to the same skillet. When hot, quickly saute the ham. Remove from the skillet and place on top of the scallops. Pour the water into the skillet and bring to a boil. Cook for about 1 minute, scraping up any browned bits, until the liquid is reduced by about half. Pour the gravy over the ramekins. Serve immediately.

As a child, I remember my grandparents having a smokehouse. In the dead of winter, when it was well below freezing, a hog would be slaughtered and no part of it wasted. The fresh hams were then covered in a dry salt mixture, wrapped, and hung up for several months to cure. To cook, they were sliced and pan fried, sometimes with a tiny bit of lard, in a hot, black iron skillet. Hot, usually breakfast, coffee was poured into the skillet to deglaze it, making red eye gravy. Redeye Gravy gets its name from the appearance of the gravy after the coffee sinks to the bottom. Serve over biscuits or grits.

slices of country ham, packaged or fresh
6 - 12 oz coke, regular, diet, or caffeine-free
1 tsp sugar or packet of sweetner (depending on how much gravy you are preparing, you may need 2 teaspoons)
about 1/2 cup brewed coffee, regular or decaf

Steps:

  • 1. Preheat oven to 350°. With the side of a large knife, scrape both sides of country ham to remove any whiteish residue from the ham, if there is any. (This is an important step). Discard residue. Do not remove fat from the ham at this point. Place country ham in a 9 x 13 baking dish or a large iron skillet. Pour about 1/2 can of coke over ham, this depends on how many slices you are preparing. (I usually cook 2 large slices and use 1/2 can [6 ozs.] of coke). Cover ham loosely with aluminum foil and bake about 20 minutes or until tender. Be sure and reserve juices from ham. Trim the fat from the ham. In a skillet on top of the stove, pour reserved ham juices, add sugar or packet of sweetner and about 1/2 cup brewed coffee. Heat until boiling. Pour into serving container. Enjoy with ham, some hot biscuits and scrambled eggs.

Red eye gravy has intense flavor with salty and bitter notes that pair well with biscuits, grits and ham. 1 1/2 cups milk
2 tablespoons vegetable oil, divided
1 cup strong black coffee
1/4 teaspoon pepper
hot biscuit

Steps:

  • Put the ham in a shallow container; pour milk over ham.
  • Cover and refrigerate 8 hours.
  • Remove ham from milk.
  • Cut slashes in fat to keep from curling.
  • Cook 1 slice of ham in 1 tablespoon oil in a heavy (cast-iron, preferably) skillet over low heat until light brown, turning once.
  • Remove from skillet and keep warm.
  • Drain off pan drippings and reserve for gravy.
  • Repeat procedure with remaining oil and ham.
  • Add reserved pan drippings, coffee, and pepper to skillet; bring to a boil and stir constantly.
  • Lower heat and simmer 3 minutes.
  • Serve gravy with ham and hot biscuits.

½ cup chopped fatty ham scraps
4 (1/4 inch thick) slices ham
salt and freshly ground black pepper to taste
⅛ teaspoon cayenne pepper, or to taste
1 teaspoon all-purpose flour
⅔ cup brewed coffee

Steps:

  • Heat oil in a medium skillet over medium heat. Cook and stir ham scraps until browned, about 5 minutes. Remove to a plate, reserving the grease in the pan.
  • Place ham slices in the pan and cook over medium heat until browned, about 5 minutes on each side. Season both sides with salt, black pepper, and cayenne pepper. Remove ham and reserve on a plate.
  • Reduce heat to medium-low and sprinkle flour over the pan drippings. Cook and stir for 2 minutes. Increase heat to medium-high and pour in coffee into the pan. Cook and stir until combined and thickened. Season to taste. Return ham to the pan to warm through.
