PEANUT BUTTER FUDGE



Peanut butter fudge image

Combine peanut butter with fudge for an out-of-this-world flavour combination. Topped with peanuts, it makes the perfect gift for any peanut butter addict

Yield Cuts into 36 pieces

Number Of Ingredients 7

450g golden caster sugar
400g double cream
50g butter
1 tbsp glucose syrup
1 tbsp vanilla bean paste
2-3 tbsp crunchy peanut butter
small handful of chopped salted peanuts

Steps:

  • Line a 20 x 20cm cake tin with baking parchment. Tip the sugar, cream, butter and glucose syrup into a large pan. Warm over a low heat to dissolve the sugar and melt the butter, stirring occasionally.
  • When the sugar has dissolved, put a sugar thermometer in the mixture, making sure the end is completely covered by the syrup - if it's not, transfer the mixture to a smaller pan that's still large enough for the syrup to bubble. Turn up the heat to medium-high and bring the syrup to the boil, stirring occasionally to stop it catching. When the thermometer reaches 116C - or 'soft ball' stage, remove the pan from the heat.
  • Leave the mixture to stand, undisturbed, for 5 mins, until the temperature drops to 110C, then stir in the vanilla bean paste, peanut butter and a good pinch of salt.
  • Remove the thermometer, then vigorously beat the mixture with a wooden spoon, checking the temperature every minute or so until it drops again to about 60C. By this time, the mixture will be really thick and have lost its glossy shine. Take the thermometer out and continue beating the mixture for a few more minutes. This part is crucial as it helps create small sugar crystals that give the fudge its smooth, creamy texture.
  • Quickly pour the fudge mixture into the prepared tin and smooth the surface using a spatula. Scatter the chopped peanuts. Leave to cool overnight at room temperature - don't put it in the fridge, as it will become sticky and won't set properly. Cut into 36 bite-sized pieces. Will keep in an airtight container at room temperature for up to two months.

I made this last night. Taking the basic frying pan fudge and making it peanut butter instead. The term frying pan is because it is dropped on waxed paper making them disc's like the bottom of a frying pan.

2 1/2 cup(s) sugar
1 stick(s) buttr
6 ounce(s) canned milk
4 - individual blocks of white chocolate (chopped into small chunks)
1/3 cup(s) peanut butter
1 teaspoon(s) vanilla
1/3 cup(s) almonds

Steps:

  • Chop nuts and set aside. Mix sugar, margarine, and milk together in a heavy frying pan and bring to a boil. Reduce heat to low and cook six more minutes, stirring occasionally. Remove from heat, and add white chocolate chunks, peanut butter and chopped nuts. Stir until fudge begins to form. Then quickly add vanilla flavoring. Drop fudge on wax paper with a teaspoon. if you use a tablespoon you will have larger than mouth sized pieces.
  • This makes a perfect color for the shell of a turtles back if you put it over pieces of nuts as a head and legs. Making a turtle.

This old-fashioned style of peanut butter fudge is not that easy to find out there. The ones I tend to run across always seem to be the soft, creamy version, which is not what I'm into. If it's going to feel like peanut butter in my mouth, then what's the point? No, I want something that feels dense and firm in my fingers but will almost instantly liquefy in when it hits my tongue.

1 pound powdered sugar
1 ¼ cups unsalted butter
1 ½ cups creamy peanut butter
½ teaspoon kosher salt
1 ½ teaspoons vanilla extract

Steps:

  • Sift sugar through a fine-mesh strainer into a large bowl.
  • Heat butter and peanut butter in a saucepan over medium heat. Whisk to combine and cook until bubbles appear on the edges, 3 to 5 minutes. Stir in salt and vanilla extract. Pour over powdered sugar in the bowl. Mix together using a spatula until smooth.
  • Spread mixture into an 8x8-inch baking pan lined with plastic wrap. Wrap fully and refrigerate until firm enough to cut but not too hard, 1 to 3 hours.
  • Unwrap fudge and cut into small cubes. Let warm up on the counter before cutting if needed.

1/2 cup whole milk
1-1/3 cups peanut butter
1 jar (7 ounces) marshmallow creme

  • Line an 8-in. square pan with foil; grease with butter., In a heavy saucepan, combine sugar and milk; bring to a boil over medium heat, stirring constantly. Boil 3 minutes, stirring constantly. 1 cup creamy natural peanut butter (I use Wild Friends)
1/4 cup melted virgin coconut oil
¼ cup pure maple syrup
½ tablespoon good-quality vanilla extract
½ cup chopped peanut butter cups (I prefer mini so you get big chunks!)
Maldon or fancy sea salt, for sprinkling on top

Steps:

  • Line a 8x4 inch loaf pan with parchment paper.
  • In a medium bowl, mix together the peanut butter, coconut oil, maple syrup and vanilla until smooth. Pour the fudge into the pan and tap the pan on the counter before putting in the freezer. Freeze for 10 minutes, then sprinkle chopped peanut butter cups on top of the fudge and press them in a bit if necessary. Sprinkle with a little Maldon sea salt. Freeze until firm, about 30 minutes-1 hour.
  • Once fudge is firm you can cut into 15 squares. Sometimes you have to wait a few minutes before cutting into. Store fudge in a freezer safe container in the freezer for up to 3 months.

1 cup light brown sugar
½ cup butter
1 (12 fluid ounce) can evaporated milk
1 (7 ounce) jar marshmallow creme
1 (16 ounce) jar peanut butter
1 teaspoon vanilla extract

Steps:

  • Grease a 9x13 inch baking dish.
  • In a medium saucepan over medium heat, combine sugar, brown sugar, butter and evaporated milk. Bring to a boil, stirring constantly, and boil for 7 minutes. Remove from heat; stir in marshmallow creme until well incorporated and melted. Stir in peanut butter and vanilla until smooth; spread in prepared pan. Let cool before cutting into squares.

  • Remove the pan from heat. Add the butter, Vanilla and peanut butter and mix until smooth. Add nuts, if using, and mix in. Immediately spread in prepared dish.
  • Place candy in a freezer or cold place until the candy is totally cooled. Cut and serve or store in an airtight container.
