Tiramisu Brownies combine a rich brownie base, spongy ladyfinger cookies, strong coffee and creamy mascarpone for a portable bar version of everyone's favorite classic Italian dessert.

12 oz. chocolate chips
1 cup unsalted butter, softened
1 cup sugar
4 whole eggs
4 egg whites
1 cup cake flour
8 ounces mascarpone cheese, room temperature
8 ounces cream cheese, room temperature
1/4 cup sugar
4 egg whites
2 teaspoons pure vanilla extract
1 package soft ladyfingers
1 cup Italian roast coffee, brewed

Steps:

  • In a large bowl, melt the chocolate. Stir until smooth and leave it to cool.
  • Heat the oven to 350°F. Line a 13″ x 9″ baking pan with parchment paper.
  • Add chocolate to a mixing bowl with the paddle attachment on. Beat in the butter followed by 1 cup of sugar and the 4 eggs and 4 egg whites. Add the flour and mix on low speed until just combined. Pour the batter into the prepared baking pan, reserving 1 cup of the brownie batter.
  • Lay the ladyfingers upside down on top of the batter, and push down slightly. Using a pastry brush, carefully brush the brewed coffee over the ladyfingers until they are saturated.
  • In another bowl, combine the mascarpone cheese, cream cheese, and 1/4 cup of sugar, 4 egg whites and vanilla extract. Spread topping over ladyfingers over ladyfingers. Place spoonful of brownie batter on top of the creamy filling and swirl it lightly with a toothpick or knife.
  • Bake for 45 to 50 minutes or until center is almost set and brownies begin to pull away from sides of pan. Cool completely in the pan before slicing it.

1/2 cup butter or margarine, softened
1/4 cup powdered sugar
1 cup granulated sugar
3/4 cup whipping cream
1/4 cup butter or margarine, melted
3 tablespoons Gold Medal™ all-purpose flour
1 tablespoon instant coffee granules or crystals
1/2 teaspoon vanilla
2 eggs
3 oz semisweet baking chocolate, grated (about 1 1/4 cups)
1 package (3 oz) cream cheese, softened
1/4 cup whipping cream
Chocolate curls, if desired

Steps:

  • Heat oven to 350°F. In medium bowl, beat 3/4 cup flour, 1/2 cup softened butter and the powdered sugar with electric mixer on medium speed until soft dough forms. Spread evenly in bottom of ungreased 8-inch square pan. Bake 10 minutes.
  • Meanwhile, in medium bowl, beat remaining bar ingredients except grated chocolate with wire whisk until smooth.
  • Sprinkle 1 cup of the grated chocolate over hot baked crust. Pour egg mixture over chocolate.
  • Bake 40 to 45 minutes or until golden brown and set. Cool completely in pan on cooling rack, about 1 hour 15 minutes.
  • In medium bowl, beat cream cheese and 1/4 cup whipping cream on medium speed about 2 minutes or until fluffy. Spread over cooled bars. Sprinkle with remaining grated chocolate. For bars, cut into 6 rows by 4 rows. Garnish each with chocolate curl. Store covered in refrigerator.

1 box (16 oz) Betty Crocker™ Supreme original brownie mix
1/3 cup vegetable oil
2 eggs
5 tablespoons cold brewed coffee
6 oz (from 8-oz package) cream cheese, softened
1/3 cup powdered sugar
1/4 teaspoon rum extract
1 cup heavy whipping cream
2 teaspoons unsweetened baking cocoa

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Line 9-inch square pan with foil, allowing some to hang over edges of pan. Grease bottom and sides of foil with shortening or cooking spray.
  • In large bowl, stir together brownie mix, chocolate syrup pouch (from brownie mix box), oil, eggs and 3 tablespoons of the coffee until well blended. Spread in pan.
  • Bake 28 to 31 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. Carefully brush remaining 2 tablespoons coffee over warm brownies. Cool completely on cooling rack, about 1 hour.
  • In medium bowl, beat cream cheese and powdered sugar with electric mixer on medium speed until smooth. Beat in rum extract; set aside. In chilled small bowl, beat whipping cream with electric mixer on high speed until stiff peaks form. Fold whipped cream into cream cheese mixture. Spread over cooled brownies.
  • Sift or sprinkle cocoa over top. Cover and refrigerate at least 2 hours until topping is firm. Using foil to lift, remove brownies from pan, and peel foil away. Cut into 4 rows by 4 rows. Store covered in refrigerator.

