1 cup unsalted butter
1 cup crunchy peanut butter
1 cup white sugar
1 cup packed brown sugar
2 large eggs eggs
2 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 ½ teaspoons baking soda

Steps:

  • Cream butter, peanut butter, and sugars together in a bowl; beat in eggs.
  • In a separate bowl, sift flour, baking powder, baking soda, and salt; stir into butter mixture. Put dough in refrigerator for 1 hour.
  • Roll dough into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a crisscross pattern. Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown.

2 cups peanut butter
2 cups white sugar
2 eggs
2 teaspoons baking soda
1 pinch salt
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a medium bowl, stir peanut butter and sugar together until smooth. Beat in the eggs, one at a time, then stir in the baking soda, salt, and vanilla. Roll dough into 1 inch balls and place them 2 inches apart onto the prepared cookie sheets. Press a criss-cross into the top using the back of a fork.

1/2 cup butter, softened
1 1/2 cups packed light brown sugar
1 cup chunky peanut butter
1 tablespoon vanilla extract
1 teaspoon cayenne pepper
3/4 teaspoon salt
3/4 teaspoon baking soda
1 egg
1 3/4 cups all-purpose flour

Steps:

  • Preheat oven to 400°F.
  • Grease cookie sheet.
  • Mix the butter and the sugar until creamy.
  • Add the peanut butter, vanilla, cayenne, salt, and baking soda and mix well.
  • Add the egg and mix it inches.
  • Add the flour, 1/4 cup at a time till all incorporated.
  • Form into 1 inch balls and flatten slightly before placing on the cookie sheet about 1 inch apart.
  • Here's where you make that criss-cross design with the fork if you want.
  • Bake 8 or so minutes for chewy cookies, a bit longer for crunchy cookies.
  • Cool on rack when done.

3/4 cup sugar
3/4 cup light brown sugar
6 ounces (1 1/2 sticks) unsalted butter, softened
3/4 cup peanut butter
2 eggs
1 3/4 cups flour
2 teaspoons baking soda
1/4 teaspoon salt
1/2 cup chocolate chips

Steps:

  • Preheat the oven to 350 degrees F.
  • In a mixer with a paddle attachment, combine the sugars, butter and peanut butter. Beat until light and fluffy, about 3 minutes. Add the eggs, one at a time, beating after each addition. Sift together the flour, the baking soda and the salt and add to the dough. Dough should be stiff enough to shape with your hands. Make 1-inch balls and place on a lightly greased cookie sheet. Gently press thumb into the balls to flatten the cookies slightly and make an indentation in the center of the cookie. Press 3 or 4 chocolate chips into the indentation.
  • Bake for 15 to 20 minutes, or until lightly golden brown. Remove cookies from the oven and transfer to wire racks to cool.

200g peanut butter (crunchy or smooth is fine)
175g golden caster sugar
¼ tsp fine table salt
1 large egg

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line 2 large baking trays with baking parchment.
  • Measure the peanut butter and sugar into a bowl. Add ¼ tsp fine table salt and mix well with a wooden spoon. Add the egg and mix again until the mixture forms a dough.
  • Break off cherry tomato sized chunks of dough and place, well spaced apart, on the trays. Press the cookies down with the back of a fork to squash them a little. The cookies can now be frozen for 2 months, cook from frozen adding an extra min or 2 to the cooking time.
  • Bake for 12 mins, until golden around the edges and paler in the centre. Cool on the trays for 10 mins, then transfer to a wire rack and cool completely. Store in a cookie jar for up to 3 days.

1 cup butter
1 cup sugar
1 cup brown sugar
2 eggs
2 cups flour
1 cup cocoa powder
1 teaspoon baking soda
1 teaspoon cayenne pepper
1/2 teaspoon salt
1 cup chocolate chips

Steps:

  • Preheat oven to 350°F.
  • Cream butter and both sugars until fluffy.
  • Add eggs and blend well.
  • Add cayenne, cocoa, baking soda and salt and blend very well. It's important to blend this stage completely so that heat is evenly distributed.
  • Add flour and blend.
  • Fold in chips.
  • Refrigerate for one hour.
  • Drop teaspoonfuls onto lightly greased cookie sheet.
