GINGER PEACH SPRITZER WITH ROSEMARY image

Prepare a batch of this homemade Grand Marnier-spiked peach puree to create individual servings of this sparkling fruity cocktail.

​3/4 cup water
3/4 cup granulated sugar
1/4 cup thinly sliced peeled fresh ginger, crushed
4 cups frozen sliced peaches, thawed
1 cup orange juice
1/2 cup Grand Marnier or other orange liqueur, optional
1/4 cup fresh lemon juice
1 tbsp fresh rosemary leaves
Ginger ale or sparkling white wine*
Rosemary-pierced fruit slices, optional

Steps:

  • To prepare sugar syrup, combine water, sugar and ginger in a small saucepan. Bring to a boil over medium heat, stirring until sugar is dissolved. Reduce heat and simmer, uncovered, stirring occasionally, for 20 minutes. Remove from heat and cool completely. Strain sugar syrup through a sieve into a bowl; discard ginger. Sugar syrup may be prepared and refrigerated for up to 2 days.
  • To prepare peach puree, place sugar syrup, peaches, orange juice, Grand Marnier, lemon juice and rosemary in a blender. Blend, using an on/off motion, until peaches are finely chopped. Purée until smooth.
  • For each serving, pour 1/4 cup peach purée into a glass. Stir in 3/4 cup ginger ale. Garnish with a rosemary-pierced fruit slice. Serve immediately. Leftover peach purée may be frozen.

Peach Lemonade Spritz image

You can use a fresh peach, nectarine or apricot here. You can also substitute thawed frozen peach slices or 3 ounces peach puree, canned peaches or peach juice if fresh fruit is unavailable. For best results, refrigerate all ingredients beforehand. This is such a refreshing cold drink!

1/2 cup sugar
Zest and juice of 1 lemon
1 ripe peach, pitted and sliced into 8 wedges
3 ounces Ketel One Botanical Peach and Orange Blossom Vodka
2 ounces club soda
2 fresh mint or basil sprigs

Steps:

  • Make the lemonade syrup: In a small saucepan, heat 3/4 cup water over medium heat. Add the sugar and whisk until the sugar dissolves, 1 to 2 minutes. Stir in the lemon zest and juice. Transfer the syrup to a small bowl and set aside to let cool.
  • Muddle and mix: Place half of the peach in a cocktail shaker and muddle it. Add 4 ounces of the lemonade syrup, the Ketel One and a few ice cubes. Cover the shaker and shake thoroughly to blend.
  • Serve: Divide the cocktail between 2 glasses with a few ice cubes and the remaining peach slices in each. Top with a splash of club soda. Garnish with the mint or basil. Stir and enjoy!

3/4 cup sugar
1 1/2 cups water
4 large ripe peaches (about 1 3/4 pounds), halved, pitted, and cut into 1-inch slices
4 sprigs rosemary, plus more for garnish
Ice, for serving
4 cups cold white or rose wine
1 liter cold club soda

Steps:

  • Bring sugar and water to a boil in a medium saucepan, stirring until sugar dissolves. Add peaches and rosemary, and bring to a simmer. Remove from heat. Cover, and let cool. Discard rosemary. Peel peach slices if desired. Transfer peaches with syrup to a container; cover, and refrigerate for at least 1 hour or overnight.
  • Place 2 peach slices and about 1/4 cup syrup in 8 ice-filled glasses. Add 1/2 cup wine to each; top with club soda. Garnish each with a rosemary sprig, and serve immediately.
