MASHED POTATO-TOPPED HOT DOGS
INSTEAD of the usual hot dog and bun meal, I like to make more of a main meal. It's a great way to use up leftover mashed potatoes and the toppings can be varied. Best of all, it's kid-friendly and very easy to make to fit everyone's preferences.

- Make a lengthwise cut three-fourths of the way through each hot dog. Open hot dogs and place cut side up on a baking sheet. Top with mashed potatoes and cheese. , Bake at 350° for 5-10 minutes or until cheese is melted. Spread with salsa and sprinkle with onions.

BARBECUE HOT DOGS

- Preheat a grill to medium. Grill 8 hot dogs, turning, until lightly charred in spots, 5 to 7 minutes, brushing with barbecue sauce during the last minute of cooking. Toast 8 hot dog buns on the grill until marked, about 30 seconds. Serve the hot dogs on the toasted buns with assorted toppings.
MOLLY'S CHICAGO DOG MEATLOAF WITH MUSTARD GLAZE

- For the meatloaf: Preheat the oven to 350 degrees F. Grease a 9-by-5-inch loaf pan with cooking spray.
- Set a medium skillet over medium heat and add the olive oil. Add the onions and saute until starting to brown, about 10 minutes. Allow to cool slightly.
- Meanwhile, combine the milk, poppy seeds and hot dog buns in a large bowl and toss gently to combine; allow the milk to soak into the buns. Then, add the relish, Worcestershire sauce, kosher salt, celery salt, peppers, eggs, 2 tablespoons mustard and a few turns of black pepper to the bowl with the hot dog buns and stir to combine. Add the cooled onions. Add the ground beef and mix with your hands to combine.
- Transfer half of the mixture to the prepared loaf pan, place the hot dogs on top on a diagonal so they run down the center and then cover them up with the remaining half of the beef mixture, smoothing it out on top.
- In a small bowl, combine the brown sugar and remaining 4 tablespoons mustard and brush it over the top of the meatloaf. Bake until the internal temperature is 155 degrees F, about 50 minutes. Let sit for 10 minutes.
- For the topping: Top with the tomato wedges, pickle slices, a sprinkle of poppy seeds, a sprinkle of celery salt and sport peppers before serving.
GRILLED TRIPLE-DECKER HOT DOG SANDWICH

- Heat grill to 450 degrees F.
- Grill the hot dogs until nice and charred on both sides, 3 to 4 minutes per side. Butter the cut sides of the hoagie roll halves and grill, cut side-down, until charred, 1 to 2 minutes.
- Using a skewer or the tip of a small paring knife, poke about 10 holes in the bottom of a TK pan. Spray the entire pan with nonstick cooking spray (this is an important step). Now, layer in this order: one-third each of the charred hot dogs, Cheddar, provolone and salami. Repeat the layers 2 more times, making sure to finish with a layer of salami. Make sure that every layer is a snug fit, like you would a lasagna.
- Put the pan on the grill and close the lid. Grill until the cheese has melted, 8 to 10 minutes. Remove from the grill and let rest for about 5 minutes. Run a paring knife around the edge of the pan to loosen the loaf. Turn the pan out onto a cutting board, unveiling the hot dog loaf. Slice the loaf crosswise into 6 pieces, just as you would a meatloaf. To build your sandwich: start with your hot dog loaf on the bottom bun, then top with mustard, lettuce, tomato and a sprinkling of celery salt. Finish with the top bun.
HOT DOG A LA POTATO
This is so easy, so cheap, and filling. It is great for first time cooks, and what to do with leftover mashed potatoes. Kids can make these. You can easily make these in a microwave too.

- Preheat the oven to 350 degrees F (175 degrees C).
- Slit hot dogs lengthwise down the center, but do not cut in half. Spread them open, and place them in a 9x9 inch square baking dish. Pile an equal amount of the mashed potatoes onto each hot dog.
- Bake for 10 minutes in the preheated oven. Turn the oven off, and remove the dish of hot dogs. Place one slice of cheese onto each one, and return them to the oven until the cheese has melted.

HOT DOGS IN A LOAF
I love this simple yet filling dish, it is always a hit with kids too. I use a larger dish, I believe its a 8x11 and I double the dough mix, It makes a nicer dish and your hot dogs don't get squished. I put a slice of cheese, and sweet relish in the hot dog slice and then use catsup and mustard as a condiment.

- 1. Heat oven to 400 degrees. Grease loaf pan 9x5x3 inches. Split hot dogs lengthwise, not cutting completely through. Fill each hot dog with a piece of cheese, relish and catsup. Mix remaining ingredients with a fork; beat vigorously 30 seconds. Spread in pan. Arrange hot dogs crosswise on dough, curving slightly and pressing to fit pan. Press into dough slightly. Bake until bread is light brown, about 20 minutes. To serve cut bread between hot dogs.
EASY GOOD HOMEMADE HOTDOG BUNS
WAY better than the teeny, fall apart store-bought ones!!! Had that frozen bread dough in the freezer and thought...why not? Ha! They came out GREAT!! 1 loaf made 6 large buns, too!!! - 1. The night before, tightly wrap 1 frozen loaf bread dough in plastic wrap and refrigerate overnight. Next morning, unwrap and cut loaf lengthwise down center. Cut each long piece into 3 equal sections making 6 equal pieces total. Pinch cut edges together so buns will eventually come out smooth, and roll into small ropes. *They should be about the size of a regular cooked hotdog. Place on greased cookie sheet. Brush with half the melted butter. Cover lightly with plastic wrap, sealing the edges of the plastic wrap to the cookie sheet so that no air gets inside. Let rise in warm place til doubled. (Mine took about 2 1/2 hours.) Lightly brush each with rest of melted butter and sprinkle with poppy seeds if desired. Bake in 350º oven for about 20 minutes til golden brown. You may want to turn your cookie sheet around half-way through baking for even browning of your buns. Cool on wire rack for about 5-10 minutes. Cut open with SHARP serrated knife. *These are fantastic for brats, too. And hold up extremely well for chili or coney dogs!
ITALIAN STYLE HOT DOGS

- In a saucepan over medium-high heat, heat enough oil to cover the potatoes to frying temperature (325 to 350 degrees F), and add the potato rounds. Turn them over when they begin to stick to the pan, and fry until the potatoes are browned and crispy on the outside. (The potatoes can also be cooked in a deep fryer for 3 to 5 minutes.) Set the potatoes aside, and turn the heat down to medium.
- Add the hot dogs, onions and peppers to the remaining oil in the saucepan. Let them cook together and exchange flavors until the hot dogs are done and the onions and peppers are beginning to brown.
- To build The Single: Cut the bread into quarters. Starting at the point of one wedge, slice open through the soft middle of the bread, not across the crust and not completely in half. You should be able to peel open the bread just enough to make a pocket for the dog. Mustard can be added to the inside of the bun. Place one dog on the bottom, then pile with the onions, peppers and about half a potato worth of rounds. If the toppings are overflowing the bun, you're doing it just right. Ketchup and sprinkled red pepper flakes can be added on top. Have a fork handy!
- To build The Double: Cut the bread in half. Slice open a pocket in the middle of the half-moon. Put 2 hot dogs on the bottom and double everything, especially the potato rounds - about 1 potato's worth can fit on top!
