- Position the rack in the center of the oven and preheat the oven to 350 degrees F.
- Line a heavy large baking sheet with parchment paper. Stir the almonds, flour and zest in a medium bowl. Stir the sugar, butter, cream, and honey in a heavy medium saucepan over medium heat until the sugar dissolves. Bring the mixture to a boil. Remove the pan from the heat. Stir in the almond mixture. Cool the batter for 20 minutes, stirring occasionally. Using 2 teaspoons of batter for each cookie, spoon 8 mounds of the batter onto the prepared baking sheet, spacing evenly apart (the cookies will spread). Flatten the batter slightly with your finger.
- Bake the cookies until they are lacy and golden brown, about 10 minutes. Gently slide the parchment paper with the cookies onto a rack and cool completely. Transfer the cookies to paper towels. Repeat with the remaining batter, lining the baking sheets with clean parchment for each batch. (The cookies can be made up to this point 2 months ahead. Cool completely, then store airtight in the freezer. Defrost before continuing.)
- Stir the chocolate in a bowl set over a saucepan of simmering water until the chocolate melts. Spread the melted chocolate over the bottom of 1 cookie. Top with a second cookie, bottom side down, pressing lightly to adhere. Repeat with the remaining cookies and chocolate.
CRUSTLESS FLORENTINE TART
You can cut this tart in small wedges and serve as an appetizer or as an additional side dish, or cut larger pieces for a light entree. Since it is served chilled or at room temperature, this makes perfect picnic food.

- Preheat oven to 350°.
- Cook the frozen spinach according to package directions.
- If using fresh spinach, wash it, remove the stems and cook with just as much water as will cling to the leaves.
- Cool and drain the spinach well; squeeze dry to remove excess juice.
- Combine with eggs, grated Parmesan, mace or nutmeg, seasoned salt, and ricotta cheese.
- Rub a 10-inch pie pan with olive oil and spread the spinach mixture evenly around the pan.
- Top with pine nuts.
- Bake for 20 minutes.
- Cool on a rack and refrigerate until packing your picnic basket.
- Remove from cooler about one hour before serving, depending on weather conditions.

These are delicious little quiche tarts perfect for a party, shower, or just to have on hand for fast breakfasts during the week. Try substituting different fillings to suit your own taste. Any variety of cheese can be used.

- Preheat oven to 375 degrees F (190 degrees C). Arrange tart shells in 2 muffin tins; line shell each with a layer of pie weights or dried beans.
- Bake shells in the preheated oven until edges of crusts are lightly browned and about 75% cooked, 5 to 10 minutes.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; crumble when cooled.
- Divide 1 cup Swiss cheese, bacon, and green onions evenly into the tart shells.
- Whisk eggs, milk, mustard, salt, and black pepper together in a bowl. Ladle egg mixture into each tart shell about 2/3 full. Top each tart with the remaining 1/4 cup Swiss cheese.
- Bake in the preheated oven until egg is set in the middle of each tart and shells are browned, 25 to 30 minutes.

- Melt 2 tablespoons of butter in a small bowl in the microwave or in a small pan on the stove top. Use a pastry brush or paper towel to coat the inside of a 8 or 9-inch cake pan with the melted butter. Cut a piece of parchment paper to fit the inside of the bottom of the pan, place it in the pan, and brush the top of the paper with melted butter. Sprinkle a couple tablespoons of sugar inside the pan and shake it around to coat the bottom and sides of the pan completely.
- Add 3/4 cup sugar, eggs and egg yolks, cornstarch and salt to a large heavy bottomed saucepan. Whisk to combine. Slowly add the milk and cream, whisking constantly to combine.
- Cook over medium-low heat, whisking constantly, just until the custard begins to thicken and you can see the marks of the whisk in the custard as you stir. If you have one, a thermometer can be helpful - cook the custard to 160 degrees.
- Remove the pan from the heat and press the custard through a fine mesh sieve set over a large bowl. Stir in the vanilla and almond extracts.

- First blind bake the pastry case, oven to 180C. Roll the shortcrust pastry about 5cm larger than a 20cm tart tin. Line the tin with the pastry, pressing the pastry into the fluted side. Trim the edges slightly. Chill for 30minutes. With a fork, prick over the base of the pastry. Cover with parchment paper, fill the case with baking beans. Bake for 10 mins. Remove the beans and paper and bake for another 5-7 mins until the middle is golden and dry. Leave to cool.
- In a bowl, mix the brown sugar, golden syrup, eggs, double cream until smooth. Folding in the chopped nuts and fruit. Mix until all is incorporated. Pour the mixture onto the baked crust, evenly spread out the mixture. Bake for 25-30 minutes until baked. Cover with parchment halfway if the nuts start to brown too quickly. Allow to cool completely before cutting.
- Melt the dark chocolate with the oil until smooth. place into a piping bag and drizzle in a zig zag across the cooled tart to decorate. Go wild with your chocolate drizzle.
