2 medium ripe avocados, peeled and cubed
2 tablespoons lime juice
1/2 teaspoon kosher salt
1/2 teaspoon ground cumin
1/4 teaspoon pepper
1 medium peach, peeled and finely chopped
1 jalapeno pepper, seeded and minced
2 tablespoons finely chopped red onion
Tortilla chips

Steps:

Mash avocados with lime juice, salt, cumin and pepper. Gently stir in peach, jalapeno and red onion. Serve with tortilla chips.

16 ounces cream cheese
4 ounces green chilies
2 tablespoons jalapeno
0.25 cups peach preserves
0.5 cups colby jack cheese

Steps:

In large bowl, combine softened cream cheese, green chilies, jalapenos, and peach preserves. Mix on medium until well blended.
Pour into 8 x 8 baking dish and sprinkle with cheese. Serve immediately with crackers or tortilla chips.

2 fresh peaches - peeled, pitted, and diced
1 jalapeno pepper, seeded and minced
½ red onion, minced
½ red bell pepper, minced
¼ cup chopped fresh cilantro, or to taste
2 cloves garlic, grated
½ lime, juiced
½ lemon, juiced
salt and ground black pepper to taste
1 avocado - peeled, pitted, and diced

Steps:

Gently mix peaches, jalapeno pepper, red onion, red bell pepper, cilantro, garlic, lime juice, and lemon juice in a bowl; season with salt and black pepper.
Cover bowl with plastic wrap and refrigerate at least 30 minutes. Fold avocado into the salsa to serve.

1/4 cup peach preserves or 1/4 cup apricot preserves
1/2 red jalapeno chile, seeded and finely chopped
1/2 green jalapeno, seeded and finely chopped
1 (8 ounce) package cream cheese, cut in half
pumpernickel rounds or rye bread

Steps:

Mix together the preserves and chilies,.
Place the cream cheese blocks on a small serving plate.
Spoon preserves over cheese.
Serve with the crackers or cocktail bread.

This is a wonderful fruity, yet spicy salsa that's a great accompaniment for grilled seafood, (I especially enjoy it with grilled tuna, swordfish or shrimp). It's great with pita chips too. Please feel free to adjust the heat by using more or less jalapeno, depending on your personal taste. Cook time is chilling time.

1 (28 ounce) can sliced peaches, drained and diced
1/2 red onion, finely diced
1/2 jalapeno pepper, seeded,deveined and minced
1 teaspoon crushed red pepper flakes
1 lime, zest of
1 lime, juice of
1 tablespoon grated ginger
5 -7 dashes Tabasco jalapeno sauce
3 dashes peach/habanero hot sauce (optional)
1/4 cup fresh cilantro, minced
salt and pepper

Steps:

Mix all ingredients.
Add salt and pepper to taste.
Let sit refrigerated for at least a couple hours to allow the flavors mix and intensify.
Before serving, taste and adjust seasoning as needed.

Wash fruit and jalapeños well. Puree peaches in a food processor until slightly chunky. Some chunks are good. You don't want it completely smooth.
Process the jalapeños separately until they are a very fine dice. Add peach puree and jalapeños to a large pot. Bring to a simmer, stirring regularly.
Stir in sugar, lemon juice and pectin. Continue to stir until everything is dissolved. Continue to let the jam simmer for another 15 minutes to thicken. Add a small amount of butter to help prevent foaming. If any foam does come up though, try to scrape it off the jam.
Boil your jars and lids for 10 minutes to sterilize them. Once they are sterilized, use a funnel and ladle to fill each jar, leaving about 1/4 inch of room at the top of each jar.
