PEACH POUND CAKE
Our state grows excellent peaches, and this is one recipe I'm quick to pull out when they are in season. It's a tender, moist cake that receives rave reviews wherever I take it. -Betty Jean Gosnell, Inman, South Carolina

Steps:
- Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, one at a time, beating well after each addition. Beat in extracts. Combine the flour, baking soda and salt; add to the batter alternately with sour cream, beating well after each addition. Fold in the peaches., Pour into a greased and floured 10-in. fluted tube pan. Bake until a toothpick inserted in the center comes out clean, 60-70 minutes. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Dust with confectioners' sugar if desired.

PEACH-GLAZED CAKE

- Place pears in a blender, cover and process until pureed. Transfer to a large bowl; add the cake mix and eggs; beat on low speed for 30 seconds. Beat on medium for 2 minutes. , Pour into a greased and floured 10-in. fluted tube pan. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack., In a microwave-safe bowl, heat 1/2 cup of peach preserves, uncovered, on high for 45-60 seconds or until melted. Slowly brush over warm cake. Cool completely. , Slice cake; top with peaches. Melt remaining preserves; drizzle over top.

- In a microwave-safe small bowl, combine the brown sugar, butter, water, lemon juice and nutmeg. Microwave, uncovered, on high for 15 seconds; stir. Add the peaches. Microwave 30-40 seconds longer or until the peaches are heated through. Stir in vanilla. Serve over ice cream or cake.

- In a saucepan, combine sugar, cornstarch, salt and nutmeg. Stir in water, lemon juice and pureed peaches. Cook over medium heat, stirring constantly, about 5 minutes or until mixture is thickened. Pour all but 1/2 cup glaze into the pie shell. Top with sliced peaches and brush with reserved glaze. Chill for at least 3 hours.

- Combine all ingredients and scoop the sticky batter onto a greased flan pan. Spread dough evenly with a spatula. Bake at 375 degrees for 15-20 minutes or until golden brown. Invert on cake platter after ten minutes. Cool cake before adding fruit and glaze.
- Combine one cup of mashed peaches with the water and sugar in a medium saucepan and bring to a boil. Let the glaze simmer until clear. Remove from stove and stir in the butter. Let cool before assembling the fruit on cake and then scoop the glaze carefully over the sliced peaches. Serve with freshly whipped cream.
