Banana Bread French Toast with Peanut Butter Mousse image

1/4 cup heavy cream
1/4 cup milk
1/4 teaspoon grated nutmeg
4 eggs
1 loaf store-bought or homemade banana bread, recipe follows, sliced into 1-inch-thick slices
3 tablespoons butter
3 bananas
1 cup sugar
Peanut Butter Mousse, recipe follows
2 ounces dark chocolate, grated, for garnish
Cinnamon Maple Syrup, recipe follows
Nonstick cooking spray, for the pan
1 cup sugar
7 ounces (14 tablespoons) butter, at room temperature
2 eggs, at room temperature
1 cup mashed banana
1/2 cup buttermilk, at room temperature
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
Pinch ground cloves
2 1/4 cups heavy cream
9 ounces cream cheese, at room temperature
8 ounces peanut butter
1/2 cup sugar
1/2 teaspoon salt
1/2 teaspoon vanilla
3 cinnamon sticks
2 cups maple syrup

Steps:

  • Preheat the oven to 200 degrees F.
  • Whisk together the cream, milk, nutmeg and eggs in a bowl. Working in batches, soak the banana bread slices in the mixture.
  • Heat a skillet or griddle over medium heat with a bit of the butter. Cook a batch of the banana bread slices until browned, 4 to 5 minutes per side. Transfer to the oven to keep warm. Cook the remaining slices, adding more butter as needed.
  • Cut the bananas into oblique slices, place on a baking sheet and coat with the sugar. Brulee them with a kitchen torch or under a broiler (or leave raw if you do not have a torch or broiler).
  • Arrange the French toast on plates, top with a quenelle (oval-shaped scoop) of the Peanut Butter Mousse, spread the bruleed bananas about, grate chocolate over the top of it all and serve with a side of the warm Cinnamon Maple Syrup.
  • Position an oven rack in the center of the oven and preheat to 350 degrees F. Spray an 8-by-4-inch loaf pan with nonstick spray and line the bottom of the pan with parchment paper.
  • In a stand mixer with the paddle attachment, cream the sugar and butter until light and fluffy, about 5 minutes. Add the eggs one at a time, scraping down the sides of the bowl between additions.
  • Combine the banana, buttermilk and vanilla in a bowl. Sift together the flour, baking soda, cinnamon, salt and cloves in a second bowl. Add half of the flour mixture to the butter mixture and paddle just to combine. Scrape down the sides and then add the buttermilk and banana mixture. Scrape down again, and add the remaining flour until just combined uniformly.
  • Pour the batter into the prepared loaf pan and bake on the center rack until a toothpick inserted in the loaf comes out clean, 50 minutes to an hour, depending on your oven. Let cool for about 10 minutes, then remove from the pan to cool completely.
  • Whisk the cream to medium peaks and set aside.
  • In a stand mixer with the paddle attachment, cream together the cream cheese, peanut butter, sugar, salt and vanilla, scraping down the sides of the bowl halfway, until the mixture is uniform, about 5 minutes. Fold the whipped cream into the peanut butter mixture, a third at a time. Refrigerate until ready to use.
  • Blacken the cinnamon a bit on a gas burner.
  • Put the maple syrup in a pan and heat until warm. Remove from the heat, add the blackened cinnamon sticks and let steep in the syrup for 20 minutes.

12 slices bread
6 tablespoons jelly or jam
3 large eggs
3/4 cup 2% milk

Steps:

  • Spread peanut butter on 6 slices of bread; spread jelly on the remaining 6 slices of bread. Put 1 slice of each together to form sandwiches. In a large bowl, whisk the eggs, milk and salt. Dip both sides of sandwiches in egg mixture. , In a large skillet, melt butter over medium heat. Cook sandwiches for 2-3 minutes on each side or until golden brown.

1/4 cup grape jelly or jelly of your choice
8 slices sandwich bread
2 large eggs
1/4 cup 2% milk
2 tablespoons butter
Sliced fresh strawberries and chopped salted peanuts, optional
Confectioners' sugar or maple syrup

Steps:

  • Spread peanut butter and jelly over four slices of bread. Top with remaining bread. In a shallow bowl, whisk eggs and milk until blended., On a griddle, melt butter over medium heat. Dip both sides of sandwiches in egg mixture. Place on griddle; toast 2-3 minutes on each side or until golden brown. If desired, top with strawberries and peanuts. ½ cup creamy peanut butter
16 slices ½-inch thick brioche
4 large eggs
¼ cup heavy cream
2 tsp pure vanilla extract
4 cups cornflakes
4 tbsp unsalted butter
confectioners' sugar
4 cups mixed berries
maple syrup

Steps:

  • Preheat the oven to 250 degrees F.
  • Line a large baking sheet with wax paper.
  • Spread 1 tablespoon of peanut butter on each of the 8 slices of brioche, and cover with the remaining 8 slices, making sandwiches.
  • On a pie plate, beat the eggs with cream and vanilla.
  • In another pie plate, spread the crushed cornflakes.
  • Lightly soak the sandwiches in the egg mixture, then dredge in the cornflakes, pressing to help them adhere.
  • Transfer the sandwiches to the baking sheet.
  • Melt 1 tablespoon of butter in a very large skillet.
  • Add 4 of the sandwiches and cook over moderate heat for 2 to 3 minutes until golden and crisp on the bottom.
  • Transfer the half-cooked sandwiches to the baking sheet.
  • Add another 1 tablespoon of the butter to the skillet, flip the sandwiches back into the skillet, and cook for about 2 minutes longer until golden and crisp on the bottom.
  • Transfer to the baking sheet and keep warm in the oven.
  • Wipe out the skillet and cook the remaining sandwiches.
  • Transfer the French toast to plates and dust with confectioners' sugar.
  • Top with the berries and drizzle with maple syrup.

1 cup brown sugar
⅓ cup peanut butter
1 large banana, sliced

  • Preheat the oven to 375˚F (190˚C).
  • On a cutting board, cut the baguette in half lengthwise, then slice into 1-inch (2 ½ cm) pieces.
  • In a bowl, whisk together the eggs, ½ cup heavy cream, the vanilla, and cinnamon.
