EARL GREY ICED TEA

1 cup sugar
1 cup water
5 cups water
5 Earl Grey tea bags
4 dried or fresh lemon slices, plus extra for garnish (see Cook's Note)
Ice
Sparkling water

Steps:

  • For the syrup: In a small saucepan, combine the sugar and water over medium heat. Bring the mixture to a boil, reduce the heat, and simmer until the sugar has dissolved, stirring occasionally, about 5 minutes. Remove the pan from the heat and allow the syrup to cool, about 20 minutes.
  • For the tea: In a medium saucepan, bring the water to a boil over medium-high heat. Add the tea bags and lemon slices. Let the mixture cool to room temperature, about 1 hour. Remove the tea bags and discard.
  • Pour the syrup and tea mixture into an ice-filled pitcher. Pour into glasses and add a splash of sparkling water. Garnish with lemon slices and serve.

1 lime, very thinly sliced

Steps:

  • Brew the tea in 4 cups hot water and let steep a couple of minutes.
  • Strain through a sieve, and then stir in the sugar and lime until all the sugar dissolves. Serve over ice.

SWEET RASPBERRY LIME ICED TEA

5 bags raspberry zinger tea
6 cups water
1 cup sugar
1 cup water
1/2 pint raspberries
1 lime, cut into wedges
Mint sprigs

Steps:

  • Put the tea bags in an 8-cup measuring cup or heat safe bowl. Boil the water, pour it over the tea bags, and allow to steep for at least 10 minutes. Allow to cool and remove tea bags.
  • In a small saucepan combine the sugar and 1 cup water and bring to a boil. Cook briefly until sugar is dissolved. Remove from heat and add raspberries. Let come to room temperature.
  • Combine the tea and raspberry sugar syrup, to taste. Put ice into 4 (12-ounce) glasses. To each squeeze in a wedge of lime, pour sugared tea over, and garnish with a sprig of mint.

My grandma has made this version for as long as I can remember and it is the BEST!! Not too sweet, and not too bitter...and the fresh lime juice --- amazing!!!

Steps:

  • Pour the water into a gallon sized jar over the tea bags. Allow to steep for 45 minutes. Remove and discard the tea bags. Stir in the sugar and lime juice until the sugar has dissolved. Cool to room temperature; refrigerate until cold before serving.

8 green tea bags
1 bunch of fresh mint
1 1/2 cups sugar
1/2 cup freshly squeezed lime juice
6 fresh mint sprigs
1 medium lime, cut into sixths

Steps:

  • For the tea:.
  • Place water in a medium pot and bring to a simmer over high heat.
  • When water simmers, remove from heat, add tea bags and mint, cover and let steep for 10 minutes.
  • Once tea has steeped, discard tea bags, add sugar, and stir until sugar is completely dissolved.
  • Let tea cool to room temperature, then place in the refrigerator to cool completely, about 2 hours.
  • To serve:.
  • Once tea is cold, remove mint and stir in lime juice.
  • Taste and adjust with more lime juice or sugar as desired.
  • Serve over ice with a sprig of mint and a wedge of lime.

A very refreshing summer drink. This recipe is from Iced Tea by Fred Thompson. It is suggested in the book that some crushed mint leaves and sour mash whisky can be added for a nice cocktail. I made it using splenda which worked out very well. Prep time includes time to bring water to a boil.

6 regular tea bags (I use lipton)
1 cup granulated sugar
1 (6 ounce) can frozen limeade concentrate, thawed
lime wedge, for garnish
ice, for serving

Steps:

  • Bring 4 cups of water to a boil. Remove from heat and add tea bags. Steep for 5 minutes. Remove tea bags without squeezing( squeezing can add bitterness).
  • While tea is steeping, mix the limeade and sugar in a 2 quart heat-proof pitcher.
  • Pour the tea into the pitcher and stir. Add the other 3 cups of cold water and let cool, then chill.
  • Serve over ice with a lime wedge on the glass.
