Subtle flavors make these healthier peanut butter-banana-chocolate chip cookies. I mix up the ingredients all the time using whatever I have handy.

Ingredients

cooking spray
1 egg
1 cup peanut butter
½ cup plain instant oatmeal
1 medium banana
¼ cup white sugar
¼ cup semisweet chocolate chips
1 tablespoon vanilla extract

Steps:

Preheat the oven to 375 degrees F (190 degrees C). Coat a baking sheet with cooking spray.
Beat egg in a large bowl. Add peanut butter, oatmeal. banana, sugar, chocolate chips, and vanilla extract. Place 1-inch balls of dough onto the prepared baking sheet; press balls down using a spoon.
Bake in the preheated oven 9 to 12 minutes; cookies will look slightly raw. Cool 10 minutes before serving.

Ingredients

1 egg
⅓ cup peanut butter
½ cup mashed banana
1 tablespoon honey
1 cup whole wheat flour
½ cup wheat germ
1 egg white, lightly beaten, for brushing

Steps:

Preheat oven to 300 degrees F (150 degrees C). Lightly grease a baking sheet.
Stir together the egg, peanut butter, banana, and honey in a medium bowl; blend thoroughly. Stir in the flour and wheat germ; mix well. Turn dough out onto a floured board and roll to 1/4 inch thick. Cut into desired shapes with a cookie cutter, place on prepared baking sheet, and brush tops with egg white.
Bake biscuits in preheated oven until dried and golden brown, about 30 minutes, depending on size. Remove from oven and cool on a wire rack.

1 banana
1 tablespoon peanut butter
1/4 cup Rice Krispies
raisins (optional) or chopped nuts (optional)

Steps:

Peel banana.
Slice banana in half lengthwise, then slice crosswise, so that you have 4 pieces.
Spread peanut butter onto the flat side of each banana piece.
Top peanut butter with rice krispies and other toppings.
If it is too soft, place in freezer for a few minutes.