1/3 cup baking cocoa
1/4 cup sugar
2 teaspoons instant coffee granules
1 large egg, lightly beaten
1-1/2 cups graham cracker crumbs
1 cup finely chopped sweetened shredded coconut
1/2 cup chopped pecans
FILLING:
1/2 cup butter, softened
2 tablespoons heavy whipping cream
1 tablespoon rum
1 teaspoon vanilla extract
2 cups confectioners' sugar
GLAZE:
2/3 cup semisweet chocolate chips
2 tablespoons butter
Baking cocoa

Steps:

  • In large heavy saucepan, combine the butter, cocoa, sugar and coffee. Cook and stir over medium-low heat until melted. Whisk a small amount of hot mixture into egg. Return all to the pan, whisking constantly. Cook and stir over medium-low heat until mixture reaches 160°. Remove from the heat., Stir in the cracker crumbs, coconut and pecans. Press into a foil-lined 8-in. square baking pan. Refrigerate for 30 minutes or until set., For filling, in a large bowl, beat the butter, whipping cream, rum and vanilla until blended. Gradually beat in confectioners' sugar until smooth; spread over crust., In a microwave, melt chocolate chips and butter; stir until smooth. Spread over top. Refrigerate until set. Cut into bars and dust with cocoa.

1/3 cup coffee liqueur
1/3 cup strong brewed coffee
1.5 (4 ounce) semisweet chocolate bars, divided
3/4 cup butter
2 1/4 cups sugar, divided
3 large eggs
1 cup all-purpose flour
1 (8 ounce) container mascarpone cheese
1 teaspoon vanilla extract
1 cup whipping cream

Steps:

  • Preheat oven to 350°. Arrange pecans in a single layer on a baking sheet, and bake 5 to 7 minutes or until lightly toasted and fragrant.
  • Stir together coffee liqueur and coffee.
  • Coarsely chop 1 chocolate bar. Microwave coarsely chopped chocolate and butter in a large microwave-safe bowl at MEDIUM (50% power) 1 to 1 1/2 minutes or until melted and smooth, stirring at 30-second intervals. Whisk in 2 cups sugar and eggs, whisking until blended; stir in flour, stirring just until blended. Spoon batter into a lightly greased 11- x 7-inch pan.
  • Bake at 350° for 35 minutes or until center is set. Remove from oven, and cool in pan on a wire rack 10 minutes. Pierce brownie multiple times using the tines of a fork. Pour coffee mixture over brownie. Let cool on wire rack 1 hour or until completely cool.
  • Whisk together remaining 1/4 cup sugar, mascarpone cheese, and vanilla in a large bowl. Beat whipping cream at medium speed with an electric mixer until stiff peaks form. Fold whipped cream into mascarpone mixture.
  • Crumble half of brownies, and divide evenly among 6 (8-oz.) glasses. Spoon half of mascarpone cheese mixture over brownies. Repeat procedure with remaining brownies and mascarpone cheese mixture.
  • Chop remaining half of chocolate bar into thin shreds. Sprinkle chocolate and pecans over mascarpone cheese mixture. Serve immediately, or cover and chill up to 24 hours.
  • Mascarpone gives the topping a special flavor, but an equal amount of softened cream cheese may be substituted. Almond-flavored liqueur makes a delicious substitute for coffee liqueur.

⅓ cup espresso, or strong coffee
⅓ cup vegetable oil
1 egg
1 cup heavy cream
½ cup powdered sugar
15 oz mascarpone cheese
1 tablespoon espresso powder
1 teaspoon vanilla extract

Steps:

  • Pre-heat oven to 350ºF (180°C).
  • Combine brownie mix, egg, vegetable oil, and strong coffee into a large bowl. Mix well.
  • Pour batter into a parchment lined 10x15-inch (25x38 cm) baking sheet.
  • Bake for about 10 minutes.
  • While the brownie is baking and cooling, mix mascarpone cheese, espresso powder, and vanilla extract together in a bowl until smooth.
  • In a separate bowl, whip the heavy cream and gradually add in powdered sugar.
