THE BEST PEANUT BUTTER COOKIES

The Best Peanut Butter Cookies image

We wanted a super peanut buttery treat but found that store-bought peanut butter made the cookies a bit gummy when we used more than 1 cup. So we ground roasted peanuts ourselves and added that to the batter for an additional boost of flavor. Honey and melted butter add richness and create a soft and chewy cookie with an irresistible crackled exterior. We topped the dough balls with raw sugar for extra crunch and a hit of sweetness that balances the salt of the peanuts.

Time 1h30m

Yield 24 cookies

Number Of Ingredients 12

3/4 cup salted dry-roasted peanuts
1 1/2 cups all-purpose flour (see Cook's Note)
1 teaspoon baking soda
3/4 teaspoon kosher salt
1 1/2 cups packed light brown sugar
1/4 cup granulated sugar
1 cup creamy peanut butter (do not use "natural" peanut butter)
2 large eggs
1/2 stick (4 tablespoons) unsalted butter, melted and cooled
3 tablespoons honey
2 teaspoons pure vanilla extract
1/4 cup raw sugar

Steps:

  • Position a rack in the center of the oven and preheat to 375 degrees F. Line 2 rimmed baking sheets with parchment paper.
  • Process the peanuts in a food processor until very finely ground; it should be the consistency of almond flour. Whisk together the ground peanuts, flour, baking soda and salt in a medium bowl.
  • Beat the brown sugar, granulated sugar, peanut butter, eggs, melted butter, honey and vanilla in a large bowl with an electric mixer until completely smooth. Add the dry ingredients and beat on low until a soft dough forms.
  • Working with 2 tablespoons of dough at a time (or using a 1-ounce ice cream scoop), roll the dough into balls. Evenly space them on the prepared baking sheets (12 balls per sheet). Sprinkle with the raw sugar.
  • Bake the cookies, 1 baking sheet at a time, until the edges are just set and just beginning to brown, 12 to 15 minutes, rotating the baking sheet halfway through. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

LIGHTLY CURRIED PEANUT BISQUE

Lightly Curried Peanut Bisque image

Yield Makes 6 servings

Number Of Ingredients 19

3 tablespoons butter
2 medium celery ribs, trimmed and coursely chopped
1 large yellow onion, coarsely chopped
1 teaspoon curry powder
1/2 teaspoon ground cumin
1/8 teaspoon ground coriander
1/8 teaspoon ground turmeric
1/8 teaspoon ground hot red pepper (cayenne)
1/8 teaspoon black pepper
3/4 cup firmly packed chunky or creamy peanut butter
5 cups rich chicken stock or broth
1/2 cup coarsely chopped pecans
1/2 cup heavy cream
1/2 teaspoon salt, or to taste
Garnishes:
1/2 teaspoon sweet paprika
1/4 cup coarsely chopped roasted unsalted peanuts
2 tablespoons finely snipped fresh chives
6 tablespoons mango chutney (optional)

Steps:

  • 1. Melt the butter in a large, heavy saucepan over moderate heat. Add the celery and onion and sauté for 8 to 10 minutes or until limp and golden. Blend in the curry powder, cumin, coriander, turmeric, cayenne, and black pepper, then cook and stir 1 minute more.
  • 2. Add the peanut butter, then gradually mix in the chicken stock. Bring to a boil, adjust the heat so the soup bubbles gently, and simmer uncovered, stirring now and then, for 20 minutes or until the flavors "marry." Add the pecans and cook, stirring occasionally, for 2 minutes more. Remove the soup from the heat and cool for 10 minutes.
  • 3. Purée the soup by churning in batches in the food processor or in an electric blender at high speed. It will still be lumpy. Note: For a silky soup, force through a fine sieve.
  • 4. Return the soup to the pan, add the cream and salt, set over moderate heat, and bring to a simmer. Taste for salt and adjust as needed. Or, if you prefer, refrigerate the soup for up to two days. When ready to serve, reheat the soup or serve cold.
  • 5. Ladle into heated (or chilled) soup plates, and sprinkle each portion with paprika, peanuts, and chives. Then, if you like, top with the mango chutney.

  • Using a hand mixer or a stand mixer fitted with a paddle attachment, cream the butter and both sugars together on medium speed until smooth, about 1-2 minutes. Add the eggs and beat on high until combined, about 1 minute. Scrape down the sides and bottom of the bowl as needed. Add the peanut butter and vanilla, then beat on high speed until combined.
  • Add the dry ingredients to the wet ingredients, then mix on low until combined. With the mixer running on low speed, add the peanuts, if using. Dough will be thick and soft.
  • Cover and chill the dough for 1 hour in the refrigerator (and up to 2-3 days). If chilling for longer than a few hours, though, allow to sit at room temperature for at least 30 minutes before rolling and baking because the dough will be quite hard.

  • Preheat the oven to 350°F. Lightly grease (or line with parchment) two baking sheets., Beat together the shortening or butter, sugars, egg, vanilla, and peanut butter until smooth., Add the flour, baking soda, and salt to the peanut-butter mixture, beating gently until everything is well combined.
  • It may take awhile for this rather dry dough to come together; and when it does, it'll be quite stiff.
  • Only if necessary, drizzle in enough water to make the dough cohesive., Drop the cookie dough by tablespoonfuls onto the prepared baking sheets (a tablespoon cookie scoop works well here), leaving 2" between them., Use a fork to flatten each cookie to about 1/2" thick, making a cross-hatch design., Bake the cookies for 12 to 16 minutes, until they're barely beginning to brown around the edges; the tops won't have browned.
