MANGO PEACH JAM

Number Of Ingredients 4

2 cups mangoes ; pealed (about 2 fresh mangoes)
3 cups peaches ; unpeeled (about 3 fresh peaches)
1 cup sugar
1 teaspoon vanilla extract

Steps:

  • Coarsely chop or puree mangoes. Combine mangoes, peaches, and sugar in a pot and stir to combine.
  • Boil for 40 to 50 minutes, until thick and the proper consistency for a jam. Add vanilla extract.
  • Pour Mango Peach Jam into hot sterilized jars and seal. Process in boiling water bath 15 minutes.

Peach and mango together in a jam! It's sweet and slightly tropical, a delicious combo.

3 cups peaches - skins and pits removed
3 cups mango - I use frozen mango chunks but if using fresh (peel fruit and remove the pit)
6 cups sugar
2 packets pectin - 1.75 ounces each
1/2 cup water

Steps:

  • Add the peaches and mango together in a blender and blend until smooth.
  • Add blended peaches and mango to a large pot with sugar, pectin and water and bring mixture to a boil, stirring frequently.
  • Once at a boil, reduce mixture to a simmer and simmer for ~10 minutes or until mixture starts to thicken and can heavily coat the back of a spoon.
  • Place in glass jars for canning or in freezer containers for freezer jam. Unsealed or unfrozen jam will last in the refrigerator for roughly 3 months. frozen jam will last for roughly 1 year and canned jam will last roughly 1 year.

PEACH HABANERO JAM

First taste sweet golden warm summery peach with a hint of smokey spice... then warmth, then heat... just up to the point of concern... then subsiding back to mellow peachy goodness. On top of a cream cheese coated cracker (or even better, a PBJ on homemade buttermilk bread!), the heat is mellowed to a gentle "creeper" warm that sends them back for more... and more... and more. Adapted from the Ball No Sugar Needed cooked peach jam recipe. Try it, you'll like it. Seriously. This type of pectin gives a soft set - perfect for putting on cream cheese. I add a handful of red peppers to serve as a warning as the orange habaneros meld right in and are invisible. WEAR GLOVES. PUT A TOWEL DOWN AT YOUR WORKPLACE TO CATCH ANY SEEDS, ETC. DO NOT TOUCH FACE. Buttermilk soaked compress helps any burning areas that are inadvertently touched.

4 cups peaches, peeled and crushed (about 4 lbs)
1 cup habanero pepper, seeded and minced (about 25-30 peppers)
5 red peppers, coarsely seeded and chopped (cayenne, red jalapeno, etc)
1 cup unsweetened grape juice (white)
1/2 cup lemon juice (bottled)
1 tablespoon turmeric, ground
1/4 teaspoon butter (optional)
1 3/4 ounces ball fruit jell (No Sugar Needed Pectin)
3 1/2 cups unbleached cane sugar
2 tablespoons vanilla extract

Steps:

  • Peel, chop & crush peaches. Pulsing them in Cuisinart to a chunky consistency works well. Crushing with a potato masher works well too. Do not over process in food processor as cooking breaks them down too.
  • WEARING GLOVES (seriously), split habaneros and remove seeds and most of pith holding seeds. Reserve the pith & seeds to add back to jam if it is not hot enough for your tastes (OMG).
  • Split red peppers, de-seed & chop coarsely.
  • Process habaneros and red peppers of choice to mince. Do not process until smooth, just a mince, finer than the peach chop.
  • Measure 4 cups of peach crush and 1 cup pepper mince into a 6 to 8 quart nonreactive pot. Add the white grape juice, lemon juice, turmeric and butter (optional - but reduces foaming). Gradually stir in pectin. Bring to a full boil over med-high heat, stirring constantly.
  • Add sugar. Return to a full boil and boil hard for 2 minutes.
  • Remove from heat and stir in vanilla.
  • Taste and decide whether you want to add some Habanero pith and/or seeds (not for me thanks and I like it hot!). Go easy though as you probably want an edible finished product.
  • Ladle jam hot into freshly boiled half-pint jars, leaving 1/4 inch headspace. Wipe rims clean with a clean dish towel dipped in hot water if necessary so the lids will seal well. Adjust rings until resistance is just met.
  • Load jars into boiling water bath, cover and process 10 minutes. Make sure jars are covered by at least 2 inches of water and water is gently boiling.
  • After processing, remove jars and place on a towel to cool for 12 to 24 hours.
  • Remove bands, wipe sealed jars with a cool damp cloth. Label and store in a dark, cool. dry place for up a year -- as if it be around that long!

4 cups finely chopped peeled fresh peaches (about 6 medium)
1-1/2 cups packed brown sugar
1 cup sugar
1 tablespoon lemon juice
3 tablespoons bourbon or 3 teaspoons vanilla or bourbon extract

Steps:

  • In a large saucepan, combine peaches, sugars and lemon juice; bring to a boil. Reduce heat; simmer, uncovered, until mixture is thick and a thermometer reads 220°, about 60 minutes. Remove from heat; skim off foam. Stir in bourbon., Ladle hot mixture into 3 hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars in canner, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.

This was adapted from Peach Preserves (on this site, thank you Kevin!). I changed some of the amounts and ingredients. Full of flavor, and you leave the peach skin on so it's a cinch to make! There are chunks of fruit, so if you want a smoother texture, add a couple more peaches before cooking and strain with a mesh strainer before adding sugar. As with all preserves, a little time consuming, but worth every minute...

7 ripe unpeeled peaches, pitted and coarsely chopped
3 cups chopped fresh mango
2 ¾ cups white sugar
1 (1.75 ounce) package powdered fruit pectin

Steps:

  • Place 1/2 the peaches in a large saucepan and crush until mostly mashed. Add the remaining peaches and mangos. Bring to a boil over medium-low heat. Cook until mostly liquid, 20 to 30 minutes.
  • Pour peach-mango mixture into a bowl and measure 5 1/4 cups back into the pan. For a thicker mixture, use only 5 cups. Add sugar to the pan and bring to a boil over medium heat. Gradually stir in pectin and bring back to a boil. Boil for 1 minute; immediately remove from heat.
  • Pour preserves into hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large canning pot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 5 minutes.
