LIME & SPICE PEACH COBBLER

This was my grandmother's favorite recipe to make when they had bushels of peaches. Now I love to bake it whenever I can for my family and friends. -Mary Ann Dell of Phoenixville, Pennsylvania

3 tablespoons sugar
3 tablespoons brown sugar
2 tablespoons minced crystallized ginger
4 teaspoons cornstarch
2 teaspoons ground cinnamon
1/2 teaspoon grated lime zest
8 medium peaches, peeled and sliced (about 5 cups)
1 tablespoon lime juice
TOPPING:
3 tablespoons butter, softened
1/4 cup packed brown sugar
2 tablespoons sugar
1 cup cake flour
1/2 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons cold water
1/4 cup chopped pecans
1 large egg yolk
2 tablespoons buttermilk

Steps:

  • Preheat oven to 375°. Mix first six ingredients; toss with peaches and lime juice. Transfer to an 8-in. square baking dish coated with cooking spray. , For topping, beat butter and sugars until blended. Whisk together flour, baking powder and salt; beat into butter mixture. Beat in water just until crumbly. Stir in pecans; crumble over filling. , Whisk together egg yolk and buttermilk; brush carefully over crumb mixture. Bake until topping is golden brown and filling is bubbly, 35-40 minutes. Serve warm.

AUNT PATSI'S EASY PEACH JAM



Aunt Patsi's Easy Peach Jam image

I got this recipe from my great-aunt and tried it the first time on some fresh summer peaches. It was super easy and super yummy. It also works with frozen fruit. Store in a cool, dark place.

Number Of Ingredients 5

2 ½ pounds fresh peaches
5 cups white sugar
3 (3 ounce) packages peach gelatin
2 teaspoons lemon juice
½ teaspoon almond extract

Steps:

  • Heat five 12-ounce jars in simmering water until ready for use. Wash lids and rings in warm soapy water.
  • Fill a large pot with water; bring to a boil. Add peaches; cook until skin loosens, about 20 seconds. Drain and cool until easily handled. Peel, pit, and cut the peaches into chunks.
  • Measure out 5 cups of peach chunks into the pot. Mash with a potato masher. Add sugar, peach gelatin, lemon juice, and almond extract; mix well. Bring to a rolling boil and cook jam for 1 minute. Remove from heat.
  • Pack jam into hot jars, filling to within 1/4 inch of the top. Wipe rims with a clean, damp cloth. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower in jars using a holder, placing them 2 inches apart. Pour in more boiling water to cover the jars by at least 1 inch. Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool, about 12 hours. Press the top of each lid with a finger, ensuring that lid does not move up or down and seal is tight.

Number Of Ingredients 4

3 1/2 pounds peaches (8 to 10), peeled, halved, pitted, and cut into chunks
1 1/4 pounds sugar (scant 3 cups)
1 tablespoon plus 1 teaspoon fresh lemon juice
Coarse salt

Steps:

  • Working in batches, pulse peaches in a food processor until chunky. Transfer to a small saucepan, and add sugar, lemon juice, and 1/2 teaspoon salt. Bring to a boil, stirring frequently. Boil, continuing to stir, until bubbles slow, foam subsides, fruit rises to the top, and jam sticks to a spoon when lifted, about 12 minutes. Let cool. Refrigerate until completely cooled.

August is Peach Month - time to make a big batch of peachjam!

Number Of Ingredients 3

8 cups peeled,diced, slightly crushed ripe peaches
6 cups granulated sugar
1/4 cup lime juice

Steps:

  • Add all ingredients to a large sauce pot or Dutch oven.
  • Slowly bring the mixture to a boil over medium heat stirring until the sugar is dissolved.
  • Turn the heat up a little and cook rapidly, stirring often to prevent sticking, until the jam reaches the gelling point (220 degrees),usually between 25-45 minutes.
  • Spoon hot jam into prepared jars, leaving ¼ inch headspace.
  • Wipe the lip of each jar with a damp paper towel, top the jars with a lid and lid ring.
  • Process in a water bath canner for 15 minutes. Remove and let cool completely.
  • Makes about 7 (1/2 pint) jars

PEACH PAPAYA JAM

Combine peaches with papaya and other tropical flavors foran easy jam recipe.

Number Of Ingredients 6

2 cups peeled,seeded, chopped papaya
3 cups peeled,pitted, chopped peaches
1/4 cup lime juice
1 teaspoons ground ginger
4 cups granulated sugar
zest from one lime

Steps:

  • Add all ingredients except lime zest to a large Dutch oven or other cooking pot.
  • Rub butter along the inside pot lip. This will reduce the chance of the mixture boiling over!
  • Slowly bring the mixture to a boil over medium heat, stirring until the sugar is dissolved.
  • Turn the heat up a little and cook rapidly, stirring often to prevent sticking, until the jam reaches the gelling point.
  • Use the plate method to check for gelling or use a digital thermometer. Gelling is reached at 220 degrees or 8 degrees above the boiling point of water.
  • Add lime zest to the bubbling jam, and stir to distribute throughout the mixture.
  • Spoon the hot jam into prepared jars, leaving ¼ inch headspace.
  • Wipe the lip of each jar with a damp paper towel. Top the jars with a lid and lid ring.
  • Process the jars in a water bath canner for 15 minutes. Remove and let cool completely.
  • Makes about 6 (1/2 pint) jars.

PRETTY PEACH JAM

Number Of Ingredients 7

8 medium peaches, peeled and cut into wedges
1 small unpeeled navel orange, cut into wedges
2 cans (8 ounces each) crushed pineapple, undrained
12 maraschino cherries
3 tablespoons maraschino cherry juice
2 packages (1-3/4 ounces each) powdered fruit pectin
10 cups sugar

Steps:

  • Rinse thirteen 1-cup plastic containers and lids with boiling water. Dry thoroughly. , In a blender or food processor, cover and process fruits and cherry juice in batches until smooth. Transfer to a large stockpot; stir in pectin and bring to a rolling boil over high heat, stirring frequently. Add sugar and return to a rolling boil. Boil 2 minutes, stirring constantly. , Remove from heat. Immediately fill all containers to within 1/2 in. of tops. Wipe off top edges of containers. Immediately cover with lids. Let stand at room temperature 24 hours. , Jam is now ready to use. Refrigerate up to 3 weeks or freeze up to 1 year. Thaw frozen jam in refrigerator before serving.

Place on high heat and, while stirring constantly, bring to a full rolling boil with bubbles over the entire surface. Add the sugar and spices all at once and heat again to a full bubbling boil.   • Remove from heat; skim foam off the top. (We keep the foam in the refrigerator and enjoy it on toast for the next couple of days. I love it warm straight off the stove as well!)
