PEANUT AND TOFU CUTLETS/ BURGER PATTIES
A vegetarian recipe found in a borrowed library book "the ultimate book of vegan baking". Posting here to make later. Variations suggested were trying the following combinations; walnuts with rosemary or sage, cashews with cilantro or parsley, hazelnuts with parsley, thyme or sage. Serves 4. Serve with steamed veges or a sald with a tangy salsa or ketchup . Use gluten-free soy, Braggs Liquid Aminos or tamari sauce if following a gluten-free diet

Steps:
- Cook the rice according to the instructions on the packet, until tender. Drain the rice.
- Heat the vegetable oil in a large, heavy frypan and cook off the onion and garlic over a low heat, stir occassionally, for about 5 minutes. The onion should be softened and golden.
- Meanwhile, spread out the peanuts on a baking sheet and toast under a preheated grill (broiler) for a few minutes, until browned. Alternately, you can toast the peanuts using a dry pan on the stove top- keep them moving while heating.
- Place the toasted peanuts, onion, garlic, rice, crumbled tofu, coriander and parsley (can use just 1/2 cup or either cilantro or parsley if wished) in a food processor. Add a little salt and pepper to seson if desired. Process until the mixture forms a thick paste. If it is too thick, add a little water.
- Divide the mixture into eight equal portions and form each mound into a cutlet, flat square or burger shape.
- Heat the olive oil on a large, heavy frypan.
- Add the cutlets and cook for about 5-10 minutes on each side, until they turn golden brown and are heated through. THis step can be done in two batches if needed.
- Drain the cutlets on kitchen paper. Can be kept warm in the oven if cooking in two or more batches.
- Serve and enjoy.

PATTY'S TOFU BURGERS
This is a special recipe for me. My first veggie burger from scratch! It is low cal, great tasting and easy. I make a bowl of this mix and leave it in the fridge so my husband can pat out a burger and quickly cook it on his lunch break. Enjoy:)

- Beat the eggs in a mixing bowl until smooth. Mix in the tofu, celery, onion, chili powder, cumin, curry paste, garlic, and oats with your hands until the tofu has broken into fine pieces, and the mixture is evenly blended. Form into 8 patties.
- Heat the vegetable oil in a large, nonstick skillet over medium heat. Cook the patties until crispy and golden brown on each side, about 5 minutes per side.

NUT BURGERS (VEGETARIAN)
These no nonsense nut burgers are great. I have yet to find a recipe or a restaurant that makes as good of a version. Serve with chips... tortilla, blue corn, sweet potato, or other veggie chips. Use whichever types of nuts you like, or have handy such as pecans, walnut, hazelnuts, almonds, sunflower seeds, pumpkin seeds, or any combination of nuts you might like.

Steps:
- Place walnuts and sunflower seeds in a dry skillet over medium heat. Cook, stirring occasionally until lightly toasted and fragrant, about 5 minutes.
- In a medium bowl, mash garbanzo beans with a fork, or chop in a food processor. Stir in the onion, egg, parsley, and toasted nuts. Season with pepper and seasoning blend, and mix well.
- Heat olive oil in a skillet over medium heat. Divide the bean mixture into 2 patties, and fry in the hot oil for about 3 minutes on each side, or until well browned and heated through. Place a slice of cheese over each patty, and remove from heat.
- Place the pita round in the same dry skillet the nuts were in, and heat for about 1 minute on each side. Cut the round in half, spread ranch dressing inside of each, and line the pockets with romaine leaves. Place a cheesy patty into each one, and top with sliced tomato and avocado. Serve with tortilla or potato chips.

HERBED BURGER PATTIES
We make our burger patties from scratch rather than buying the pre-made supermarket variety, as they're too salty for me. This recipe ramps up the flavour by trading the salt for a variety of either fresh or dried herbs instead. These are good on turkish breadrolls or ciabatta rolls with salad of your choice.

Steps:
- Freeze the butter.
- Separate out the beef in a mixing bowl so it's grainy.
- Combine all herbs in a second bowl.
- Grate the frozen butter into the beef.
- Mix in herbs, and combine all ingredients loosely.
- Shape mixture into 4 large round pattiess 1cm thick. Make a depression in the centre of each.
- Grill patties 7-10 minutes (depending on how well-done you like your burger!).
CHICKEN AND VEGETABLE BURGER PATTIES
This was a recipe I came up with when I started trying to lose weight with Sure Slim. It uses Cruskit crispbreads or crackers and follows the "rules" of the diet. Cruskits are those revolting puffed crispbreads that you buy thinking that you are being good but then don't eat. I found that they make an excellent binder for burgers.

- Put the Cruskits in the food processor and grind to a fine breadcrumb consistency. Tip the crumbs into a bowl.
- Put the rest of the ingredients except the chicken into the food processor and pulse until finely chopped.
- Note: Resist the temptation to do the Cruskits and vegetables together. You'll end up with a gluggy mess that is difficult to get out of the food processor.
- Add the chicken and vegetables to the crumbs and mix together quickly. The crumbs absorb the liquid and become sticky so the quicker you can work, the easier it is to combine everything evenly. I get into it with my hands.
- Divide into 4 large patties or 8 small ones, about 1.5 to 2 cm thick. Grill for 7 minutes on each side.
- Serve in a pita bread with lettuce and tomato or serve as a main dish with vegetables.
- These patties can also be baked in a hot oven. I also make them into meatballs and bake them then freeze them. They can be added to stock and bok choy for a very quick meal.
