SMOKED SAUSAGE BREAKFAST HASH

- Preheat oven to 425°. In a large bowl, toss together the first 6 ingredients. Spread evenly in a greased 15x10x1-in. baking pan. Roast 20-25 minutes or until vegetables are tender, stirring once. Stir in spinach; roast 5 minutes longer., Meanwhile, in a large nonstick skillet, heat butter over medium-high heat. Break eggs, 1 at a time, into pan; immediately reduce heat to low. Cook until whites are completely set and yolks begin to thicken but are not hard, about 5 minutes. Serve over hash.

- In a large skillet, melt 1 tablespoon butter over medium heat; stir in the potatoes, sausage, green and red peppers, salt and cayenne. Cover and cook until potatoes and vegetables are tender, 12-14 minutes, stirring occasionally. Stir in cheese., In a large skillet, fry eggs in remaining butter as desired. Sprinkle with pepper. Serve eggs with hash and, if desired, pepper sauce.

- In a large skillet oven medium-high heat, add olive oil, then onions and bell peppers. Cook, stirring often, for about 3 minutes. Add sausage and continue to cook and stir for another 3-4 minutes, or until vegetables are soft. Set aside.
- Layer thawed shredded potatoes in the bottom of the pan. (*tip - to thaw quickly, spread out on a cookie sheet and place in the oven while it heats and while you prepare the rest of the ingredients). Top with sausage and pepper mixture, then cheese, then eggs. Use a fork or spoon to stir ingredients together slightly to make sure that the eggs are evenly distributed.
