PEACH STREUSEL KUCHEN
This great recipe comes to us from Roti n Rice - with one twist; I used regular all purpose flour instead of bread flour as her recipe calls for. This results in a more cakey and less breadlike kuchen. This base recipe is also great with blueberries (1 pt) or apple (3 medium) or u could be adventurous and try pineapple :) ...

Steps:
- 1. In mixing bowl of stand mixer, combine flour for cake, sugar and salt. Mix in yeast and combine well.
- 2. Add egg, butter and milk. Mix on medium-low speed using dough hook for 5 mins. Remove the bowl from the mixer and cover with a warm, wet towel- letting stand for 15 minutes.
- 3. Return to mixer and knead on medium-low with dough hook for another 10 mins. Remove the dough from the bowl and form into a ball. Lightly oil the mixing bowl and return to bowl. Cover with warm, wet towel again and let stand for 1 1/2 hrs til dough has almost doubled in size.
- 4. Preheat over to 375 degrees. Lightly oil a 9 inch spring-foam pan. In a medium bowl, mix all topping ingredients til they are 'crumbed'
- 5. Remove risen dough from bowl and on a lightly floured surface, punch it down and then roll it out to fit the round of the spring-foam pan. Arrange the fruit on top of the dough. Sprinkle topping over the fruit. Cover with lightly oiled plastic wrap and let it stand for 20 minutes.
- 6. Bake for 30 minutes or until golden brown. Allow to cool in pan 10 mins.

"KUCHEN IS a filling dessert for this German meal. It's not too sweet, and you can use virtually any of you favorite fruits. As a child, I took great pride in arranging the fruit in the pan. We always made this dessert on the same day of the meal so it would be warm and fresh. A dollop of whipped cream on top was an added treat!

- In a small bowl, combine flour, confectioners' sugar and salt. Cut in butter to form a dough. Pat lightly into an ungreased 11x7-in. baking pan. , Arrange peaches over the crust; set aside. PEACH STREUSEL SLAB PIE
There are two great things about this summer slab pie: It serves a big crowd and you don't have to roll out the dough. We opted for a press-in dough (reminiscent of shortbread), which is super easy to make and saves lots of time. For something a little different, substitute pecans or skinned hazelnuts for the almonds in the streusel topping.

- Adjust a rack to the bottom third of the oven and preheat the oven to 375 degrees F. Grease the bottom and sides of a rimmed 10-by-15-inch baking sheet with butter.
- For the dough: Combine the butter, flour, confectioners' sugar and salt in a food processor and process until the mixture comes together in a solid mass (this may take a few minutes). Drop pieces of the dough all over the prepared baking sheet. Use your fingers to press the dough evenly along the bottom and about 1/2 inch up the sides of the pan, filling any gaps. Set aside.
- For the filling: Toss together the peaches, brown sugar, lemon juice, cornstarch, vanilla, cinnamon, salt and nutmeg in a large bowl until the cornstarch dissolves. Transfer the filling onto the crust and spread in an even layer. Bake for 30 minutes.
- For the streusel: While the pie bakes, make the strussel topping by combining the flour, almonds, brown sugar, melted butter and salt in a small bowl until evenly moistened.
- Remove the pie from the oven and sprinkle the streusel evenly over the filling. Return the pie to the oven and bake until the topping is golden brown and the filling is bubbly, 25 to 30 minutes more. (If the crust browns too quickly during baking, cover the pie loosely with foil.)
- Let the pie cool. Serve warm or at room temperature.
PEACH STREUSEL CHEESECAKE

- Heat the oven to 180C/160C fan/gas 4. Oil and line a 20cm round springform, deep tin so that the parchment comes 5cm above the rim. Blitz the biscuits in a food processor to a fine crumb, or put in a tightly sealed sandwich bag and bash with a rolling pin. Tip into a bowl and stir through the sugar and butter, then tightly pack into the tin. Bake for 10 mins, then leave to cool completely.
- For the streusel, mix together the flour, sugar, cinnamon and a pinch of salt in a large bowl. Gradually drizzle in the melted butter, stirring with a fork to combine, until the mixture has formed into clumps. Mix the streusel with the nuts and chill until needed.
- Beat together the cream cheese, mascarpone, soured cream, golden caster sugar, eggs and vanilla in a large bowl using a wooden spoon until smooth. Gently fold through the flour using a large metal spoon. Pour the mixture gently into the tin. Top with the streusel and bake for 1 hr-1 hr 15 mins or until set with a vigorous wobble in the middle. Turn off the oven and open the oven door, leave to cool for 2 hrs, then transfer to the fridge to chill overnight.
- Destone and slice the peaches into quarters. Line a roasting tin with baking parchment and put the peaches in the tin. Sprinkle over the sugar, lemon and vanilla, and cover with a layer of parchment. Bake for 15-20 mins or until soft but holding their shape. Leave to cool completely.
- Gently push the cheesecake out of the tin and top with the peaches. Slice and serve. Will keep for three days in the fridge.

- For streusel:
- Mix first 4 ingredients in medium bowl. Add melted butter and stir with fork until moist clumps form. DO AHEAD Can be made 1 day ahead. Cover and chill.
- For cake:
- Position rack in center of oven and preheat to 325°F. Butter and flour 10-inch-diameter springform pan. Toss apple slices, cinnamon, and cloves in medium bowl. Sift flour, cornstarch, baking powder, and salt into another bowl. Combine butter, powdered sugar, and lemon peel in large bowl; scrape in seeds from vanilla bean.
- Using electric mixer, beat butter mixture until well blended. Add eggs 1 at a time, beating until well blended after each addition; beat in egg yolk. Add flour mixture and beat just until blended. Spread batter evenly in prepared pan (cake layer will be thin). Slightly overlap apple slices atop batter in concentric circles. Sprinkle streusel evenly over apples (streusel will cover apples).
- Bake cake until streusel topping is crisp and tester inserted into center of cake comes out clean, about 1 hour 20 minutes. Cool cake in pan on rack 15 minutes. Remove pan sides; cool to lukewarm. Serve lukewarm or at room temperature. DO AHEAD Can be made 1 day ahead. Cool completely. Wrap cake in foil and store at room temperature.

Peaches and custard baked to a chewy, gooey perfection on a tender cookie crust. Can be made all year with canned peaches. Delicious hot with ice cream or alone cold.

- Preheat the oven to 400 degrees F (200 degrees C).
- Sift the flour, baking powder, salt and 2 tablespoons of sugar into a large bowl. Cut in butter by pinching between your fingers until the mixture resembles coarse cornmeal. Press into the bottom and up the sides of a 9x13 inch baking dish. Place the peach halves cut side up on top of the crust in a nice pattern. Mix together the remaining sugar and cinnamon; sprinkle over the peach halves.

- To make the dough, put the ingredients into the bread machine in the order listed and set on the dough setting.
- When the dough is ready, lightly grease a 10" springform pan.
- Punch down the dough on a lightly floured surface and roll out to fit the pan.
- Arrange the sliced peaches to cover the surface of the dough.
- Make the topping by mixing the flour, ground almonds and butter together until they resemble coarse crumbs.
- Stir in the sugar and cinnamon.
- Sprinkle the topping over the peaches.
