LEMONY PRAWN & PEA PASTA



Lemony prawn & pea pasta image

A simple and flavoursome storecupboard prawn pasta dish that combines fresh flavours with quick cooking

350g linguine or other long pasta
140g large frozen prawn
100g frozen pea
1 egg yolk
zest and juice 1 lemon
handful grated parmesan
soured cream (optional)

Steps:

  • Boil the linguine for 8 mins. Three minutes before the time is up, tip in the prawns and peas. Reserve a cup of cooking water, then drain the pasta and return to the pan.
  • Add the egg yolk, lemon zest and juice, most of the Parmesan and some soured cream, if you like. Stir everything together, adding a little of the pasta cooking water to loosen the mixture.
  • Serve sprinkled with Parmesan.

This is a wonderful, zingy dish, perfect for a lunch out in the garden - use our recipe for homemade pesto to make it extra special

400g dried short pasta , such as rigatoni or penne
about extra-virgin olive oil
200g peeled cooked prawn
5 tbsp (100g/4oz) green pesto
3 tbsp mayonnaise
juice of ½ lemon or lime
3 tbsp chopped fresh parsley , preferably flatleaf
a few basil leaves , shredded with your fingers, plus extra for sprinkling
lemon wedges, for squeezing

Steps:

  • Plunge the pasta into a large pan of salted boiling water and cook according to packet instructions until al dente. Drain the pasta into a colander and hold it under cold running water to cool it down quickly.
  • Shake off the excess water and tip the pasta into a large bowl. Toss in 1 tbsp olive oil to coat thoroughly (this helps stop the pasta from sticking together), then add the prawns.
  • Mix the pesto, mayonnaise and lemon or lime juice with some salt and pepper to taste. If you need to slacken the mixture a bit, stir in a little more olive oil. Pour the pesto dressing over the pasta and prawns and give everything a good stir. Add the parsley and basil leaves and stir again, then pile into your serving dish and serve scattered with extra shredded basil leaves, plus lemon wedges for squeezing over the salad.

1 (8 ounce) package spaghetti
1 cup fresh basil leaves
¼ cup lemon juice
3 tablespoons olive oil
1 clove garlic, or to taste
½ teaspoon salt
2 teaspoons olive oil
1 (8 ounce) package sugar snap peas
¾ pound peeled and deveined shrimp
⅛ teaspoon crushed red pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, about 12 minutes; drain.
  • Blend basil, lemon juice, 3 tablespoons olive oil, garlic, and salt in a blender until smooth.
  • Heat 2 teaspoons olive oil in a skillet over medium heat. Cook and stir sugar snap peas in hot oil until tender, about 5 minutes. Add shrimp and red pepper; continue to cook until the shrimp are bright pink on the outside and the meat is no longer transparent in the center, about 5 minutes. Stir basil sauce into the shrimp mixture and remove from heat; spoon over spaghetti to serve.

1 package (9 oz) refrigerated linguine
1 lb uncooked medium shrimp (thawed if frozen), peeled (tail shells removed), deveined
1 container (7 oz) refrigerated basil pesto
2 cups frozen sweet peas (from 12-oz bag), thawed
1/4 cup shredded Parmesan cheese (1 oz)

Steps:

  • Cook linguine as directed on package. Drain, reserving 1/3 cup of the cooking water. Rinse linguine with hot water; cover to keep warm.
  • Meanwhile, in 12-inch nonstick skillet, cook shrimp with 1 tablespoon of the pesto over medium-high heat 2 to 3 minutes, stirring frequently, until shrimp are pink. Add peas; cook 2 to 3 minutes or until thoroughly heated.
  • Stir remaining pesto and 1/3 cup reserved cooking water into linguine; toss with shrimp and peas. Spoon into 4 bowls; top each with 1 tablespoon cheese.

400g frozen peas , defrosted
½ x 300g tub garlic & herb soft cheese
zest and juice 1 lemon , plus wedges to serve
1 garlic clove , chopped
300g spaghetti
190g pack small cooked prawns

Steps:

  • Whizz 300g of the peas with the soft cheese, lemon zest and juice, and the garlic. Add some seasoning, then set aside.
  • Meanwhile, cook pasta following pack instructions. Tip in the remaining peas 2 mins before the pasta is cooked, then drain everything and return to the pan. Stir through the pea pesto and some seasoning. Divide between 4 plates and serve with the prawns and extra lemon wedges, if you like.
